BAKED FRESH RICOTTA WITH STEWED CHERRIES



Baked Fresh Ricotta with Stewed cherries image

This is a great warm alternative to yogurt and fruit. Baking the ricotta removes moisture, turning this into a sort of cheesecake for breakfast dish without all the fat. You can even stir some fresh blueberries and raspberries into the stewed cherries when you take it from the heat for a fresh burst of juicy flavor. This is great on waffles or with a bagel.

Number Of Ingredients 6

- 1 1/2 cups fresh whole milk ricotta cheese
- 1 large egg
- 3 tbsp. honey, divided
- 1/2 tsp. kosher salt
- zest and juice of 1 lemon, divided
- 6 oz. fresh dark cherries, pitted and quartered

Steps:

  • Preheat oven to 350. Put ricotta in fine mesh strainer set over bowl and let stand 10 minutes or remove excess liquid. Transfer cheese to a bowl; add egg, 1 Tbsp. honey, and half the lemon zest and stir til well mixed. Transfer to an 8 oz. shallow baking dish and put on baking sheet. Bake in center of oven til puffed and beginning to brown, about 35 minutes. Remove from oven and let stand 10 minutes before serving
  • Meanwhile, put cherries, lemon juice and remaining zest, and 2 Tbsp. honey in small pan. Bring mixture to a simmer over medium heat. Cook til thickened and cherries are broken down, about 15 minutes. Serve the ricotta spread over toast or English muffins and top with stewed cherries. Serves 4

6 ounce(s) cherries pitted an quartered

Steps:

  • meanwhile place cherries, lemon juice an rest of zest, an two tablspoons honey in a saucepan. bring to simmer over med heat an cook until thickened an cherries are broken down about 12 min. serve over toast top with cooked cherries

1 (18.25 ounce) package yellow cake mix
24 ounces ricotta cheese
¾ cup white sugar
3 eggs
¼ teaspoon vanilla extract
⅛ cup confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch pan.
  • Make yellow cake mix according to package directions. Pour batter into the greased 9x13 inch pan.
  • Mix together the ricotta cheese, sugar, eggs and vanilla extract and spoon over cake batter.
  • Bake at 350 degrees F (175 degrees C) for about 45 minutes. Sprinkle cake with confectioners' sugar when cool.

  • Place a rack in middle of oven and preheat to 325°. Generously butter pan and set aside. Pulse almonds, flour, sugar, and salt in a food processor until almonds are finely ground and mixture is combined. Add egg yolks and pulse to incorporate. Add 3 Tbsp. butter to mixture and pulse until dough is the consistency of wet sand.
  • Press crust into the bottom and ¾" up the sides of prepared pan using a straight-sided measuring cup. Chill until firm, about 10 minutes.
  • Bake crust until evenly golden brown and set, 12–14 minutes. (If it slumps during cooking, you can always press it back into place with the measuring cup while it’s still warm.) Transfer pan to a wire rack and let crust cool.
