PERFECT ROASTED MUSHROOMS
You won't be able to stop eating these roasted mushrooms! Meaty, tender and juicy, they'll make a mushroom lover out of anyone.

Steps:
- Preheat the oven to 450 degrees Fahrenheit.
- Clean the mushrooms and pat them dry. Slice the mushrooms in half. In a large bowl, toss them with the olive oil, garlic powder, and kosher salt. Line a baking sheet with parchment paper and spread the mushrooms in a single layer on top.
- Bake 10 to 12 minutes until the mushrooms are tender. Serve topped with fresh herbs.

- Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place mushrooms in a single layer onto the prepared baking sheet. Add olive oil, lemon juice, lemon zest, garlic, thyme and Parmesan; season with salt and pepper, to taste. Gently toss to combine. Place into oven and bake for 12-15 minutes, or until browned and tender, tossing occasionally. Serve immediately.

- Preheat oven to 450 degrees. Lightly oil shallow baking pan large enough to hold mushrooms in single layer. Add mushrooms and toss with 2 to 3 tablespoons oil. Add garlic; season with salt; roast for 20 minutes stirring on occasion; mushrooms should be browned. Season with pepper.
POLENTA SQUARES WITH MUSHROOM RAGU

- Bring the water, 1 tablespoon butter, and 1/2 teaspoon salt to a boil in a heavy medium saucepan. Gradually whisk in the polenta. Reduce the heat to medium-low. Stir constantly until the polenta thickens, about 5 minutes. Pour the polenta into a greased 9 by 9-inch baking pan, spreading so that it is 1/3-inch thick. Cover and let stand at room temperature until set, about 15 minutes.
- Meanwhile, heat the oil in a heavy large frying pan over medium-high heat. Add the mushrooms and onion. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of pepper and saute until the juices evaporate, about 8 minutes. Add the garlic and saute until the mushrooms are golden brown, about 2 minutes longer. Decrease the heat to medium-low. Add the Marsala. Cover and simmer until the Marsala has reduced by about half, about 5 minutes. Stir the flour and remaining 2 tablespoons of butter in a small bowl to form a paste, then stir the paste into the mushroom mixture. Cover and simmer until the sauce thickens slightly, about 2 minutes. Remove from the heat. Stir the parsley into the ragu. Season the ragu, to taste, with more salt and pepper.
- Cut the polenta into 36 bite-size squares. Arrange the polenta squares on a platter. Spoon the warm ragu atop the polenta and serve immediately.
ALL-IN-ONE-BAKED MUSHROOMS

- Heat oven to 220C/fan 200C/gas 7. Drizzle a little olive oil over the base of a ceramic baking dish, then pop in the mushrooms.
- Drizzle with the remaining oil and seasoning. Bake for 15 mins until soft, then remove from the oven.
- Tuck the ham slices around the mushrooms to create little pockets. Crack the eggs into the pockets, then return to the oven for 10 mins until the egg white is set and the yolk is still a little runny. Serve scooped straight from the dish. Great with baked beans and chips.

BAKED MUSHROOM SQUARES
DH went wild from the aroma as he waited for this to come out of the oven. I wish I could say that I dreamed it up but the credit goes to Myra Sable and Colleen Mathieu from Toronto and is from the "Sable and Rosenfeld Cookbook: Our Favorite Recipes". I served it with a dollop of greek yogurt as a side to roast beef but they suggest serving it as a side to cabbage rolls or as a main dish garnished with sour cream and chives. I used a mixture of mushrooms, but I'd imagine ever-available and dependable button mushrooms would be just wonderful too. Also, I used 1/2 and 1/2 rather than milk and cream - use what you have in your fridge. Outstanding!

Steps:
- In a small skillet over medium heat, melt butter.
- Add onions and saute for 10 minutes, stirring frequently.
- In a large bowl, combine milk, cream and breadcrumbs. Let stand for 10 minutes.
- Preheat oven to 350F (180C).
- Combine sauteed onion, breadcrumb mixture, mushrooms, salt, pepper and eggs. Mix well.
- Pour mixture into a buttered 8-inch square baking dish.
- Bake in oven for 1 hour, until tester inserted in center comes out clean.
- Cut into squares and serve hot.
- Nice as is or with a dollop of sour cream or yogurt.
