Easy Sausage Bake With Sauerkraut and Apples image

Smoked sausage is baked with sauerkraut, diced apples, and onions. This is a sweet and tangy dish that is easy to put together.

2 tablespoons vegetable oil
1 large onion, quartered and sliced
2 pounds smoked sausage , such as andouille, kielbasa, knackwurst, or chicken apple sausage, sliced
2 large apples, peeled, cored, and diced
2 cups apple juice
1 tablespoon vinegar
1/4 cup light brown sugar
2 pounds cold-pack sauerkraut, rinsed and well-drained
1/4 teaspoon ground black pepper
Optional: 1 teaspoon caraway seeds, or to taste

Steps:

  • Gather the ingredients. Heat the oven to 425 F.
  • In a large ovenproof saute pan or Dutch oven over medium heat, heat the vegetable oil. Add the onion and sliced sausages and saute until the onion is golden and the sausage is lightly browned, 5 to 7 minutes.
  • Add the apples and saute for 1 minute longer.
  • Add the apple juice, vinegar, brown sugar, sauerkraut, and pepper.
  • Add the caraway seeds, if using.
  • Cover and bake for 1 hour.
  • Serve with crusty rolls or biscuits and a tossed salad. Enjoy.

Baked Sauerkraut With Apples image

This German recipe is borrowed (with a tweak) from Recipes4us.co.uk. The original recipe calls for 120ml beef stock, but I wanted a vegetarian version. You could revert to the beef stock or replace my suggested vegetable stock with a small amount (say ½ teaspoon) of Marmite or Vegemite dissolved in 120ml of very hot water. Recipe posted for Zaar World Tour 2005.

2 tablespoons butter
1 onion, sliced
700 g sauerkraut, drained (28oz)
3 medium apples, peeled and diced
360 ml white wine
120 ml vegetable stock
1 teaspoon brown sugar
1 teaspoon celery seed

Steps:

  • Heat the butter in a large oven proof lidded casserole dish, add the onions and sauté until soft and transparent.
  • Add the sauerkraut, mix well and cook, uncovered, over a low heat for 5 minutes.
  • Add the apples to the sauerkraut mixture together with the wine and enough stock to cover; mix well then continue to cook over a low heat for 30 minutes; preheat the oven to 170C, 325F, gas mark 3 during this cooking time.
  • Stir in the sugar and celery seeds then cover and transfer to the oven; bake for 30 minutes and serve hot.

This is similar to a dish I have made and reviewed here on Zaar. The difference here is that the apples are served on the side and not cooked with the sausage and sauerkraut. "Sautéed apples and sauerkraut bring a sweet and sour flavor to the otherwise savory pan-fried sausages. Most commonly found in the German-speaking area of the Alps, this delicious entrée is often served with a dab of dark, spicy German mustard on the side for dipping". I have added my notes of change. I used precooked smoked turkey sausage, less sauerkraut. I do suggest using the brown sugar, it does not seem to add much sweetness. I think it combines beautifully with the sauerkraut. 3 tablespoons butter, divided
1 large onion, cut in half and thinly sliced
2 rosemary sprigs
1 tablespoon extra virgin olive oil
2 lbs smoked turkey sausage, cut into 3-inch sections alternately large raw pork sausage links, left whole
4 cups sauerkraut, about 28-ounce jar, well drained, I used a 14 oz can undrained
1/2 cup dry white wine, sub. apple juice
1/2 cup chicken broth
1 bay leaf
4 firm cooking apples, such as Fuji, Pippin, peeled, cored, and sliced
1 tablespoon brown sugar (optional)

Steps:

  • Preheat oven to 325°F.
  • In a large oven-safe skillet, melt 1 tablespoon butter over medium heat. Sauté onion and rosemary sprigs until onion is golden, about 10 minutes. Transfer to a plate and set aside.
  • Add olive oil to the skillet. Add sausages and cook, turning, just until skins are browned, about 5 minutes per side. Remove sausages to a plate.
  • Add sauerkraut and sautéed onions to the skillet. Place sausages on top. Mix wine and chicken broth together. Pour slowly all over the top. Add bay leaf to the middle of the dish. Cover with a lid or foil and transfer pan to oven. Bake for 1 hour.
  • Meanwhile, prepare apples by melting remaining 2 tablespoons butter in a large skillet. Add apples and sauté until just tender, adding brown sugar, if desired. Apples will cook in about 5 to 10 minutes.
  • To serve, spoon baked sausages and sauerkraut onto a serving platter. Top with sautéed apples, or serve on the side. Serve piping hot with spicy mustard on the side.

1 lb fresh sauerkraut or 1 lb canned sauerkraut
1 lb smoked sausage (for a low-fat version) or 1 lb smoked turkey sausage (for a low-fat version)
3 tart cooking apples, thinly sliced
1/2 cup packed brown sugar
3/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup apple juice or 3/4 cup cider

Steps:

  • Rinse sauerkraut and squeeze dry.
  • Cut sausage into 2-inch pieces.
  • Put 1/2 the sauerkraut in the slow cooker.
  • Add the sausage pieces on top.
  • Continue to layer remaining ingredients in slow cooker in the order listed.
  • Top with remaining sauerkraut.
  • Do not stir the layers.
  • Cover.
  • Cook on high 4 hours, or low 6-7 hours.
  • Stir before serving.

2 medium potatoes
8 ounces sauerkraut, drained
1 tablespoon sliced green onion
1/2 lb pork sausage (I use hot Italian, casings removed)
2 tablespoons milk
1 tablespoon butter or 1 tablespoon margarine
1/4 teaspoon salt
1 dash pepper
parmesan cheese, freshly grated (for the top)

Steps:

  • Peel and cook potatoes.
  • Meanwhile, combine sauerkraut and onion; place in a 2 to 3 cup casserole.
  • Brown sausage meat; drain; spoon over sauerkraut.
  • Drain potatoes; mash with milk, butter, salt and pepper.
  • Spread potatoes over sausage; sprinkle with Parmesan cheese.
  • Bake in a 400 degree oven for 25 to 30 minutes or till lightly browned.
  • This recipe can be doubled, tripled or made for a large gathering.
  • Just remember to increase the size of the casserole dish as well as the ingredients.

24 ounces sauerkraut
1 Granny Smith apples, peeled and diced
1 small sweet onion, chopped small
1/2 teaspoon caraway seed

Steps:

  • Add oil to medium skillet. Over medium heat sauté apples, onions and caraway seeds until onion turn opaque. About 10-12 minutes.
  • Dice sausage into 1/2 inch pieces and add to skillet. Stir well. Heat for 8 -10 minutes or until sausage is warm.
  • Drain sauerkraut well. Add sauerkraut and stir well. Cover and turn down heat to low.
  • Cook on low for 10 minutes. Stir to prevent burning. Serve hot with a little shot of mustard on the side. Enjoy.
