This time of year, one of my favorite snacks is warm banana bread with a glass of nog. I decided to combine the two, and was so happy with the resulting eggnog bread. -Kristin Stone, Litte Elm, Texas

Number Of Ingredients 11

1/2 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 cup mashed ripe bananas (about 2 medium)
1/4 cup eggnog
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground nutmeg, divided
1/4 teaspoon salt
1/8 teaspoon baking soda

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas, eggnog and vanilla. In another bowl, whisk flour, baking powder, 1/4 teaspoon nutmeg, salt and baking soda; gradually beat into banana mixture., Transfer to a greased 9x5-in. loaf pan; sprinkle with remaining nutmeg. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

Using two of our family's favorites, bananas and eggnog, I came up with this yummy cake! Very moist and flavorful!

3 cups all-purpose flour
1 ½ teaspoons baking soda
¼ teaspoon salt
¾ cup margarine
2 ¼ cups white sugar
3 eggs
2 teaspoons vanilla extract
1 ½ cups eggnog
1 ½ cups mashed bananas
½ cup butter, softened
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
3 cups confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch pan.
  • Mix flour, baking soda, and salt together in a large bowl. Beat margarine and white sugar together in a separate bowl until light and fluffy. Beat in eggs, one at a time, until fully incorporated; stir in 2 teaspoons vanilla extract. Stir butter mixture into flour mixture, alternating with eggnog, until well combined. Fold in bananas. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour. Remove from oven and cool on a wire rack, about 1 hour.
  • Beat butter and cream cheese together in a bowl until creamy and smooth; beat in 1 teaspoon vanilla extract. Add confectioners' sugar; beat on medium-low speed with an electric hand mixer until combined. Spread frosting onto cooled cake.

NIF'S EGGNOG BANANA BREAD



Nif's Eggnog Banana Bread image

I got a new stand mixer for Christmas and I just had to use it! I modified an old banana bread recipe to make it more "festive" and this is what I got! There is not as much banana flavour as typical banana bread but it's there! Also, skip the rum if you want to. I didn't list specific stand mixer instructions, but I did use it on medium to do the mixing. I hope you like it. Enjoy!

2 eggs
1 cup white sugar
6 tablespoons canola oil
1 overripe bananas, mashed or 1/2 cup banana
1 1/3 cups low-fat eggnog
2 tablespoons dark rum or 2 tablespoons spiced rum
2 teaspoons vanilla extract
2 cups all-purpose flour
1 (3 1/2 ounce) package vanilla instant pudding mix
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 teaspoon sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F Grease a large loaf pan.
  • Beat eggs in large bowl. Stir in sugar, oil, banana, eggnog, rum, and vanilla.
  • In another bowl, combine the flour, pudding mix, baking powder, salt, and nutmeg. Stir into eggnog mixture, just until mixed. Pour batter into prepared loaf pan.
  • Mix sugar and cinnamon and sprinkle over batter.
  • Bake bread for 40 to 60 minutes, or just until a toothpick inserted in the center comes out clean.
  • Let cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely. Wrap tightly, and store in the refrigerator.

This eggnog bread would be good sprinkled with confectioners' sugar and served with Christmas breakfast.

2 eggs, beaten
1 cup eggnog
2 teaspoons rum flavored extract
1 cup white sugar
1 teaspoon vanilla extract
½ cup butter, softened
2 ¼ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease bottom only of a 9x5-inch loaf pan, or three 3x5-inch loaf pans.
  • Blend together the eggs, eggnog, rum extract, sugar, vanilla and butter.
  • Sift together the flour, baking powder, salt and nutmeg. Add to eggnog mixture and stir just enough to moisten; pour into prepared pan or pans.
  • Bake large loaf for 40 to 60 minutes, or until a tester inserted in the center comes out clean. Breads baked in the smaller pans require 35 to 40 minutes. Cool for 10 minutes, and remove from pan. Cool completely, wrap tightly in plastic wrap or foil, and store in refrigerator.
