  • Toss 1 large peeled and cubed rutabaga with 3 tablespoons olive oil, and salt and pepper on a baking sheet. Roast at 425 degrees F until golden and soft, 40 minutes. Toss with 1/2 teaspoon apple cider vinegar and chopped parsley.

BAKED RUTABAGA FRIES



Baked Rutabaga Fries image

Humble rutabagas get cut, baked, and served up as deliciously browned French fries in this easy recipe.

1 medium or large rutabaga
1 tablespoon vegetable oil (or olive oil)
Optional: 1/4 to 1/2 teaspoon freshly ground black pepper
Optional: 1/4 teaspoon garlic powder
1/4 to 1/2 teaspoon salt

Steps:

  • Preheat an oven to 450 F. Trim off and discard the stem and root ends of the rutabaga. Peel the rutabaga.
  • Use a sharp knife or a kitchen mandoline , if you have one, and cut the rutabaga into evenly sized sticks or fries. If using a knife, first cut the rutabaga in half, then cut each half into even 1/4-inch thick slices. Stack the slices and cut them the other direction into 1/4-inch thick sticks. Repeat with the remaining half of the rutabaga. If using a mandoline, set it up for wide julienne and push the rutabaga through-note that rutabagas have a fairly thick or dense texture, and it can take some force to get them through the julienne setting on mandolines.
  • Put the rutabaga sticks in a large bowl and drizzle with the oil. Toss the sticks so they are thoroughly and evenly coated with the oil. Sprinkle with the pepper and/or garlic powder, if using them, and toss to distribute them evenly over the rutabaga.
  • Spread the rutabaga sticks in a single layer on a lightly oiled baking sheet or a baking sheet lined with parchment paper. Sprinkle the sticks evenly with the salt.
  • Bake the rutabaga sticks for 20 minutes. Remove the pan from the oven and turn over the rutabaga sticks. Return to the oven and bake until they are tender and well browned, about 40 minutes.
  • If the rutabaga sticks towards the edges are more browned earlier, you can take them off the pan and return the rest to brown all the way. The appeal of these baked fries is the contrast between the crispy edges and the sweet tender centers, so don't skimp on the cooking time.
  • Serve the fries hot.

This is a new recipe I discovered this past Thanksgiving. We wanted to try a a new vegetable. I have to admit rutabaga, or yellow turnip as it is sometimes called, was something I wasn't totally wild about trying, but it turned out great. I love it now! Definitely a repeat!

1 rutabaga, peeled and cut into 1/2-inch cubes
2 tablespoons olive oil, or more to taste
2 teaspoons kosher salt
1 teaspoon white sugar
¼ teaspoon dried basil, or to taste
¼ teaspoon dried oregano, or to taste

Steps:

  • Place a rack in the center of the oven and preheat to 400 degrees F (200 degrees C).
  • Place rutabaga in a large resealable plastic bag and drizzle olive oil over it. Seal the bag tightly and shake until rutabaga is nicely covered with oil. Open the bag and add salt, sugar, basil, and oregano. Seal the bag again and shake gently until spices are evenly distributed. Transfer rutabaga to a nonstick baking sheet.
  • Roast in the preheated oven until tender and golden, stirring halfway through, about 40 minutes.

4 small rutabagas, peeled and cut into 1-in. cubes
3 tablespoons water
8 cooked bacon strips, chopped
1 cup heavy whipping cream
1/4 cup butter, cubed
2 teaspoons garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese, divided
3 green onions, sliced, divided

Steps:

  • Preheat oven to 350°. In a microwave-safe bowl, combine rutabagas and water. Microwave, covered, on high 16-20 minutes or until tender, stirring halfway. Mash rutabagas; add bacon, cream, butter, garlic powder, salt and pepper. Stir in 1 cup cheese and 1/4 cup green onions., Spoon mixture into 8 greased 6-ounce ramekins or custard cups. Sprinkle with remaining cheese. Place ramekins on a baking sheet. Bake until rutabagas are bubbly and cheese is melted, 18-22 minutes. Sprinkle with remaining green onions.

2 medium (blank)s rutabagas, peeled and chopped into 1 1/2-inch cubes
2 each eggs, separated, divided
2 tablespoons butter
1 green onion, chopped, or more to taste
2 pinches dried dill weed, or more to taste
1 dash paprika
1 dash garlic powder
1 dash salt
1 dash ground black pepper
4 each croutons, or more to taste
2 tablespoons chopped almonds, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of salted water to a boil over high heat. Add rutabagas; boil until tender, about 15 minutes.
  • Meanwhile, blend or whisk egg whites in a bowl until thick and frothy.
  • Drain water from rutabagas and mash with a potato masher. Stir in butter while still hot so it melts and is distributed evenly, followed by egg yolks, green onion, dill, paprika, garlic powder, salt, and black pepper. Pour into a 9-inch ceramic or Pyrex® casserole dish that is approximately 1 1/2-inch thick.
  • Combine croutons and almonds in the bowl of a food processor until crumbly. Sprinkle over the top of the casserole.
  • Bake in the preheated oven until browned and bubbly, 25 to 30 minutes.

In this recipe, naturally sweet rutabaga is diced and roasted to perfection with a little oil and simple seasonings.

1 or 2 rutabagas (about 1 1/2 to 2 pounds total weight)
3 tablespoons olive oil
Salt (to taste)
Black pepper (freshly ground, to taste)
Optional: 1/4 to 1/2 teaspoon freshly ground nutmeg
Optional: 1 tablespoon fresh chopped parsley

Steps:

  • Gather the ingredients. Preheat the oven to 425 F.
  • Line a large, rimmed baking sheet with foil.
  • Peel the rutabaga(s) and cut them into 1-inch pieces.
  • In a large bowl or food storage bag, toss the diced rutabaga with the olive oil, salt, pepper, and nutmeg, if using.

  • Place into large bowl.
  • Coat them with the oil.
  • Add seasonings and combine.
  • Place on large baking sheet, lined with non stick foil.
