Oven Risotto with Crispy Roasted Mushrooms image

Yes, you can make risotto without all the stirring-just pop it in the oven. And while that oven is on, use it to crisp up a bunch of mushrooms.

Number Of Ingredients 16

1 lb. mixed wild, shiitake, and/or crimini mushrooms, broken into pieces or sliced 1/4" thick (about 4 cups)
3 garlic cloves, peeled, thinly sliced
6 thyme sprigs
1/4 tsp. crushed red pepper flakes
1/4 cup plus 2 Tbsp. extra-virgin olive oil, plus more for drizzling
1 3/4 tsp. (or more) kosher salt, divided
1 medium onion, finely chopped
1 cup arborio rice
1/2 tsp. freshly ground black pepper
1/2 cup dry vermouth or white wine
3 cups homemade chicken stock or low-sodium chicken broth, divided
2 oz. finely grated Parmesan (about 1 cup)
2 Tbsp. cold unsalted butter, cut into pieces
1/2 tsp. finely grated lemon zest
1/3 cup coarsely chopped parsley leaves
Lemon wedges (for serving)

Steps:

  • Place racks in bottom third and middle of oven; preheat to 350°F. Toss mushrooms, garlic, thyme, red pepper flakes, 1/4 cup oil, and 1/2 tsp. salt on a rimmed baking sheet. Roast on bottom rack, tossing halfway through, until deeply golden brown and crisped, 25-30 minutes.
  • Meanwhile, heat 2 Tbsp. oil in a large ovenproof Dutch oven or heavy pot over medium-high. Add onion and cook, stirring often, until softened and slightly translucent, 3-5 minutes. Stir in rice; season with pepper and 1/2 tsp. salt. Cook, stirring occasionally, until some grains are translucent, about 2 minutes. Add vermouth, bring to a simmer, and cook, stirring occasionally, until pan is almost dry, about 2 minutes. Add 2 1/2 cups stock. Bring to a simmer, then cover and bake in oven until liquid is mostly absorbed but rice is still slightly firm in the center, 16-18 minutes.
  • Return pot to stove and heat over medium. Add remaining 1/2 cup stock and cook, stirring constantly, until rice is tender but still has some bite and sauce is creamy, about 2 minutes. Remove from heat and stir in Parmesan, butter, and lemon zest; season to taste with salt, if needed. Add a little bit of warm water, if needed, until risotto is thick but still pourable.
  • Transfer risotto to a platter. Top with crispy mushrooms and parsley. Drizzle with oil. Serve with lemon wedges alongside.

A crispy, tasty alternative to deep fried mushroom. Easier than frying as well. Make a double batch, freeze on a baking sheet and place in a plastic bag for unexpected guests.

1 egg, beaten
1/2 teaspoon onion salt
8 drops hot pepper sauce (or more)
1/4 cup flour
3/4 cup crushed melba rounds (about 18) or 3/4 cup bagel chips
8 ounces fresh whole mushrooms (with stems)
olive oil flavored cooking spray or cooking spray

Steps:

  • Heat oven to 450 degrees F.
  • Line a jelly roll pan with foil.
  • In small bowl, combine egg, onion and hot pepper sauce; blend well.
  • Place flour in plastic bag.
  • Place crushed cracker crumbs in shallow pan.
  • Place mushrooms in bag with flour; shake to coat.
  • For each mushroom, shake off excess flour. Dip each into egg mix; coating well.
  • Dip or roll in crumbs.
  • Place on foil-lined pan.
  • Spray lightly with oil.
  • Bake for 8-12 minutes or unti hot and crisp.
  • To re-heat: Allow mushroom to thaw; bake as directed.
  • Note: Can substitute broccoli florets for mushrooms.

Easy to make and the ultimate crispy mushroom deliciousness, these are a big hit at any gathering.

1/2 cup plain unsweetened plant-based yogurt (I used coconut)
3 tablespoons flat-leaf parsley leaves
1 tablespoon fresh lemon juice
1 clove garlic, crushed
Flaky sea salt
2 tablespoons Worcestershire sauce
4 large portobello mushrooms, cut into 1/2-inch strips
1 cup all-purpose flour (you can also use gluten-free flour)
1 cup cornstarch
1/4 cup Cajun seasoning or similar seasoning
1/2 cup plain unsweetened plant-based yogurt (I used coconut)
1/2 cup cold fizzy water (sparkling water)
Vegetable oil, for frying

Steps:

  • For the green dip: Blitz the yogurt, parsley, lemon juice, garlic and a pinch of salt together in a mini food processor or blender until the mixture is smooth and turns a vibrant green.
  • For the mushrooms: Drizzle the Worcestershire sauce over the sliced mushrooms in a large bowl, toss to evenly coat and set aside.
  • Mix the all-purpose flour, cornstarch and Cajun seasoning together in a medium bowl. Mix together the yogurt and fizzy water in another bowl until smooth.
  • To triple coat the mushrooms, working in batches, first dip in the flour mixture, then coat in the yogurt mixture and then back to the flour mix once again, so they are evenly coated. Repeat until they are all coated.
  • Heat approximately 1 inch of vegetable oil in an extra-large nonstick saute pan over medium-high heat. Working in batches, add the mushrooms and fry until golden brown and crispy, about 3 minutes on each side. Remove from the pan using tongs and lay on a paper towel-lined sheet pan to drain any excess oil.
  • Arrange the mushrooms on a platter. Pour the dip into a bowl. Serve.

Steps:

  • Preheat oven to 400 degrees.
  • Place mushroom caps on a baking sheet, gill-side up. Drizzle with 2 tablespoons olive oil, turn mushrooms, and drizzle with remaining 2 tablespoons olive oil; season with salt and pepper and toss to coat.
