This is a wonderful way to prepare fresh salmon fillets in the oven. Be sure to make extra, your family will be begging for more!

¼ cup butter, melted
3 tablespoons Dijon mustard
1 ½ tablespoons honey
¼ cup dry bread crumbs
¼ cup finely chopped pecans
4 teaspoons chopped fresh parsley
4 (4 ounce) fillets salmon
salt and pepper to taste
1 lemon, for garnish

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
  • Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
  • Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.

3 tablespoons reduced-fat mayonnaise
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1 teaspoon prepared horseradish
2 tablespoons grated Parmesan cheese, divided
4 tilapia fillets (5 ounces each)
1/4 cup dry bread crumbs
2 teaspoons butter, melted

Steps:

  • Preheat oven to 425°. Mix first 4 ingredients and 1 tablespoon cheese. Place tilapia on a baking sheet coated with cooking spray; spread evenly with mayonnaise mixture. , Toss bread crumbs with melted butter and remaining cheese; sprinkle over fillets. Bake until fish just begins to flake easily with a fork, 12-15 minutes.

4 6- to 8-ounce pieces white fish, such as cod, Tilapia or soleSalt and finely ground pepperEVOO - Extra Virgin Olive Oil, for drizzling plus about 2 tablespoonsZest of 1 lemon1/4 cup Dijon or grainy Dijon mustardAbout 1/3 cup toasted almonds or hazelnuts, processed into crumbs1/2 cup whole wheat or plain Panko breadcrumbs or gluten-free breadcrumbs2 tablespoons Parmigiano-Reggiano cheese (optional)2 tablespoons chopped flat-leaf parsley1 tablespoon chopped fresh thyme

Steps:

  • Preheat oven to 400°F with a rack set in the upper third of the oven. Arrange fish on a parchment-lined baking sheet and season with salt and pepper. Drizzle with EVOO then halve the zested lemon and douse each filet with about 1 teaspoon juice from one of the lemon halves and brush each filet with a tablespoon of Dijon mustard. Combine nut crumbs with lemon zest, breadcrumbs, cheese and herbs, salt and pepper. Coat the fish with breadcrumbs, gently pressing them into place. Bake fish to firm, opaque and flaky. Serve with remaining lemon half cut into small wedges.

1 1/2 pounds firm white fish fillets, such as cod, pollock, flounder or sole
Juice of 1 lemon
1 tbsp French's® Dijon Mustard
1 tbsp olive oil
1 tsp McCormick® Dill Weed
1/2 tsp McCormick® Black Pepper, Ground
1/4 tsp McCormick® Garlic Powder
1 carrot peeled and shredded
3 tbsps grated Parmesan cheese

Steps:

  • Preheat oven to 350°F. Rinse fish and pat dry. Set aside.
  • Mix lemon juice, mustard, oil, dill, pepper and garlic powder in small bowl. Brush dressing on both sides of fish fillets. Arrange fish, overlapping thinnest portions, in 13x9-inch baking dish. Drizzle remaining dressing over fish. Arrange shredded carrot over fish. Sprinkle with cheese.
  • Bake about 12 minutes or until fish flakes easily with fork.

2 tablespoons (1/4 stick) unsalted butter, melted
1 tablespoon Dijon mustard
1 1/2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
3 tablespoons fresh white breadcrumbs
Chopped fresh parsley
Lemon wedges

Steps:

  • Preheat oven to 450°F. Butter 13 x 9 x 2-inch glass baking dish. Arrange fish fillets in prepared dish. Season with salt and pepper. Blend butter, Dijon mustard, lemon juice and Worcestershire sauce in small bowl. Spread half of butter mixture over each fillet, covering completely. Sprinkle half of breadcrumbs over each.
  • Bake fish until just cooked through, about 7 minutes. Sprinkle parsley over. Garnish with lemon wedges.
