2 lbs swiss steak or 2 lbs round steaks
1/2 cup flour
1 teaspoon salt
1/2 tablespoon black pepper
1 medium onion, sliced and separated into rings
2 large carrots, thinly sliced
2 stalks celery, thinly sliced
1 (14 1/2 ounce) can diced tomatoes, undraind
1 (8 ounce) can tomato sauce
8 ounces water
1 dash Worcestershire sauce
hot mashed potatoes

Steps:

  • Heat oil in large skillet.
  • Combine flour, salt and pepper.
  • Cut steak into 4 or 5 servings; dredge in flour mixture.
  • Brown on both sides in hot oil; remove to large baking dish.
  • Place vegetables over steak; pour tomatoes, tomato sauce, water and Worcestershire over all.
  • Cover and bake at 350 degrees for 1 1/2- 2 hours, or until meat is tender.
  • Serve with sauce spooned over the mashed potatoes.

This recipe takes a tough piece of meat and turns it into a nice tender dinner. The round steak is smothered with a mixture of celery, carrot, onion, green pepper, and tomato, and baked until it is tender and delicious. I like it with mashed potatoes (but I like mashed potatoes with everything!), but it also works with noodles. 2 lbs top round steaks, 1 inch thick
1/3 cup all-purpose flour
1 tablespoon vegetable oil
4 stalks celery, coarsely chopped
3 large carrots, scraped and coarsely chopped
1 large onion, coarsely chopped
1 green pepper, coarsely chopped
1 (28 ounce) can whole tomatoes, undrained and chopped
1 (8 ounce) can tomato sauce
1/3 cup ketchup
1 tablespoon Worcestershire sauce
2 teaspoons prepared horseradish
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Dredge steak in flour. Brown steak in vegetable oil in a large skillet over medium heat; drain well.
  • Place steak in a deep 4-quart baking dish; top with chopped celery, carrot, onion, and green pepper.
  • Combine tomatoes, tomato sauce, ketchup, Worcestershire sauce, horseradish, salt, and pepper; stir well, and pour over vegetables. Cover and bake at 325 degrees for 2 to 2 1/2 hours or until the meat is tender.

1/2 to 3/4 pound beef top round steak
2 tablespoons all-purpose flour, divided
1/2 teaspoon salt
2 tablespoons canola oil
1 can (14-1/2 ounces) stewed tomatoes
1/2 cup chopped carrot
1/4 cup chopped celery
1 tablespoon chopped onion
1/4 teaspoon Worcestershire sauce
2 tablespoons sharp cheddar cheese

Steps:

  • Cut meat into two portions; pound to 1/4-in. thickness. Combine 1 tablespoon flour and salt; coat meat on both sides. In a skillet, brown meat in oil. Transfer meat to a greased shallow 2-qt. baking dish; set aside. , To pan drippings, add tomatoes, carrot, celery, onion, Worcestershire sauce and remaining flour. Bring to a boil over medium heat; cook and stir for 2 minutes. Pour over meat. Cover and bake at 350° for 1-1/2 hours or until the meat is tender. Sprinkle with cheese; return to the oven until cheese is melted.

I found this recipe online years ago and it was an instant hit with my family. It is especially comforting on a cold winter day.

2 lbs cube steaks
salt and pepper, to taste
1 cup all-purpose flour
1/2 cup vegetable oil
1 cup diced onion
3 cups beef stock or 3 cups bouillon
1 tablespoon Worcestershire sauce

Steps:

  • Cut each steak into the desired serving size, if necessary. Salt and pepper each steak lightly and dredge in flour. Shake off excess. Set aside.
  • If you don't have a skillet with ovenproof handles, you can use a Pyrex dish or an earthenware pan with a cover for the oven. Heat a heavy 12-inch skillet (cast iron, if you have one) with a tight-fitting lid over medium heat. Add the vegetable oil. Brown the cube steaks on both sides and set aside.
  • Pour off all of the oil except 1/3 cup. Add 1/3 cup of flour to the oil and stir. Allow the mixture ot brown over medium-low heat and stir frequently to prevent it from burning. When the mixture is about the color of peanut butter, add the onion. Stir and allow the onion to cook for about 1 minute.
  • Slowly add the beef stock, stirring constantly. Add the Wercestershire sauce and simmer for 5-10 minutes.
  • Return the cube steaks to the pan, cover, and bake in a 275 degree oven for one hour.
  • Serve with mashed potatoes and your favorite vegetable.

