One Pot Lemon Rosemary Dijon Chicken and Butter Toasted Rice Pilaf image

Everyone's favorite dinner made easy and delicious and all in one-pot!

Number Of Ingredients 18

1 1/2 pounds boneless chicken breasts or thighs
1 teaspoon smoked paprika
juice and zest of 1 lemon
kosher salt and black pepper
2 tablespoons extra virgin olive oil
2 shallots, chopped
4 carrots, chopped
1 1/2 cups mushrooms, chopped
3 tablespoons salted butter
1 1/2 cups wild rice blend ((mix wild and brown rice))
1/2 cup dry orzo pasta
4 cloves garlic, minced or grated
1 whole sprig + 2 tablespoons chopped fresh rosemary
1 tablespoon fresh thyme leaves, plus more for serving
1 small honeycrisp apple, chopped ((optional) )
2 cups apple cider (not vinegar)
1 cup dry white wine such, as Pinot Grigio or Sauvignon Blanc
2 tablespoons Dijon mustard

Steps:

  • 1. Preheat the oven to 425 degrees F. Season the chicken with paprika, lemon zest, and a pinch each of salt and pepper. 2. Heat the olive oil in a large skillet/braiser set over medium heat. When the oil shimmers, add the chicken and cook on both sides until golden, about 5 minutes per side. Remove the chicken from the pan. 3. To the skillet, add the shallots, carrots, and mushrooms. Cook 5 minutes, until just caramelized. Add the butter, wild rice, orzo, garlic, rosemary, thyme, and apple, if using. Cook 5 minutes, until lightly toasted and golden. Add the apple cider, wine, dijon, lemon juice, and 1/2 cup of water. Season with salt and pepper. Bring to a boil over high heat. 4. Slide the chicken back into the pan. Add the rosemary sprig. Bake, covered, for 30-40 minutes, until the liquid is absorbed and the rice is cooked. During the last 10-15 minutes of cooking remove the lid and allow the chicken to crisp, if needed, add in 1/4 cup additional water or chicken broth to keep the rice from getting dry.5. To serve, fluff the rice with a fork and serve the chicken, rice, and veggies together. Enjoy!

⅓ cup salted butter
⅓ cup chopped fresh rosemary
2 cloves garlic
2 tablespoons lemon juice

4 skinless, boneless chicken breasts (such as Perdue®)
1 lemon, zested

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Blend butter, rosemary, garlic, 2 tablespoons plus 2 teaspoons lemon juice, thyme, and olive oil together in an electric blender. Pour a small amount into a skillet placed over high heat, covering the bottom.
  • Place chicken breasts in the skillet and pour remaining butter mixture on top. Cook until golden brown, about 5 minutes, flipping as needed. Transfer to a baking dish and pour mixture from the skillet over the chicken. Lightly dust with lemon zest.
  • Bake in the preheated oven until no longer pink in the centers and juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C). Remove and let stand for 5 minutes before serving.

Creamy Dijon Chicken Thighs with Bacon and Spinach image

Pan seared and crispy Chicken Thighs in a smooth and creamy garlic Dijon sauce with Bacon pieces and Spinach! SO EASY and deliciously low carb! Have dinner on the table in less than 20 minutes!

2 pounds (1 kg) boneless, skinless chicken thighs
1 teaspoon seasoning salt ((or regular salt))
1/4 teaspoon pepper
5 ounces (150 g) bacon
2 tablespoons butter
1 onion
4 cloves garlic, (minced (or 1 tablespoon minced garlic))
1 tablespoon fresh chopped parsley
1 teaspoon each of dried thyme and dried rosemary
1/3 cup dry white wine ((Pinot Grigio/Gris, Sauv Blanc, Riesling) -- substitute with low-sodium chicken stock or broth)
1 1/2 cups half and half ((thickened cream or heavy cream))
2 tablespoons Dijon mustard
1/2 teaspoon chicken bouillon powder ((substitute with salt or stock powder))
1/2 teaspoon freshly ground black pepper, (to taste)
1/4 cup Parmesan cheese
2 cups baby spinach leaves

