CRUNCHY ROASTED PEAS
Crunchy Roasted Peas are a healthy and delicious snack that can be made in the oven or the air fryer. These green peas are cooked to crispy perfection, and are vegan and gluten-free.

Steps:
- Defrost peas, then dry them with a clean kitchen towel or paper towel. Place them in a bowl and mix together with olive oil, garlic powder and salt.
- Pour peas into the air fryer basket and cook on 180C / 350F for approximately 15 minutes. You'll need to shake the basket every few minutes to ensure even cooking and check in on your peas regularly. They're ready when they are nice and crispy.
- Preheat the oven to 180C / 350F.
- Defrost peas, then dry them with a clean kitchen towel or paper towel. Place them in a bowl and mix together with olive oil, garlic powder and salt.
- Pour peas onto a baking tray lined with foil, spread out into a single layer and bake for 20 minutes, or until the peas crispy and golden. You'll want to give the baking tray a good shake every few minutes to ensure even cooking - the peas on the outside of the tray will cook faster.

Steps:
- Combine peas, butter, sugar, and garlic in a medium-sized skillet.
- Cook at medium heat until butter is melted and peas are heated through, about 5-7 minutes. Stir occasionally.
- Remove from heat, drain off any liquid, add salt and pepper. Serve.

FROZEN GREEN PEAS
Steps:
- Place the gallon of water and kosher salt into an 8-quart pot and place over high heat. Bring to a boil. Once boiling, add the peas and cook for 1 minute. Immediately drain in a colander and then transfer to a container with the 2 quarts of water and the ice. Shock for 1 minute. Pour the peas back through the colander and transfer to a half sheet pan lined with 3 layers of paper towels. Pat dry with additional paper towels. Place the tray in the refrigerator for 1 hour.
- After 1 hour, remove the paper towels and place the sheet pan on the bottom of the freezer. Leave the peas on the sheet pan for 1 hour. Once frozen, transfer them into a 1 gallon zip-top bag. Lay the bag flat on a counter and using a straw, suck out any remaining air in the bag. Label and return to the freezer.

Steps:
- DO NOT thaw peas. Break apart with hands and place in bowl.
- Mix frozen peas with cream of mushroom soup and 4 ounces of the grated swiss cheese.
- Pour into 8x8-inch casserole dish. Top with remaining 4 ounces grated swiss cheese. Mix together bread crumbs and melted margarine. Sprinkle over top of casserole.
- Bake, uncovered, in 400 degree oven for 35 to 40 minutes. If top starts getting brown too fast, loosely cover with aluminum foil.
