Baked Salmon in a Foil Packet image

Baking salmon in a foil packet it a very healthy way of preparing fish, because you don't need to use any fat for the baking process. I season the salmon with an exotic mix of marjoram, lemon, and star anise, but you could use the same method with different herbs and spices.

olive oil
2 medium onions, halved and sliced
1 teaspoon dried marjoram
salt and freshly ground black pepper to taste
2 lemons, sliced
5 pods whole star anise pods
⅓ cup water
aluminum foil
1 (1 1/2-pound) salmon fillet

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a skillet over medium heat and cook onions until soft and browned, about 10 minutes. Season with marjoram and a little salt. Remove from heat.
  • Place lemon slices in a single layer in a clean skillet over high heat and cook until lightly browned on both sides, about 3 minutes. Add star anise and water and bring to a boil. Remove from heat.
  • Cover a baking pan large enough to hold the salmon with sheets of aluminum foil, leaving an overhang on all sides. Lay onions in a single layer on the bottom; place salmon fillet on top, skin-side down. Rub fillet with salt and pepper. Cover with lemon slices and star anise. Fold up the edges of the foil over the salmon to create a packet, making sure to seal the edges well.
  • Bake in the preheated oven until salmon flakes easily with a fork, 35 to 40 minutes. Remove from oven, open foil carefully, and serve.

½ cup olive oil
2 ½ tablespoons fresh lemon juice, or more to taste
5 cloves cloves garlic, minced or pressed through a garlic press
1 tablespoon brown sugar
1 teaspoon dried oregano
1 teaspoon dried thyme
salt and freshly ground black pepper to taste
aluminum foil
1 teaspoon olive oil
1 (3 pound) salmon fillet
¼ cup chopped fresh parsley
1 lemon, sliced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine 1/2 cup olive oil, lemon juice, garlic, brown sugar, oregano, thyme, salt, and pepper in a bowl.
  • Place a large piece of aluminum foil on a baking sheet and brush with olive oil. Place salmon in the middle of the foil, skin-side down. Drizzle with olive oil mixture. Fold up the edges of the foil over the salmon to create a packet, making sure to seal the edges.
  • Bake in the preheated oven until fish flakes easily with a fork, 20 to 25 minutes. If your salmon fillet is very thick, it can take longer. Garnish with fresh parsley and lemon slices.

2 salmon fillets (4 ounces each)
2-1/2 cups sliced fresh mushrooms
1 medium tomato, chopped
1 garlic clove, minced
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup shredded Parmesan cheese

Steps:

  • Place each fillet on a double thickness of heavy-duty foil (about 12 in. square). Top with mushrooms, tomato, garlic, basil, salt and pepper. Fold foil around salmon and seal tightly. Place on a baking sheet., Bake at 400° for 15-20 minutes or until fish flakes easily with a fork. Open foil carefully; sprinkle with cheese. Bake, uncovered, 5 minutes longer or until cheese is melted.

8 fresh thyme sprigs, fresh
8 parsley sprigs, fresh
4 garlic cloves, minced
4 tablespoons dry white wine
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 400F
  • Place 4 large pieces of foil on a working surface, shiny side down. Spray the inside with vegetable cooking spray.
  • Place a fish filet on each piece of foil.
  • Evenly divide thyme, parsley, garlic, salt, pepper, and wine among the fish.
  • Dot each filet with one teaspoon of butter and then securely fold and seal the edges.
  • Place the packets on a baking sheet and bake for 10-12 minutes.
  • Place packets on plates and open carefully.
