PERFECT BAKED PLANTAINS RECIPE
Steps:
- Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper.
- Cut the ends off each plantain and score the peels from end to end, making sure not to cut through the plantains. Pull the peels off and discard.
- Slice the plantains on an angle to make longer pieces, 1/4- to 1/3-inch thick.
- Pile the plantain slices on the baking sheet and drizzle with oil. Toss to coat all the plantain strips on both sides. Lay them out in a single layer. Then sprinkle generously with salt.
- Bake the plantains for 10 minutes. Then flip and bake another 10 minutes. Serve warm or at room temperature.

SWEET AND SPICY PLANTAIN CHIPS
Steps:
- Add the coconut oil to a large skillet. Add enough vegetable oil to come about a third of the way up the sides of the skillet and heat over medium-high heat until very hot.
- Line a baking sheet with paper towels. Mix together the brown sugar, paprika, cayenne and salt in a small bowl and set aside.
- Add the plantain slices to the oil in batches and fry until golden brown on the outside, about 5 minutes. Remove from the oil and smash to a chip size with a wooden mallet or rolling pin. Return the plantains to the oil in small batches again so they do not stick together and cook for another 3 minutes. Transfer the chips to the towel-lined baking sheet and top with the seasoning mixture.

BAKED PLANTAINS
Here's one way to add this Latin American specialty to your side dish repertoire. It's similar to how Americans north of the border would prepare a baked potato. Another popular way of serving it is sliced and fried until golden brown.
