This is a great change from the usual chicken.

4 skinless, boneless chicken breasts
¼ cup butter
salt and pepper to taste
4 slices mozzarella cheese
1 egg, beaten
2 cups all-purpose flour for coating
1 cup seasoned dry bread crumbs
¼ cup butter
2 teaspoons minced garlic
1 cup dry white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
  • Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
  • To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

2 boneless skinless chicken breast halves (5 ounces each)
1/8 teaspoon pepper
2 slices part-skim mozzarella cheese (3/4 ounce each)
1-1/2 cups stuffing mix
1/2 cup chicken broth, warmed
2/3 cup condensed cream of chicken soup, undiluted
2 tablespoons white wine or additional chicken broth
1 garlic clove, minced

Steps:

  • Sprinkle chicken with pepper; top with cheese. Place in a 1-1/2-qt. baking dish coated with cooking spray. In a small bowl, combine stuffing mix and broth; let stand for 3 minutes. Spoon around chicken. , Combine the soup, wine or additional broth and garlic; spread over chicken. Cover and bake at 350° for 25 minutes. Uncover; bake 5-10 minutes longer or until a thermometer reads 170°. ,

1 lb boneless skinless chicken breast
1/2 cup Italian seasoned breadcrumbs
2 eggs, beaten
2 tablespoons olive oil
4 tablespoons butter, melted
1 lb mushroom, sliced
2 cups chicken broth
1/2 cup white wine
2 tablespoons flour
1/2 cup shredded mozzarella cheese

Steps:

  • Dip chicken breasts in eggs and dredge in bread crumbs on both sides.
  • Saute breasts in olive oil, set aside.
  • Saute mushrooms in melted butter and add broth and wine to mushrooms and bring to a boil.
  • Put chicken breasts in baking dish.
  • Pour wine sauce and mushrooms over chicken.
  • Marinate overnight in refrigerator or if baked immediately you may want to thicken sauce with flour.
  • Bake chicken at 350 degress for 35-40 minutes.
  • Sprinkle cheese over chicken 5 minutes before chicken is done, until melted.
  • Serve with rice or noodles.

3 KRAFT Slim Cut Mozzarella Cheese Slices, cut in half
1 can (10-3/4 oz.) reduced-sodium condensed cream of chicken soup

Steps:

  • Heat oven to 400°F.
  • Prepare stuffing mix as directed on package.
  • Place chicken in 13x9-inch baking dish; top with cheese, soup and stuffing.
  • Bake 30 min. or until chicken is done (165°F).

  • Arrange oven shelf to the middle of the oven. Preheat broiler (or grill in Australia) on medium heat.
  • Heat oil in a pan or skillet over medium heat. Cook chicken on both sides until browned and cooked through (about 8 minutes each side). Transfer to a plate; set aside.
  • Cook the onion in the same pan until transparent (about 3-4 minutes) scraping any browned bits form the bottom of the pan, then add in the garlic and cook until fragrant (about 1 minute).   • BRINE: Add the water, salt, sugar, and soy sauce to a medium bowl and stir until dissolved. Add the chicken breasts and allow them to marinate for as little as 15 minutes, or ideally 4-12 hours. Position a rack in the center of the oven and preheat the oven to 425ºF.
  • SAUCE: In a saucepan over medium-high heat, combine the chicken broth, minced garlic, and allow the chicken broth to come to a boil, then lower the heat so it just simmers. Let simmer for 5 minutes. Add in 1 tablespoon of butter, remove the pan from heat and swirl so the butter starts to melt or use a whisk to melt the butter melt. Place back on the heat for a few seconds, remove and continue to swirl until butter melts. Repeat with the remaining butter. When the butter has completely melted and thickened the sauce, remove from the stove. Stir in the pepper, thyme, and red pepper flakes.
  • ASSEMBLE: Remove the chicken breasts from the brine and pat dry using a paper towel. Combine the remaining onion powder, thyme, and garlic powder in a small bowl and sprinkle over the chicken breasts evenly. Place the chicken breasts in an oven-safe baking dish. Carefully pour the prepared sauce around the chicken breasts and drop the 6 remaining whole garlic cloves into the broth.
  • BAKE: Bake uncovered for 19-25 minutes or until the chicken is almost cooked through (it should register 165F on a thermometer.) Add the mozzarella cheese to the chicken breasts and broil just long enough for the cheese to melt. Top with chopped parsley (or basil) and serve warm with crusty bread, pasta, rice, or steamed veggies!
