EASY BANANAS FOSTER

- In a 12-inch nonstick skillet, melt the butter over medium-high heat until it begins to bubble. Add the bananas in a single layer and cook for 1 to 2 minutes, or until beginning to brown. Flip the bananas with a rubber spatula and brown them slightly on the reverse side. Sprinkle with the cinnamon and cook for another 30 seconds, stirring occasionally. Gently mix in the dulce de leche; simmer for 1 minute, then set aside to cool a bit. Serve over ice cream, with mini chocolate chips sprinkled over the top.
BANANA "ICE CREAM" FAKEOUT

- In the bowl of a food processor, puree the bananas, adding the milk bit by bit as needed, until whipped to a creamy consistency, about 2 minutes.
- Scoop into a bowl and top with the chocolate syrup and peanuts.
BANANA FAUX-LADA
I came up with this when I wanted to use up a couple of ripe bananas and I was in the mood for a Colada type drink. I didn't want to use cream of coconut or coconut milk, so this is the result. It still has the same sort of taste, but is much lighter. Since I am not a big fan of heavy creamy drinks, I actually like this better!

- Combine light rum, Malibu, lime juice, sugar, bananas, and coconut in blender jar; blend until smooth.
- Add enough ice to fill the jar and blend again until smooth.
- Pour into hurricane glasses and garnish with coconut and cherries.
