CRISPY CHICKPEAS WITH BEEF



Crispy Chickpeas With Beef image

Related to a classic chili, this fast-cooking recipe combines legumes, meat and spices, with excellent results. This dish works equally well with canned or home-cooked chickpeas; if you like a bit more kick, double or triple the ancho chiles or chile powder. Turmeric or saffron also work well. Don't want to use ground beef? Ground turkey, chicken or pork would sub in well here; add a little oil to the pan first. For a bit more flavor, add a clove or two of chopped garlic to the browning meat. The point is: improvise.

1/2 to 1 pound ground beef or other meat
4 cups cooked chickpeas (about 1 28-ounce can), drained (reserve 1 cup liquid)
2 teaspoons ground cumin
1 ancho or chipotle chile, soaked, stemmed, seeded and minced; or 1 teaspoon good chile powder
2 teaspoons minced garlic
Salt and pepper
1 tablespoon extra virgin olive oil
Minced cilantro or parsley for garnish (optional)

Steps:

  • Turn heat to high under a large, deep skillet, and add meat a little at a time, breaking it into small pieces as you do. Stir and break up meat a bit more, then add chickpeas. Keep heat high, and continue to cook, stirring occasionally until chickpeas begin to brown and pop, 5 to 10 minutes. Don't worry if mixture sticks a bit, but if it begins to scorch, lower heat slightly.
  • Add cumin, chili or chili powder and garlic. Cook, stirring, for about a minute. Add reserved cooking liquid, and stir, scraping bottom of pan to loosen any browned bits. Season with salt and pepper, then turn heat to medium-low. Continue to cook until mixture is no longer soupy but not dry.
  • Stir in olive oil, then taste, and adjust seasoning if necessary. Garnish if you like, and serve immediately, with rice or pita bread.

This dish originated in North Africa, where it is called "Markit Ommala." I found it many years ago in a cookbook, and now when I want to make something a little different, I often prepare this. It's delicious!

1/4 cup olive oil
1 lb beef, cut into 1/2-inch cubes
2 medium onions, chopped
1/2 cup cilantro, finely chopped
1/2-1 fresh hot pepper, finely chopped (such as jalapeno)
4 garlic cloves, minced
2 (19 ounce) cans chickpeas, undrained
4 medium tomatoes, diced (or a 15-oz. can diced tomatoes)
salt and pepper, to taste
1/2 teaspoon cumin
1/2 teaspoon thyme
1 cup low sodium beef broth
1 cup water
1/4 cup green olives, pitted and chopped (with pimentos removed)
2 tablespoons lemon juice
dipping bread, cut into thick slices (optional)

Steps:

  • In a saucepan, heat the oil, then saute the meat over medium heat until it begins to brown. Add the onions and hot pepper; saute for 6 minutes. Then add the garlic and cilantro; saute for an additional 1-2 minutes. (Be sure not to let the garlic brown or it will taste bitter.).
  • Stir in the undrained chickpeas, tomatoes, salt, pepper, cumin, thyme, beef broth and water; bring to a boil and then cover and simmer over medium heat for 50 minute or until the meat is done. Then uncover and cook at medium-high for another 10 minutes until the sauce has thickened up just a little. Stir in the olives and lemon juice and simmer over low heat for 5 minutes. Serve with thick slices of rustic bread to soak up the flavorful broth.

This hearty dinner recipe combines beef with bell pepper, carrots, chickpeas, and Ethiopian berbere seasoning-a spice blend of up to twenty ingredients including chile, paprika, ginger, and garlic. The result is a fragrant stew that will perk up winter palates and delight the senses. To soak up every delicious drop, serve it over a bed of fluffy couscous.

2 pounds beef chuck (preferably grass-fed), cut into 2-inch pieces
Kosher salt and freshly ground pepper
Unbleached all-purpose flour, for dusting
3 tablespoons extra-virgin olive oil
1 red onion, chopped
1 red bell pepper, ribs and seeds removed, chopped
2 tablespoons tomato paste
2 teaspoons berbere seasoning
2 tablespoons Worcestershire sauce
3/4 cup dry red wine, such as Cabernet Sauvignon
3 1/2 cups low-sodium chicken broth
4 carrots (8 ounces), peeled and cut into 1 1/2-inch pieces
1 can (15.5 ounces) chickpeas, drained and rinsed
Fresh mint leaves, for serving
Cooked couscous, warmed, for serving

Steps:

  • Generously season beef with salt and pepper. Dust with flour and shake off excess. Heat a Dutch oven or other heavy-bottomed pot over medium-high, and swirl in 2 tablespoons oil.
  • Add half of beef in a single layer and cook, turning a few times, until browned in places, 5 to 7 minutes. Transfer to a plate, leaving fat in pot. Brown remaining beef; transfer to plate.
  • Preheat oven to 350°F. Swirl remaining 1 tablespoon oil into pot, still over medium-high heat. Cook onion and bell pepper until onions are golden, 3 to 4 minutes. Add tomato paste and berbere seasoning and cook, stirring frequently, until tomato paste is caramelized, 1 minute. Add Worcestershire sauce and wine; boil until mostly evaporated.
  • Return beef and any accumulated juices to pot along with broth. Bring to a boil. Cover pot, transfer to oven, and cook 1 1/2 hours. Remove pot from oven and stir carrots into stew. Cover and continue cooking in oven until beef is fork-tender and carrots are easily pierced with the tip of a knife, about 1 hour more. Stir in chickpeas; return to oven for 5 minutes more, just to heat through.
  • Ladle stew into shallow bowls, sprinkle with mint, and serve. Cooled stew can be transferred to an airtight container and refrigerated up to 2 days, or frozen up to 3 months.

