This is a moist, fruity cake. It can be made as a regular cake or in a bundt tin (I used a 10" bundt tin). Cherries can be substituted for blueberries, raspberries - anything you have on hand. The cooking time shown is for a non-fan oven.

Ingredients

2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1 cup sugar
3 mashed ripe bananas
2 eggs
2 teaspoons vanilla extract
1/2 cup milk
1/4 cup oil
2 cups pitted cherries

Steps:

In a large bowl, combine the flour, baking powder, salt, suger.
In a smaller bowl, mash the bananas.
To the bananas, add the eggs, vanilla extract, milk and oil and mix. Combine cherries into the mix.
Add the wet mixture to the other dry ingredients in the large bowl and mix.
Spray the baking tin with cooking spray (alternatively, grease tin with butter).
Pour batter into baking tin and cook in a oven pre-heated to 375 degrees for 1 hour 10 minutes.
Remove cake from oven and allow to cool for 20 minutes. Turn cake onto a plate and allow to cool.

A moist & fruity Loaf. Freezes well, it's a good way of using up over-ripe bannanas.

Steps:

cream butter & sugar together until pale
Mash banana's mix in beaten eggs
mix wet ingredients into the butter, fold together
fold in the flour, fruit don't worry if it looks a little curdled just mix a little more.
Spoon into 1x2lb loaf tin or 2x 1lb loaf tin. Bake for 1 hour 150 c or until a skewer comes out clean. When cool wrap in baking parchment and store in a cool cupboard or freeze.

Preheat the oven to 180 degrees Celsius/ 350 degrees Fahrenheit. Line a baking tray with baking paper. I recommend using a deeper baking tray or to use a square baking frame. The mixture will not run off the baking tray if you don't use a baking frame or a deeper tray, but it will look better, more even if you do so.
Chop the chocolate and melt it in a double boiler/ bain-marie. Let it cool slightly until you prepare the rest.
In a large mixing bowl cream the soft butter and the sugar. Add the eggs, one by one, mixing well in between. Pour in the milk and the melted chocolate and stir in as well.
In another bowl mix together the flour, cocoa powder, baking powder, and salt. Sift the mixture over the wet ingredients, add the ground hazelnuts and fold in carefully. Pour the mixture onto the prepared baking sheet.

Grease the bottom and sides of a loaf pan with butter or cooking spray. Sprinkle with a sugar and cinnamon mix if you'd like. (This really adds a nice sweet crunch to the outside of the bread!)
In a medium bowl, combine the flour, baking powder, baking soda, cinnamon and a pinch of salt. Make a well in the center of the dry mixture and set aside.
In another bowl, combine the egg, bananas, cherries, sugar and cooking oil. Add the wet mixture all at once to the dry. Stir just until moistened and then gently stir in the chocolate chips. The batter will be lumpy.
Pour the batter into the loaf pan and bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Your nose will tell you when it's done. :)