Steps:

  • Season chicken with seasoning salt and pepper.
  • Heat 1 tablespoon of oil a large pan or skillet over medium-high heat and cook chicken until crispy and cooked through (about 8 minutes each side, depending on thickness). Transfer to a plate; set aside.
  • To the same pan or skillet, add the bacon and fry until crispy. Transfer to plate, set aside. Drain some of the bacon fat, leaving about 2 tablespoons.
  • Heat butter in the pan and sauté onion until transparent. Sauté garlic, parsley, thyme and rosemary for about 1 minute until fragrant.
  • Add in the white wine to deglaze the pan while scraping up any bits from the bottom of the pan; simmer for 3-4 minutes or until wine has reduced by half.
  • Pour in cream and Dijon, mix through and bring to a simmer. Reduce heat and cook gently for a further minute to allow the sauce to thicken.
  • Add the Parmesan and allow to melt through the sauce. Season with bullion powder and pepper, to taste.
  • Add the spinach and allow to wilt. Return chicken to the skillet. Top with the crispy bacon. Sprinkle with extra herbs if desired. Serve immediately.

1/4 cup Dijon mustard
1 tablespoon olive or vegetable oil

1 1/3 cups uncooked orzo pasta (8 oz)
Chopped fresh parsley, if desired

Steps:

  • In small bowl, mix remaining ingredients except pasta and parsley. Spread mustard mixture over chicken to coat thoroughly.

3/4 cup Progresso™ Parmesan bread crumbs
1/4 cup grated Parmesan cheese
6 boneless skinless chicken breast halves (1 3/4 pounds)

Steps:

  • Heat oven to 375°F. Mix butter and mustard in shallow dish until well mixed. Mix bread crumbs and cheese in large plastic bag.

This was one of the first things I learned how to cook on my own, back in junior high school (not including eggs and grilled cheese sandwiches). My mom got the recipe from a dieting group she was with at the time. Edited: I just made this again, so I have edited the recipe to reflect what I actually did. there were many raves at the dining table over this one. :) Serve this with rice or something to soak up the yummy sauce and you won't be disappointed.

1 tablespoon vegetable oil
4 boneless skinless chicken breasts
1 cup orange juice (fresh squeezed if you can get it)
2 tablespoons Dijon mustard
1 teaspoon dried rosemary, crushed

Steps:

  • Heat oil in a nonstick skillet over medium high heat.
  • Add chicken breasts and brown on both sides, about 3-5 minutes per side.
  • Mix orange juice, mustard and rosemary.
  • Pour over chicken.

  • Remove chicken to serving dish and turn heat to high. Boil sauce to reduce 1 or 2 minutes until it is thick enough to coat the back of a spoon, and pour over chicken.

  • Positions racks in the center and upper thirds of your oven, and preheat the oven to 425 degrees F.
  • Place the onion, apple slices, and Brussels sprouts in the center of a large, rimmed baking sheet. Top with 1 tablespoon oil, honey, mustard, ½ teaspoon salt, and ¼ teaspoon pepper. Toss to coat, then spread in an even layer.
  • Nestle the chicken onto the sheet pan towards its center, skin side up, moving the apple and vegetables aside as needed so that the chicken sits directly on the sheet pan. Pat the chicken dry, and season with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Drizzle the remaining 1 tablespoon oil over the top. Lay a sprig of rosemary on top of each piece of chicken. (If you have more thighs than sprigs, cut the sprigs into pieces as needed and divvy them up.)
  • Bake the chicken and vegetables on the center rack for 15 minutes. Remove the pan from the oven, and use a spatula to stir the vegetables around a little. Return the pan to the oven, and continue baking 5 to 10 minutes more, until the chicken is cooked through. It will register 165 degrees F on an instant read thermometer inserted at the thickest part. If some pieces of the chicken finish sooner than others, remove them to a plate and continue cooking the remaining pieces until they are done. The apples will become very soft and break down and the onions and Brussels sprouts will darken and become super crisp (this is the honey caramelizing).