1 tablespoon olive oil
1 clove garlic, minced
1 cup uncooked basmati rice
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cayenne pepper
1 quart chicken stock
1 ½ pounds ground turkey
2 (15 ounce) cans garbanzo beans (chickpeas), drained and rinsed
2 (15 ounce) cans black beans, drained and rinsed
1 bunch chopped fresh cilantro
1 bunch chopped fresh parsley
¼ cup pine nuts
salt and ground black pepper to taste

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Stir in garlic, and cook 1 minute. Stir in rice, cumin, coriander, turmeric, and cayenne pepper. Cook and stir 5 minutes, then pour in chicken stock. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Place the turkey in a skillet over medium heat, and cook until evenly brown.
  • Gently mix cooked turkey, garbanzo beans, black beans, cilantro, parsley, and pine nuts into the cooked rice. Season with salt and pepper.

A delightful and easy mild curry adapted from "Indian...Made Simple", published by Parragon's Love Food division, no editor named. Balti recipes are usually associated with Birmingham, England, but the spice mixtures fit Indian cuisine. The Balti creators hail from the north Pakistan province Baltistan in Kashmir. Note that China, Pakistan and India all lay claim to that territory. Lamb is more typical of Indian cuisine than beef. We used venison tenderloin and our meat came out well done; next time we will cut the meat in bigger chunks as we prefer it medium rare. Note that a Vitamix can puree the sauce while it is still hot. Garlic and ginger paste is available in Indian groceries, or you can use Recipe #422497. It's a great timesaver for a great taste combination. I recommend a large wok instead of a large skillet when you cook the beef (I had red bell peppers flying everywhere).

Steps:

  • BALTI SAUCE:.
  • Melt the ghee in a wok or large skillet over medium-high heat.
  • Add the onions and garlic and ginger paste and stir-fry for about 5 minutes, until the onions are golden brown.
  • Stir in the tomatoes, then add the paprika, turmeric, cumin, coriander, red chili powder (cayenne), cardamom, bay leaf, and salt and pepper to taste.
  • Bring to a boil, stirring, then reduce the heat and simmer for 20 minutes, stirring occasionally.
  • Let the sauce cool slightly, then remove the bay leaf and pour the mixture into a food processor or blender and process to a smooth sauce.
  • BEEF:.
  • Wipe out the wok and return it to medium-high heat. Add the ghee and melt.
  • Add the onion and garlic and stir-fry for 5-8 minutes, until golden brown.
  • Add the bell peppers and continue stir-frying for 2 minutes.
  • Stir in the beef and continue stirring for 2 minutes, until it starts to turn brown.
  • Add the balti sauce and bring to a boil. Reduce the heat and simmer for 5 minutes, or until the sauce slightly reduces again and the bell peppers are tender.
  • Adjust the seasoning, if necessary.
  • Garnish with cilantro sprigs and serve with Indian bread.

3-4 c Balti sauce (recipie follows)
1/3 tsp each: brown mustard seed, kalajeera, whole cumin, whole fennel
1 onion finely chopped
1 can chick peas
1/2 tsp dried cilantro
1 c fresh green beans cut into 1" lengths
Balti Sauce:
3 tbsp vegetable oil
1/4 tsp minced garlic
1 tsp cracked ginger
1 can chopped tomatoes
1 medium large onion, finely chopped
2 tbsp Balti seasoning
1 pint vegetable/chicken/beef stock
2 tbsp lime juice

Steps:

  • To Make Balti Sauce: Yield: 4 c Add 2-3 tbsp water to garlic and ginger. Rehydrate for 10 minutes. Heat oil. Add onions, garlic, and ginger. Add 2 tbsp Balti seasoning. Stir fry dry for 1 minute. Add tomatoes, lime juice, and stock. Bring to a boil, simmering uncovered for 20-30 minutes. Heat pan, add whole spice mixture. Gently roast until they start smoking/popping being careful not to burn (this step is optional). Add oil. Brown meat. Add onion, sauce, chick peas, beans, or other fresh vegetables. Heat through and simmer 10 minutes. Add cilantro before simmering is complete. Serve with rice and naan.

  • Heat the oil over high heat and then add the chopped onion. Fry for about 3 minutes and then add the chillies.
