Easy Banana Buttermilk Muffins image

Banana buttermilk muffins are an easy way to turn your ripe bananas into something delicious. Thanks to the combination of buttermilk and almond flour these muffins are super light and fluffy.

Number Of Ingredients 8

9.88 ounces mashed ripe banana (2.5-3 bananas, approx. 1 cup plus 1 tbsp)
⅔ cup buttermilk
2 medium eggs
⅓ cup vegetable oil
⅓ cup+1tbsp maple syrup/honey
1½ cups less 1tbsp all-purpose/plain flour (6.35oz)
1⅓ cups ground almonds/almond flour (5.29oz)
2½ teaspoons baking powder

Steps:

  • Preheat the oven to 400 F/200 C/190 C fan/gas mark 6. Line a 12-hole muffin pan with muffin paper cases (alternatively use cooking spray). Set aside.
  • In a large bowl combine the regular flour with ground almonds, baking powder and salt, stir thoroughly using a whisk and remove any lumps. Set aside.
  • In another large bowl whisk together the eggs, buttermilk, oil and maple syrup until smooth. Stir in the mashed banana.
  • Pour in the dry mixture all at once and stir just to combine. Do not overmix - the batter should be lumpy.
  • Spoon the batter into the muffin cases and bake in the centre of the oven for 24 minutes.
  • Remove from the oven and set aside for 10 minutes then carefully transfer the muffins onto a cooling rack.

2 1/2 c all purpose flour
1/2 c sugar
1/2 c brown sugar, light
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 c buttermilk (dry buttermilk plus water may be used
2/3 c canola oil
1 tsp pure vanilla extract
1 large egg, lightly beaten
2 large banana's, very ripe, well mashed
1/2 c walnut, chopped

Steps:

  • 1. In a large mixing bowl combine egg, buttermilk, oil and vanilla extract. Mash banana's and add to this mixture mixing well.
  • 2. In another large bowl combine the flour, sugars, baking powder, baking soda and salt then mix thoroughly.
  • 3. Combine the dry ingredients with the wet ingredients folding the two gently by hand using a wooden spoon being sure not over mix.
  • 4. Use an ice cream scoop to measure out the batter into muffin cups.
  • 5. Take a spoon and drop walnuts over the top of each muffin pressing lightly so the nuts stick.
  • 6. Bake at 350*F for 18-22 minutes or until muffins spring back when touched and tops are lightly browned.
  • 7. Be sure to store any left over muffins in plastic wrap to keep muffins from drying out.
  • 8. These muffins can be frozen and thawed out when needed.

1 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup sugar (I use 1/4 cup sugar and 1/4 cup Splenda.)
2 teaspoons baking powder
1 teaspoon baking soda
1 cup low-fat buttermilk
1 cup mashed ripe banana
2 tablespoons canola oil
1 large egg
1 teaspoon vanilla
1/2 cup chopped walnuts (I use pecans)

Steps:

  • Preheat oven to 375°F.
  • Spray 12 regular muffin cups with non-stick cooking spray.
  • In a large bowl, mix together the flours, sugar, baking powder and baking soda.
  • In separate bowl, whisk together the buttermilk, mashed banana, oil, egg and vanilla.
  • Pour wet ingredients over dry ingredients and stir just until blended.
  • Spoon batter into muffin cups, filling about three-fourths full.
  • Sprinkle tops evenly with nuts.
  • Bake until lightly brown and a toothpick inserted in center comes out clean, approximately 15 to 20 minutes.
  • Allow to cool in pan on wire rack for 15 minutes, then turn out onto rack and cool completely.
  • These muffins freeze well and can be warmed in microwave.

3/4 cup self-raising flour
1/4 teaspoon baking soda
1 pinch salt
1/2 teaspoon cinnamon
3/4 cup wholemeal self-rising flour
1/2 cup brown sugar (firmly packed)
1 teaspoon orange zest
1 banana, mashed
1/2 cup dates, chopped finely
1/2 cup light salad oil
3/4 cup buttermilk
1 egg

Steps:

  • Preheat the oven to 210 deg C.
  • Grease a 12-cup muffin tin[the BIG muffin size] or use large paper cases.
  • Sift the self-raising flour with the baking soda, salt and cinnamon into a bowl, then add the wholemeal flour, brown sugar and orange peel.
  • Mix together lightly then make a well in the centre and add the banana, dates, oil, buttermilk and egg.
  • Stir the mixture with a fork until just combined.
  • Place 1 heaped tbsp of mixture into each case and bake for 20-25 minutes.

1/2 cup butter, softened
1 cup sugar
2 eggs
2 large ripe bananas, mashed (about 1 cup)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
TOPPING:
1/4 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup quick-cooking oats
2 tablespoons cold butter

Steps:

  • Preheat oven to 400°. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Add bananas and vanilla; mix well. Combine the flour, salt, baking powder and baking soda; add to creamed mixture alternately with buttermilk., Fill greased or paper-lined muffin cups two-thirds full. For the topping, combine the flour, brown sugar and oats. Cut in butter until crumbly. Sprinkle a rounded teaspoonful over each muffin., Bake for 16-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

This recipe was developed with Kellogg's All Bran cereal I have never used any other bran cereal for this so I cannot guarantee good results with anything else --- if desired a crumb topping can be sprinkled on top, see my recipe#184305 for the topping mixture.

1/2 cup brown sugar, packed
1/2 cup white sugar
1 cup hot buttermilk (heat in microwave until hot)
1 cup all-bran cereal
1 large egg
1/2 cup vegetable oil
3/4 cup pureed banana (1 cup is okay also)
2 teaspoons vanilla
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 1/2 teaspoons baking powder
1/2-1 teaspoon cinnamon (optional)
1 cup raisins (optional)
1/2 chopped walnuts (optional)

Steps:

  • Set oven to 375 degrees F.
  • Set the oven rack to second lowest position.
  • Spray 12 muffin cups with non-stick cooking spray, and line with paper liners.
  • Set the muffin trays on a baking sheet (the baking sheet is optional).
  • In a medium bowl stir the HOT buttermilk together with the All Bran cereal, and let stand for about 6 minutes.
  • Meanwhile puree the banana.
  • After the 6 minutes, transfer the bran mixture to a large bowl, and add in the pureed banana; mix to combine.
  • Mix the two sugars together, then add to the bran/banana mixture with the egg, vanilla and oil; blend well to combine.
  • Mix together the flour, salt, baking soda, baking powder and cinnamon; add to the banana mixture; mix gently to make a soft batter.
  • Fold in nuts and raisins (if using).
  • With an ice cream scoop, divide the batter evenly between the muffin cups.
  • Bake about 22-28 minutes or until muffins test done.
  • *NOTE* Although it is not necessary, I like to place the muffin tins on a baking sheet to bake in the oven.

1/2 cup oatmeal
2 teaspoons baking powder
1 teaspoon baking soda

1/2 cup unsweetened applesauce
1/4 cup egg substitute
1/2 cup buttermilk
3 -4 bananas, ripe and mashed
1 teaspoon vanilla

Steps:

  • Mix all dry ingredients in medium bowl, set aside.
  • Mix all wet ingredients in small bowl.
  • Add to dry ingredients and mix till just wet.
  • Spoon batter into muffin tin, sprayed with cooking spray. Bake at 375 for 15 to 20 mins or till test done. Cool on wire rack in tin for 5 mins then remove to rack to cool completely. Store in airtight container in fridge.
