These cookies are crispy on the outside and softer on the inside. They aren't too sweet. They do taste like banana.

3 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2 eggs
1 cup white sugar
¾ cup mashed ripe banana
2 tablespoons vegetable oil
1 tablespoon rum
½ cup toasted, chopped pecans

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Combine flour, baking powder, and salt in a bowl and stir to mix well. Beat the eggs lightly in a bowl, and add the sugar, banana, oil, and rum. Stir the banana mixture into the flour mixture, blend well, and drop in the pecans, mixing them thoroughly into the dough. Form the dough into 4 logs about 1/2 inch thick, place them onto parchment paper-lined baking sheets, and bake for 25 minutes, until the cookie logs begin to brown.
  • Lower the oven temperature to 250 degrees F (120 degrees C). Remove the baking sheets from the oven and let the cookie logs cool for 10 minutes. Remove the logs from the parchment paper and cut each log into 1/2 inch thick slices. Place the biscotti back onto the cookie sheets and bake for 15 minutes per side (30 minutes total) until cookies begin to brown. Remove to racks to cool. The biscotti will be soft at first, and will harden as they cool.

I made these for my little poodle who turns his nose up to just about everything but not these, he just loved them! just make certain that the containers are labeled doggie treats, these smell so good that someone might be tempted to eat one lol! It is also a great way to use up any leftover ripe bananas --- the brown sugar is only optional I like to add it in! :)

5 cups whole wheat flour
3/4 teaspoon baking soda
1 large egg
1/4 cup vegetable oil
1 1/2 cups pureed ripe bananas
1/2 teaspoon maple extract
2 -3 tablespoons brown sugar, to taste (optional)
water
1 egg, for egg wash
1 cup rolled oats (NOT quick oats)

Steps:

  • Set oven to 325 degrees.
  • Prepare a NON-stick baking/cookie sheet.
  • In a bowl, mix together the flour and the baking soda.
  • Add in the egg, oil, pureed banana and the maple flavoring; stir until lumpy.
  • Add in water 1 tsp at a time as needed, to make a workable dough.
  • Knead the dough by hand on a flat surface until mixed thoroughly.
  • Form into 2 logs.
  • Flatten so that the logs are 6-7-inches wide BY 1-ich high.
  • With a pastry brush cover the logs on both sides with egg wash; then roll in the oats.
  • Place on a non-stick (ungreased) baking/cookie sheet.
  • Bake for 40 minutes.
  • Remove from oven; let cool 10 minutes.
  • Slice the biscotti in 1/2- 3/4-inch (or whatever width size you desire).
  • Place the slices back on the baking sheets.
  • Bake for another 20 minutes, or until golden and crispy.
  • When completely cool, store in zipper storage bags, or an air-tight container.

5 cups flour
1/4 cup peanuts, chopped
1/2 teaspoon baking soda
1 egg
1/4 cup vegetable oil
1 1/2 cups bananas, pureed
2 teaspoons vanilla
water

Steps:

  • Preheat oven to 325°F.
  • Place dry ingredients in large bowl. Make a well in the center.
  • Blend egg, oil, vanilla and banana together. Add into the dry ingredients in well. Start combining together.
  • Add water, one teaspoon at a time as needed.
  • Knead by hand on table until mixed thoroughly. Form into logs approximately 2 - 2 1/2 inches high. Flatten so that log is 6 - 7 inches wide by 1 inch high.
  • Place on non-stick baking sheets or lightly greased ones.
  • Bake 30 - 40 minutes. Remove and cool for 10 minutes. Slice into 1/2 - 3/4 inch slices.
  • Place on baking sheets and bake for about 20 minutes or until golden brown. Cool. Store in airtight container.

This is a biscotti that although is nice and crispy on the outside, is a bit soft on the inside--fantastic with coffe or a late-night ice cream treat.

1 1/8 cups all-purpose flour
1/3 cup white sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon ground cinnamon
1/2 cup raisins
1 banana, ripe and mashed
2 teaspoons vegetable oil
1/2 teaspoon vanilla
2 large eggs (one for baking one for white-wash)

Steps:

  • Preheat oven to 350°F.
  • Grease cookie sheet very lightly.
  • Sift all-purpose flour and baking powder into large mixing bowl. Then stir in sugar, salt, and cinnamon.
  • In a separate mixing bowl, combine banana, vegetable oil, vanilla, and one egg.
  • Pour wet ingredients into dry ingredients; mix well with a hand or cookie mixer.
  • Fold in raisins.
  • On a floured board, scoop mixture onto it and lightly knead.
  • Form a 7-8" log onto lightly greased baking sheet. Pat down to 1/2 thickness.
  • Bake at 350ºF for 25 minutes.
  • Turn oven down to 250°F.
  • Remove log from sheet and let cool for 10 minutes.
  • In a small bowl, mix together one egg and a bit of water for white-wash, mix.
  • Cut biscotti into 1/2-1" pieces, lightly and thinly brush top and centers with white-wash.
  • Turn biscotti on their sides and bake at 250ºF for 15 minutes.
  • Let cool for 20 minutes.

This recipe is guaranteed to satisfy the pickiest dog. We were advised to feed our puppy dry puppy chow. He would just nibble on it throughout the day. Consequently his outside needs were hard to predict. This recipe was the answer. Our mature dog suddenly developed an appetite for his food, too. Now, both dogs practically inhale this (I feed twice a day), we know when to let them outside, resulting in happier pets and parents! It also provides some extra calcium and protein. If your dog doesn't exercise much, you can use the lighter canned dog food, and the fat free yogurt.

I brought these to work and they got rave reviews. I used the Banana Crunch cereal from Trader Joes. Recipe is from Kraft.

2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup sugar
1/2 cup margarine, softened
2 eggs
1 ripe banana, mashed
1 teaspoon vanilla
1 1/2 cups post selects Banana Nut Crunch cereal, crushed
1 ounce square BAKER'S Semi-Sweet Chocolate

Steps:

  • PREHEAT oven to 325ºF. Mix flour, baking powder and salt until well blended; set aside. Beat sugar and margarine in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, bananas and vanilla; beat until well blended. Gradually add flour mixture, mixing until well blended after each addition. Stir in crushed cereal.
  • DIVIDE dough in half with floured hands; place on lightly floured surface. Roll each half into 14x2-inch log. Place, 2 inches apart, on nonstick baking sheet.
  • BAKE 25 to 30 minute or until lightly browned. Remove from baking sheet to wire rack; cool 5 minute Transfer to cutting board. Use serrated knife to diagonally cut each log into 12 slices. Place, cut-sides up and 1/2 inch apart, on same baking sheet. Bake an additional 12 to 15 minute or until slightly dry. Remove to wire racks; cool completely. Melt chocolate as directed on package; drizzle over biscotti. Let stand until chocolate is firm. Store in tightly covered container at room temperature.
  • Jazz It Up: Mix 1 cup powdered sugar and 2 tablespoons orange juice until well blended. Drizzle over cooled biscotti. Let stand until glaze is firm.
  • Cranberry Breakfast Biscotti: Prepare biscotti as directed, omitting the banana, increasing the sugar to 3/4 cup and using POST CRANBERRY ALMOND CRUNCH Cereal.
