4 tart green apples
½ cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
  • Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

¾ cup golden syrup
¾ cup water
¾ cup butter
½ cup brown sugar
2 apples, peeled, or more to taste
2 ¼ cups all-purpose flour
1 ½ teaspoons baking soda
1 ½ teaspoons ground ginger
1 ½ teaspoons ground allspice

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Butter 1 large loaf pan or 2 smaller ones.
  • Warm up syrup, water, butter, and sugar in a pan over low heat until butter and sugar are just melted. Remove from heat and mix well.
  • Grate apples directly into the pan. Sift flour, baking soda, ginger, and allspice into the batter. Stir until just combined; do not overmix. Pour batter into the prepared pan(s).
  • Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, about 35 minutes.

1 (7 ounce) box gingerbread (spiced Lebkuchen covered with bittersweet chocolate)
1/4 cup crystallized ginger, finely chopped
1/3 cup walnuts, chopped
1 tablespoon honey
2 tablespoons butter
8 baking apples
1/2 cup honey
1/2 cup brown sugar
1 cup water
2 tablespoons butter
1 cup whipped cream
1 tablespoon powdered sugar
crystallized ginger, slivers

Steps:

  • Preheat oven to 375°F.
  • Crumble Lebkuchen into small pieces and place into a bowl.
  • Add crystallized ginger and nuts.
  • Melt honey and butter in microwave together and add to bowl.
  • Stir to combine and set aside.
  • Core the apples without cutting through the base.
  • With a knife or melonballer, remove some of the inside of the apple to make room for the filling.
  • Place apples in a 12 x 7.5 x 2 inch baking dish.
  • Spoon the prepared filling into the opening in the apples, packing it down lightly.
  • To prepare syrup, combine honey, brown sugar, water and butter in small saucepan and bring to a boil; keep warm to brush on apples.
  • Brush apples liberally with honey syrup and pour remainder around apples.
  • Bake uncovered at 375° F for 45 minutes or until the apples are tender, basting occasionally.
  • Let cool for 15 minutes.
  • Whip cream with powdered sugar.
  • Serve apples with a dollop of whipping cream and garnish with slivers of crystallized ginger.

1/2 cup butter, softened
1/2 cup sugar
1/3 cup packed brown sugar
1 large egg, room temperature
1/2 cup molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup brewed tea

Steps:

  • Pour butter into a 9-in. square baking pan; sprinkle with brown sugar. Arrange apples over sugar; set aside. , For gingerbread, in a large bowl, cream butter and sugars until light and fluffy. Beat in egg, then molasses. Combine dry ingredients; add to sugar mixture alternately with tea, beating well after each addition. , Pour over apples. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a serving plate. Serve warm.
