Gently pulling the skin back from the chicken (while leaving it attached) allows the jerk marinate to permeate the chicken.

2 1/2 tablespoon(s) apple cider vinegar
1 1/2 tablespoon(s) worchestershire sauce
3/4 tablespoon(s) molasses
3/4 tablespoon(s) grated ginger
3/4 teaspoon(s) hot sauce
2 - cloves garlic, minced
1 medium onion, finely chopped
2 small green olives, sliced (optional)
3/4 teaspoon(s) ground allspice
3/4 teaspoon(s) ground cinammon
3/4 teaspoon(s) salt
3/4 teaspoon(s) freshly ground black pepper
3 - 3 1/2 pound(s) chicken pieces (preferably dark meat)

Steps:

  • Mix together the vinegar through pepper in a plastic baggie - seal and shake to mix ingredients.
  • Gently pull the skin away from the chicken pieces - be careful not to detach the skin from the chicken. Add chicken to marinade, refrigerate and allow to sit for 4 hours or overnight.
  • When ready to prepare chicken, bake at 400 degrees for 40 minutes or until the skin of the chicken is crispy and the juices from the chicken run clear.

1 teaspoon salt, or to taste
1 teaspoon ground allspice
1 teaspoon packed brown sugar
1 teaspoon onion powder
½ teaspoon dried minced garlic
½ teaspoon ground nutmeg
½ teaspoon black pepper
½ teaspoon ground ginger
¼ teaspoon cayenne pepper
¼ teaspoon ground cinnamon
¼ teaspoon dried thyme leaves
1 (2 to 3 pound) whole chicken, cut into pieces
¼ cup vegetable oil

Steps:

  • Make the jerk rub by combining the salt, allspice, brown sugar, onion powder, garlic, nutmeg, pepper, ginger, cayenne pepper, cinnamon, and thyme. Toss the chicken pieces with the spice mixture, then cover, and marinate in the refrigerator 2 to 4 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Pour the vegetable oil into a 9x13 inch baking dish.
  • Place the chicken pieces skin-side up into the baking dish. Bake in the preheated oven for 1 hour 20 minutes, until no longer pink near the bone. Turn the oven on to broil, and cook until the skin crisps, 2 to 5 minutes.

1/4 cup pomegranate molasses (see note)
6 scallions, finely chopped
4 Scotch-bonnet peppers, seeded and chopped (see note)
3 cloves garlic, finely chopped
3 tablespoons vegetable oil
3 tablespoons ground allspice
1 tablespoon dark rum
1 tablespoon ground cinnamon
2 teaspoons kosher salt
1/2 teaspoon freshly ground nutmeg
1/4 teaspoon freshly ground black pepper
2 3 1/2-pound chickens, each cut into 8 serving pieces

Steps:

  • Combine all the ingredients, except for the chicken, in a food processor and process until the mixture forms a fairly smooth paste. Place the chicken pieces in a large, nonreactive bowl and coat thoroughly with the paste. (Avoid touching the paste with your hands.) Marinate, covered and refrigerated, for at least 8 hours and up to 24. Broil, grill or bake the chicken as desired. (The sauce may also be used to marinate 5 to 6 pounds of steak or pork.)

1 (3 pound) whole chicken, cut into pieces
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground cinnamon
2 tablespoons molasses
2 tablespoons cider vinegar
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large baking dish.
  • Season the chicken with salt, pepper, and cinnamon. Arrange in the prepared baking dish.
  • In a bowl, mix the molasses, vinegar, and mustard.
  • Bake chicken 20 minutes in the preheated oven. Coat chicken with the molasses mixture. Continue baking 20 minutes, or until chicken juices run clear.