1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds beef top round steak, cut into serving-size pieces
2 tablespoons canola oil
1 medium onion, thinly sliced
2 cups water
2 tablespoons Worcestershire sauce
GRAVY:
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 cups beef broth or water
Hot cooked noodles or mashed potatoes, optional

Steps:

  • Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender. Remove to a serving platter and keep warm. , In a small bowl, combine flour, salt, pepper and broth until smooth; stir into pan juices. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Serve steak and gravy with noodles or mashed potatoes, if desired. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

1 1/2 lbs bnls. beef steaks, your choice...I prefer sirloin
3 tablespoons unbleached flour
1 teaspoon seasoning salt, LAWRY's preferred
1/4 teaspoon black pepper
1/2 teaspoon chili powder
2 -3 tablespoons Crisco shortening, I use the butter flavor
1 (16 ounce) can stewed tomatoes, undrained
1 small onion, thinly sliced
1 stalk celery, sliced (or chopped)
1 large carrot, thinly sliced
1 1/2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 325°.
  • Cut meat into 6 serving-size pieces'.
  • Combine the flour & seasonings.
  • Pound 2 T. of the flour mixture into the meat.
  • Heat the shortening in an 10 in., oven-proof skillet.
  • Brown the meat on both sides.
  • Drain the excess fat from the skillet.
  • Add the stewed tomatoes & the other vegetables.
  • Sprinkle the worcestershire sauce on top.
  • Cover & bake for 1 hour, 15 minutes.
  • Remove the meat from skillet & keep warm.
  • Skim excess fat from skillet.
  • Combine ¼ cup water with the remaing flour mixture & stir into the sauce.
  • Cook over medium-high heat, stirring constantly, for 2 miuntes or until thickened.
  • Serve meat & sauce over hot rice or noodles.

This is a variation on another recipe, which is great as is, but I couldn't make Swiss steak without green peppers or garlic. I also season the meat instead of the flour; it gets a more intense taste that way.

1 pound boneless beef round steak
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon seasoned salt (such as LAWRY'S®)
1 tablespoon all-purpose flour, or as needed
¼ cup vegetable oil
1 (14.5 ounce) can stewed tomatoes
1 medium onion, chopped
1 green bell pepper, chopped
¼ cup beef broth
½ cup chopped carrots
¼ cup chopped celery
2 cloves garlic, minced
1 tablespoon all-purpose flour
¼ teaspoon Worcestershire sauce
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
  • Cut steak into four portions and pound to 1/4-inch thickness; season with salt, pepper, and seasoned salt. Coat meat evenly with about 1 tablespoon flour.
  • Heat oil in a skillet over medium heat. Cook beef in hot oil until browned completely, 3 to 5 minutes per side; transfer to prepared baking dish reserving drippings in the skillet.
  • To the drippings, add tomatoes, onion, green bell pepper, beef broth, carrots, celery, garlic, 1 tablespoon flour, and Worcestershire sauce. Bring the tomato mixture to a boil; cook and stir for 2 minutes. Pour the mixture over the meat in the baking dish. Cover dish with aluminum foil.
  • Bake until beef is completely tender, about 90 minutes. Sprinkle cheese over beef and return to oven uncovered until cheese is melted, 3 to 5 minutes.

2 pounds beef top round steak (3/4 inch thick)
2 cups sliced fresh mushrooms
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup chopped onion
1 to 2 teaspoons dried tarragon
2 tablespoons cornstarch
2 tablespoons water
1 cup heavy whipping cream
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325°, until meat is tender, 1-1/4 to 1-3/4 hours, basting twice. , Remove meat to a serving platter; keep warm. Combine cornstarch and water until smooth; add to skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; stir in cream. Simmer, uncovered, until heated through, 3-4 minutes. Return meat to skillet and turn to coat with sauce. If desired, sprinkle with parsley.
