Cheesy, spinach balls that taste like spinach dip are the real deal and a delicious way to get your family to eat their leafy greens.

1/2 cup unsalted butter
1/2 cup chopped onions
1 clove garlic, minced
2 10-ounce packages frozen chopped spinach, thawed and drained*
1 1/2 cups breadcrumbs
6 eggs
1 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350F. Line a baking sheet with parchment paper.
  • In a large pan, melt the butter over medium-high heat. Add the onions and cook until soft. Add the garlic and stir. Remove from heat and set aside.
  • In a large bowl, combine the spinach, breadcrumbs, eggs, Parmesan cheese, salt, pepper, and butter mixture. Stir to thoroughly combine.
  • Using a small cookie scoop or spoon, scoop the mixture into your hands and roll into a ball, and place them on the baking sheet.
  • Bake for 15 to 20 minutes, until lightly browned.

This is a traditional recipe from the region of Madrid, Spain's capital. For the cheese, use any mild cheese that melts well, such as Monterey Jack. Found on-line and posted for Zaar World Tour 5.

400 g frozen spinach
1 large potato, boiled, peeled and mashed
1 large egg
2 tablespoons grated cheese
3 tablespoons fine breadcrumbs
2 tablespoons olive oil, divided
1 large red bell pepper
salt and pepper

Steps:

  • ***Note, to roast the bell pepper: place on a hot, dry skillet or griddle. Cook turning often until all skin is blackened and blistered. Remove from heat and place in a plastic bag to steam. When bell pepper is cool, peel and seed.
  • Make sauce: puree the bell pepper with 1 tbs olive oil and salt and pepper to taste. Set aside.
  • Preheat oven to 350 degrees (180 C).
  • Cook the spinach in the microwave as directed. Coarsely chop. Place in a bowl and, using your hands, mix with the mashed potato, the egg, and grated cheese.
  • Grease a baking dish with the remaining olive oil. Make small balls out of the spinach/potato mixture and place on greased dish. Sprinkle evenly with the breadcrumbs.
  • Bake for 20-25 minutes or until the topping is golden and spinach balls are heated through.
  • Serve with the roasted bell pepper sauce.

2 cups Italian-style seasoned bread crumbs
1 cup grated Parmesan cheese
½ cup butter, melted
4 small green onion, finely chopped
4 eggs, lightly beaten
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
  • Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

2 tablespoons green peppers, chopped
1/4 cup celery, chopped
4 tablespoons flour
2 cups canned tomatoes, diced
1/2 teaspoon salt

1 tablespoon lemon juice

Steps:

  • Melt butter in heavy saucepan on top of stove.
  • Add chopped onion, green peppers and celery; simmer until onions are translucent but not browned.
  • Add flour and mix well.
  • Add tomatoes, seasonings and lemon juice.
  • Bring to a boil, stirring constantly.
  • Reduce heat, cover and simmer for 7 minutes.
  • Serve hot on omelets, pork chops or veal cutlets.

This is a very versatile sauce. You can pair it with so many things. Use it as a sauce for pasta, as a dip, or as a topping for toasted garlic bread. I'm sure that you will find a use for it all your own. You can roast your own bell peppers, or you can purchase jars of them in the supermarket already roasted and peeled.It goes great with chicken or, of course, the sea bass!

1 1/2 lbs red bell peppers
1/2 cup almonds, toasted
6 tablespoons olive oil, divided (you will use some now, some later in the same recipe)
2 tablespoons red wine vinegar
1 1/2 tablespoons tomato paste
1/4 teaspoon cayenne pepper, if desired (optional)
4 (6 -7 ounce) sea bass fillets

Steps:

  • Char bell peppers over gas flame or under broiler until blackened on all sides.
  • Let cool in closed paper bag 10 minutes.
  • Peel and seed peppers.
  • Place peppers in processor.
  • Add almonds, 4 tablespoons olive oil, vinegar, tomato paste and cayenne pepper.
  • Process until almonds are finely ground and peppers are almost smooth.
  • Season with salt and pepper.
  • Heat 2 tablespoons oil in skillet over medium-high heat.
  • Add fish to skillet; saute` until just opaque in center, about 5 minutes per side.
  • Transfer fish to plates.
  • Top each with sauce.
  • Serve with remaining sauce.
