The Colombian recipe I took this from was for plantains. It is meant to be a side dish at dinner. I make it more with bananas just because I have so many of them in my yard.

2 tablespoons butter
4 bananas (VERY RIPE or plantains)
1 pinch ground cinnamon
1 cup coconut milk
1/3 cup coconut, sweet shredded

Steps:

  • Preheat the oven to 350°, cut the ends of the bananas or plantains and peel.
  • Place them in a baking dish and brush with the butter. Sprinkle with the cinnamon and add the coconut milk, then sprinkle with coconut.
  • Bake for 25 to 30 minutes.
  • Serve warm as a side dish.

The sweetness of the ripe plantains is the perfect foil for smoked bacon and the fresh flavor of chimichurri. For this dish you need to use very ripe plantains. These beauties can be served hot from the oven, warm, or at room temperature. Serve it with fresh chimichurri or cilantro pesto.

4 bananas, ripe (or plantains)
2 tablespoons butter, melted
4 slices mozzarella cheese (or queso blanco)
4 slices bacon

Steps:

  • Preheat the oven to 400°, cut the ends of the plantains and peel.
  • Place them in a baking dish and brush with the butter, bake for 30 to 40 minutes.
  • Remove from the oven and slice the plantains lengthwise but not all the way through, stuff them with cheese slices and wrap with bacon.
  • Return to the oven and bake 10 more minutes until the cheese melts and the bacon is cooked.
  • Chimichurri or cilantro pesto to serve.

1 very ripe plantain (black skin)
1 teaspoon margarine or 1 teaspoon olive oil
1/8 teaspoon allspice
shredded coconut or cheese
3 -6 whole cloves
1 teaspoon raw sugar

Steps:

  • Preheat oven to 350 degrees.
  • Make a cut lengthwise on the plantain peel; open it and cut the plantain into two halves, again lengthwise.
  • Grease a baking sheet or cover a sheet with foil; place the plantain over is peel on the tray.
  • Insert the cloves, distributing them evenly along the two halves.
  • Sprinkle some of the raw sugar and allspice over.
  • Put small amounts of butter or oil on the plantain halves and sprinkle the coconut or cheese over top.
  • Bake about 45 minutes or until the plantain become golden.
  • Remove from oven and discard cloves.

Steps:

  • Preheat oven to 450°F.
  • Coat a nonstick cookie sheet with cooking spray.
  • Cut the ends off of the plantains and peel.
  • Cut each plantain on the diagonal into 1/2 inch slices.
  • Arrange in single layer and coat tops with cooking spray.
  • Bake, turning occasionally, for 10-15 minutes, until plantains are golden brown and very tender.

  • Heat oven to 350°F. Cut tip off each end of plantains. Cut lengthwise slit through peel on one side of each plantain. Rub plantains with oil. Arrange plantains, cut sides up, in ungreased rectangular baking dish, 13x9x2 inches.
  • Bake uncovered about 35 minutes or until tender when pierced with fork. Make 1 or 2 lengthwise cuts through peel; remove peel. Serve plantains with butter and salt.

  • Pour sauce over plaintains.
  • Bake at 325 until tender, about 30 minutes or so.
