ROASTED SWEET POTATO MANGO SALAD



Roasted Sweet Potato Mango Salad image

This is a wonderful, refreshing roasted sweet potato salad with mangoes and avocados. It's very easy and never fails to impress! Add habanero peppers for a spicy kick. Serve at room temperature or chilled.

4 large sweet potatoes, cut into cubes
cooking spray
½ teaspoon salt
½ teaspoon ground black pepper
1 lemon, juiced
3 tablespoons olive oil
2 tablespoons brown sugar
1 teaspoon sea salt
½ teaspoon ground black pepper
2 large mangoes - peeled, seeded, and chopped
¾ cup minced onion
¾ cup chopped fresh cilantro
1 large avocado - peeled, pitted, and chopped
1 green onion, chopped
½ habanero pepper, seeded and minced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread sweet potatoes onto a baking sheet; spray with cooking spray and season with 1/2 teaspoon salt and 1/2 teaspoon black pepper.
  • Roast potatoes in the preheated oven until soft, about 20 minutes. Transfer potatoes to a plate and refrigerate until cooled completely.
  • Whisk lemon juice, olive oil, brown sugar, sea salt, and 1/2 teaspoon black pepper together in a bowl; let rest for at least 5 minutes.
  • Mix chilled sweet potatoes, mangoes, onion, cilantro, avocado, green onion, and habanero pepper together in a large bowl. Drizzle dressing over potato mixture and toss to coat.

Jamaican Loaded Baked Sweet Potatoes with Pulled Pork and Mango Rum Salsa image

It's hard to feel guilty about devouring a loaded baked potato with pulled pork when it's a beta carotene-packed sweet potato topped with fiber-filled mango. Shave down prep time by using two cups of thawed Make-Ahead Oven-Roasted Pulled Pork!

4 large sweet potatoes (red-fleshed)
1/4 teaspoon salt
1 tablespoon packed brown sugar
1 tablespoon lime juice
1 1/2 teaspoons dark rum
2 teaspoons finely chopped gingerroot
1 tablespoon finely chopped seeded jalapeño chile
1/4 cup diced red onion
1 cup diced mango
2 tablespoons chopped fresh cilantro
2 cups oven-roasted pulled pork
1 tablespoon olive oil
1 1/2 teaspoons jerk seasoning
1/4 cup crumbled queso fresco cheese (1 oz)

Steps:

  • Heat oven to 400°F. Line rimmed cookie sheet with foil; spray with cooking spray. Place sweet potatoes on cookie sheet, and poke all over with fork. Bake 1 hour to 1 hour 15 minutes or until completely tender when pierced all the way through with knife. Cool about 10 minutes or until easy to handle.
  • Meanwhile, in small bowl, stir together brown sugar, lime juice, rum and gingerroot until brown sugar dissolves. Add jalapeño chile, onion and mango; toss to coat. Stir in cilantro; cover and refrigerate.
  • In medium microwavable bowl, mix pork, olive oil and jerk seasoning. Microwave uncovered on High 1 to 2 minutes or until steaming hot.
  • Cut open sweet potatoes. Using fork, mash up the flesh of each potato in their jackets. Divide salt among potatoes, and stir in with fork. Divide pork mixture, salsa, then cheese among the 4 potatoes.

3-4 small sweet potatoes (the orange ones), peeled and finely chopped
1 large or 2 medium mangoes, peeled and cut into large pieces
1/2 a stick of butter, melted
1/2 cup of real maple syrup
squeeze of a 1/4 lemon
1/2 tsp sea salt
1/2 tsp fresh ground pepper
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger

Steps:

  • Preheat oven to 400F Arrange potatoes in a glass dish according to the amount, leaving room to add mangoes later. Toss together with the rest of the ingredients. Cover and bake for 15 minutes. Uncover and stir - leave uncovered from here on out. Stir every 15 minutes for the next 1/2 hour. Stir in the mangoes and bake, stirring every 15 minutes for the next 1/2 hour. Let cool at least 15 minutes before serving.

With canned sweet potatoes and peaches, this side dish can be put together in a hurry.

1/2 cup packed brown sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground nutmeg
2 tablespoons cold butter
1/2 cup chopped pecans
4 cans (17 ounces each) cut-up sweet potatoes, drained
2 cans (15-1/4 ounces each) sliced peaches, drained
1 to 1-1/2 cups miniature marshmallows

Steps:

  • In a bowl, combine brown sugar, flour and nutmeg; cut in butter until the mixture resembles coarse crumbs. Stir in pecans. Place sweet potatoes and peaches in a shallow 2-qt. broiler-proof baking dish. Sprinkle with pecan mixture. , Bake, uncovered, at 350° for 35 minutes. Sprinkle with marshmallows. Broil 4-6 in. from the heat until marshmallows are golden brown.

2 large sweet potatoes, chopped 2-inch pieces
1 large sweet onion, chopped 2-inch pieces
1/2 cup orange bell pepper, sweet, chopped 2-inch pieces (may sub with yellow pepper)
1/2 cup red sweet pepper, chopped 2-inch pieces
1 teaspoon fresh ginger, minced
1/8 cup golden raisin, cut in half
1 cup mango, chopped 2-inch pieces
1/2 teaspoon sea salt
1/2 teaspoon pepper, freshly ground
1/4 teaspoon nutmeg, freshly ground
1/4 cup brown sugar
2 tablespoons flour
1 cup mango juice or 1 cup orange juice
2 tablespoons white vinegar
1 tablespoon unsalted butter, diced

Steps:

  • Preheat oven to 350°F.
  • Grease pan lightly with butter.
  • In a large bowl, toss sweet potatoes, onions, orange and red peppers, ginger, raisins, mango, salt, pepper and nutmeg together and place into prepared pan.
  • Next mix the brown sugar and flour together, then the mango juice with the vinegar.
  • Now mix the sugar mixture with the juice mixture and pour over the vegetables.
  • Dot with the diced butter.
  • Cover and bake in a 350°F oven for 1 hour.
