GARLIC-BUTTER ORZO CHICKEN CASSEROLE
Find 20 minutes and this luscious, Caprese salad-inspired, chicken casserole can be tonight's dinner. The trick to the quick prep is coating the raw ingredients with rich and aromatic seasonings before baking. The chicken breasts get rubbed with olive oil, Italian seasoning and a dash of red pepper flakes and placed atop a garlicky, buttery bed of orzo and tomatoes. Then the casserole gets sealed up tight with foil, so the flavors can concentrate and meld in the oven. It won't take long before you're enjoying the savory aroma-and flavor-of this dish!

Steps:
- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread uncooked orzo evenly in baking dish.
- Add broth, melted butter, garlic, 1/2 teaspoon salt and the black pepper to orzo in baking dish; stir. Spread tomatoes evenly over mixture.
- In large bowl, mix oil, Italian seasoning, 1/4 teaspoon salt and the red pepper flakes. Add chicken; turn to coat. Place chicken evenly over tomatoes; cover with foil. Bake 55 to 65 minutes or until juice of chicken is clear when center of thickest part is cut, and chicken and mixture are both heated to at least 165°F in center.
- Remove foil, and sprinkle chicken with mozzarella cheese; bake uncovered 5 to 7 minutes or until cheese is melted. Top with basil.

GARLIC CHICKEN WITH ORZO NOODLES
This is a simple recipe with a spicy kick for garlic lovers. It is my combination of a much loved linguine and clam sauce dish and a recent introduction to orzo pasta. I have several variations for this recipe. Add more red pepper for extra spice. Substitute the chicken for clams or shrimp. Substitute the spinach leaves for diced tomatoes. I've also added spices such as basil, rosemary and oregano bringing a distinct Italian flavor to the dish.

Steps:
- Bring a large pot of lightly salted water to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, and drain.
- Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, and cook 2 to 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

BAKED CHICKEN AND GARLIC ORZO
A delicious one-dish meal that is a good variation from chicken with rice. We really like the orzo pasta.

Steps:
- Preheat oven to 350.
- Spray large nonstick skillet with cooking spray.
- Heat over high heat until hot.
- Add chicken breast halves.
- Brown meat side down, 1 to 2 minutes or until lightly browned; set aside.
- Reduce heat to medium-high; add wine.
- Stir with a flat spatula, scraping brown bits from bottom of pan.
- Cook 30 seconds or until slightly reduced; set aside.
- Spray 9-inch square baking pan with nonstick cooking spray.
- Add pasta, onions, garlic, parsley, oregano, chicken broth, water and wine mixture; stir.
- Place chicken breasts on top.
- Sprinkle lightly with paprika and lemon pepper.
- Bake, uncovered, 1 hour and 10 minutes.
- Remove chicken.
- Add salt and olive oil to baking pan; mix well.
- Place chicken on top.
- Serve.

- Preheat oven to 375. In large skillet, melt 2 tablespoons of butter. Season chicken breast and add to butter in batches adding another 2 tablespoons in between. Brown chicken for 5 minutes, turn and brown the second side for 1-2 minutes. Remove to a plate and keep warm.
