COSTA RICAN TILAPIA
This recipe is from Costa Rica (Central America). It's baked tilapia with a side of rice. The tilapia is great, but the rice is awesome. BAKED TILAPIA - COSTA RICAN-STYLE
A delicious way to bake tilapia -- a meal in itself with the rice, tomatoes, and black beans. The addition of the orange gives the dish a nice citrus note.

- Preheat the oven to 400 degrees F.
- In a mixing bowl, whisk together the orange juice, lime juice, oil, 2 tablespoons of the cilantro, the garlic, and sugar; season with salt and pepper. Add the tilapia fillets to the marinade, turning to coat. Marinate in the refrigerator for 20 minutes, turning occasionally.
