JACKET POTATOES WITH HOME-BAKED BEANS



Jacket potatoes with home-baked beans image

Cold nights require comfort food, and there's no better than jacket potatoes - give yours a health boost with home-baked beans

4 baking potatoes
1 tbsp sunflower oil
1 carrot , diced
1 celery stalk, diced
400g can haricot beans , drained
2 tomatoes , chopped
1 tsp paprika - choose sweet or hot depending on taste
1 tsp Worcestershire sauce
2 tbsp chopped chives , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Scrub the potatoes and dry well, then prick in several places with a fork. Bake directly on the oven shelf for 1-1½ hrs, until they feel soft when squeezed.
  • After 30 mins, heat the oil in a pan and gently cook the carrot and celery for 10 mins until softened. Add the beans, tomatoes and paprika and cook gently for a further 5 mins until the tomatoes are softened and pulpy. Stir in 100ml water and the Worcestershire sauce, cook for a further 5 mins then cover and keep warm.
  • Split open the potatoes and spoon in the beans. Scatter with chives and serve.

4 red potatoes
16 ounces tuna fish
16 ounces black beans
1 lemon, juice of
1/2 teaspoon olive oil
1/2 teaspoon chopped parsley
1/2 teaspoon parmesan cheese

Steps:

  • Heat oven to 425 degrees.
  • Scrub potatoes and prick all over with a fork for even cooking.
  • cook 1 to 1/2 hours until easily skewered.
  • Mix drained tuna with beans.
  • Add chopped parsley and squeeze of lemon juice.
  • Cut open top of potato and spoon out half of potato into bowl with tuna and bean mixture.
  • Spoon back into potato and top with olive oil and sprinkle with parmesan cheese.

Steps:

  • Poke holes with a knife in potatoes and put into microwave for 5 mins roughly, until they are soft
  • While potatoes are cooking, prepare tuna sweetcorn mayonnaise. Don't skimp on the mayo or the sweetcorn.
  • when potatoes are done, put the baked beans in a mug and warm in the microwave. While theyre heating up cut the potatoes into quarters and spread the butter and seasoning.

4 small sweet potatoes (about 200g each)
185g can tuna in spring water, drained
½ red onion , finely sliced
1 small red chilli , deseeded and chopped
juice 1 lime
6 tbsp Greek yogurt
handful coriander leaves

Steps:

  • Scrub the sweet potatoes and prick all over with a fork. Place on a microwaveable plate and cook on High for 18-20 mins, or until tender. Split in half and place each one, cut-side up, on a serving plate.
  • Flake the drained tuna with a fork and divide between the sweet potatoes. Top with the red onion and chilli, then squeeze over the lime juice. Top with a dollop of yogurt and scatter over the coriander, to serve.

2 sweet potatoes
½ x 400g can cannellini beans , drained
2 tbsp fresh pesto
2 tbsp cream cheese
100g can tuna in water, drained
½ red onion , finely chopped
1 lemon , zested
25g pine nuts , toasted
small handful basil leaves

Steps:

  • Heat oven to 180C/160C fan/gas 4. Pierce the potatoes a few times, then bake for 40 mins, or until really soft. Alternatively, microwave on High for 7 mins.
  • Mix the beans, pesto, cream cheese, tuna, red onion, lemon zest and some seasoning. Split the baked potatoes and stuff with the tuna filling. Top with the pine nuts and basil leaves.
