Avocado Halves Stuffed with Tomato and Feta image

Halved avocados are the base for many quick meals like this Mediterranean one.

1 ripe avocado
1 small ripe tomato, cut into 1/4-inch dice
1 tablespoon crumbled feta cheese
1 tablespoon freshly squeezed lemon juice
1 teaspoon fresh chives, chopped
2 teaspoons raw pumpkin seeds
Salt and freshly ground black pepper

Steps:

  • Halve avocado lengthwise, and remove the pit. Top each half with tomato and feta. Drizzle with lemon juice, and garnish with chives and pumpkin seeds. Season with salt and pepper, and serve.

1 onion
1 tablespoon butter
2 large ripe avocados, halved and stones removed
4 ounces chopped brazil nuts or 4 ounces slivered almonds
4 ounces gruyere or 4 ounces swiss cheese, diced
4 tablespoons grated parmesan cheese
2 tablespoons chopped parsley
2 tablespoons sherry wine
salt and pepper

Steps:

  • Preheat oven to 400F.
  • Fry the onion in the butter for about 10 minutes.
  • Meanwhile, scoop the flesh out of the avocado skins with a teaspoon, taking care not to damage the skins.
  • Dice the avocado flesh.
  • Add the fried onion to the avocado along with the nuts, cheeses, parsley and sherry.
  • Season to taste with salt and pepper.
  • Pile the mixture (overstuffed) into the avocado shells.
  • Place them in a shallow ovenproof dish and bake for 10-15 minutes.
  • Keep an eye on them!
  • Serve immediately.

2 small tomatoes, chopped
2/3 cup crumbled feta cheese
1/3 cup chopped red onion
2 tablespoons minced fresh parsley
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon pepper
2 medium ripe avocados, halved, pitted and peeled

Steps:

  • In a small bowl, combine the first nine ingredients. Spoon into avocado halves. Serve immediately.

1/2 teaspoon sesame meal

9 grain bread with sprouts, tomato and red onion
GREEN GUACAMOLE

Steps:

  • Cut avocados in half; remove pits and gently scoop out insides, leaving shell intact. Combine the avocados, scallions, cucumbers, radishes, tamari, oil, garlic, and add to shells. Top with yeast, sprouts and sesame meal.
  • *Sesame Meal: Mix 1/2 cup of sesame seeds and 1/4 teaspoon salt, grind in nut or coffee grinder in 2 tablespoon increments.

60g quinoa
2 tsp tomato purée
1 large garlic clove , finely grated
1 tsp vegetable bouillon powder
400g can chickpeas , drained
90g baby spinach
handful basil leaves , chopped
2 yellow peppers , deseeded and halved lengthways
2 tsp extra virgin olive oil or rapeseed oil , plus a drop for the peppers
125g cherry tomatoes
40g feta , crumbled
1 tbsp pumpkin seeds
½ x 60g pack rocket
1 tsp balsamic vinegar

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the quinoa into a small pan, pour in 400ml water, then stir in the tomato purée, garlic and bouillon powder. Cook, covered, over a low heat for 20 mins before adding the chickpeas, spinach and basil, then cook for a further 5 mins. Leave to stand for 5 mins, so all the liquid is absorbed.
  • Meanwhile, rub the peppers with a little oil and place, cut-side down, on a baking tray. Roast for 10 mins, add the cherry tomatoes, then roast for 10 mins more.
  • Stir the tomatoes, feta and pumpkin seeds into the quinoa, spoon into the pepper halves and serve with the rocket, tossed with the oil and balsamic vinegar.

½ tsp cumin seeds
210g can red kidney beans , drained
1 large lime , zest and juice of 1/2, the other 1/2 cut into wedges
3 tomatoes , diced
1 banana shallot , finely chopped
1 green chilli , deseeded and finely chopped
generous handful coriander , chopped, plus a few extra leaves
85g feta
1 large or 2 small avocados , stoned and peeled

Steps:

  • Put the cumin seeds in a small pan on the hob and lightly toast. Tip into a large bowl and mix with the beans, lime zest and juice, tomatoes, shallot, chilli and coriander. Crumble in the feta and gently toss.
  • Serve on top of the avocado halves, scattering with a few extra coriander leaves and squeezing over a little extra lime from the wedges.

4 large tomatoes (Save the pulp)
4 ounces crumbled feta cheese
1/4 cup fine dry breadcrumb
2 tablespoons chopped green onions
2 tablespoons chopped fresh parsley
2 tablespoons olive oil

Steps:

  • Cut four large tomatoes in half.
  • Scoop out pulp from each tomato half, leaving shells intact; discard seeds, and then coarsely chop pulp.
  • In medium bowl, stir together tomato pulp, 4 ounces crumbled feta cheese, 1/4 cup fine, dry breadcrumbs; 2 tablespoons chopped green onions; 2 tablespoons chopped fresh parsley; and 2 tablespoons olive oil.
  • Spoon mixture evenly into tomato shells, and place in a 13x9-inch baking dish.
  • Bake at 350 degrees for 15 minutes.
  • Garnish with Italian parsley sprigs.
