RASPBERRY FREEZER JAM



Raspberry Freezer Jam image

The BEST homemade raspberry jam that requires just four simple ingredients and will last in the freezer for up to one year!

6 cups fresh raspberries (fresh and ripe)
5 1/4 cups granulated sugar
1 box Sure Jell Fruit Pectin ((found at your local grocery store, walmart, or online))
3/4 cup water
A few clean glass or plastic jars with lids

Steps:

  • *Use firm, ripe berries for the best flavor and set. (You don't want to use overripe berries or the jam may be too soft and runny.)
  • Wash and rinse glass or plastic containers. How many you use depends on how big they are. This recipe makes about 7-8 cups of jam.
  • Add berries to a large bowl and lightly mash them. Be careful not to over mash them---hey should still look fairly chunky, but not like whole berries.
  • Measure out exactly 3 cups of mashed berries and pour them into a separate large bowl. (If you have leftover mashed berries you could freeze them for smoothies or use them for topping on pancakes or waffles.)
  • Gradually stir in 1 cup of the sugar to the mashed berries, and stir until sugar is dissolved. Repeat, adding just one cup of sugar at a time and then mixing, until you use up the remaining 4 1/4 cups of sugar.Let stand for 10 minutes.
  • In a small saucepan, stir together pectin with 3/4 cup water. Bring to a rolling boil (a boil that doesn't stop when stirred) over medium-high heat, stirring often. Boil for one minute, stirring constantly. Remove from heat.
  • Stir pectin into the berries mixture. Continue stirring the mixture until sugar is completely dissolved and no longer grainy. This step is important! (see notes in post above).
  • Pour jam into containers, leaving 1/2in of space at the top of the container, for expansion. Cover with lid and allow jam to rest at room temperature for 24 hours before freezing.
  • Jam will keep for up to 3 weeks in the refrigerator, or freeze for up to one year.
  • You might also like Peach Jam or Strawberry Jam!

3 c finely chopped cherries (abt 2 1/4 lbs) remove stems and pits before chopping
2 Tbsp lemon juice (use only with sweet cherries)
5 c sugar
1 11.75 oz pkg ball original fruit pectin
PEACH FREEZER JAM: THIS RECIPE YIELDS 5 (8 OZ.) HALF PINTS
2 1/4 c finely chopped peaches (abt. 2 lbs or 5 med) peel and pit before finely chopping
2 Tbsp lemon juice
4 1/2 c sugar
1 11.75 oz. pkg ball original fruit pectin
STRAWBERRY FREEZER JAM: THIS RECIPE YIELDS 5 (8 OZ.) HALF PINTS
2 c crushed strawberries (abt 2 1 lb containers) hull and crush one layer at a time, using a potato masher.
2 Tbsp lemon juice
4 c sugar
1 11.75 oz. pkg ball original fruit pectin
STRAWBERRY-BANANA FREEZER JAM: THIS RECIPE YIELDS 5 (8 OZ.) HALF PINTS
2 c crushed strawberries (2 1 lb containers) hull and crush berries one layer at a time using a potato masher.
1 c mashed banana (abt 2 medium)
3 c sugar
1 11.75 oz pkg ball original fruit pectin
STRAWBERRY-KIWI VARIATION:
replace 1 cup peeled crushed kiwi (abt 4 small) for the mashed bananas
BERRY FREEZER JAM: (BLACKBERRY, BLUEBERRY OR RASPBERRY) THIS RECIPE YIELDS 6 (8 OZ.) HALF PINTS
3 c crushed berries (abt 2 1/4 lbs. or 6 6oz containers) crush one layer at a time using a potato masher.
2 Tbsp lemon juice (use only with blueberry)
5 1/4 c sugar
1 11.75 oz. pkg ball original fruit pectin

Steps:

  • 1. Combine prepared fruit with lemon juice (as specified in recipe) in large bowl. Add sugar, mixing thoroughly. Let stand 10 minutes.
  • 2. Combine 3/4 c. water and Ball Original Fruit Pectin in a small saucepan. Bring to a full rolling boil that cannot be stirred down, stirring constantly. Boil hard for 1 minute, continuing to stir.
  • 3. Add cooked pectin mixture to fruit mixture. Stir for 3 minutes.
  • 4. Ladel Freezer jam into clean Ball freezer jars leaving 1/2 inch headspace. Apply caps and let jam stand in refrigerator until set, but no longer than 24 hours. Serve immediately, refrigerate up to 3 weeks or freeze up to 1 year. Note: When freezing, Ball recommends straight-sided jars to allow for expansion.

1 (1 5/8 ounce) package ball simple creations no cook freezer jam pectin
1 1/2 cups sugar or 1 1/2 cups Splenda granular
4 cups fresh fruit (see NOTE) or 4 cups frozen fruit (see NOTE)

Steps:

  • Stir sugar and contents of package in a bowl until well blended.
  • Add 4 cups crushed fruit (for peaches, reduce to 3 1/2 cups). Stir 3 minutes.
  • Ladle jam into clean plastic (or glass)freezer jars.
  • Twist on lids and let stand until thickened, about 30 minutes.
  • Refrigerate up to 3 weeks or freeze up to 1 year.
  • NOTE: Fresh strawberries: 4 (1 lb) pkgs Frozen Strawberries: 3 (12 oz) bags.
  • Fresh Peaches: 12 medium.

  • Stir in the cherry tomatoes, green beans, zucchini, chickpeas, and cover and cook 10 to 15 more minutes, until the green beans are tender.
  • Stir in the vinegar, kale, an additional ½ teaspoon salt (or to taste), and more pepper. Let cool, then transfer to glass storage containers.

  • Rinse and dry the containers you'd like to put the jam in (enough for 5 cups). I always use glass mason jars but plastic containers work great also. This recipe fills 5-6 half pint jars.
  • In a food processor add strawberries and pulse just a few times, until strawberries are well diced, but not totally mashed.
  • Measure exactly 2 cups of strawberries into a large bowl. (It's really important to measure the berries and sugar exactly, or the jam will not set properly.)
  • Add the sugar, one cup at a time, stirring really well after each addition. Let stand for 10 min., stirring occasionally.
