BAKED MEXICAN CHEESE STICKS



Baked Mexican Cheese Sticks image

1/2 cup all-purpose flour
1 egg
1 1/2 cups panko breadcrumbs
2 tablespoons chopped fresh cilantro
1 teaspoon salt
Pinch freshly ground black pepper
1 (12-count) package mozzarella string cheese
Nonstick cooking spray

Steps:

  • Place the flour in a shallow bowl or plate. In a separate bowl, whisk together the egg and 1 tablespoon water. In another shallow bowl or plate, combine the panko, cilantro, salt and pepper.
  • Begin by coating the mozzarella sticks in batches of 2, first dredging in the flour mixture and shaking off excess. Then dip in the egg mixture, letting any excess drip off. Finish by dredging in the panko crumb mixture and shaking any off excess. Transfer the breaded cheese sticks to a sheet pan greased with nonstick cooking spray. Cover and freeze until frozen, about 4 hours and up to 2 days (this will lessen the oozing of the cheese).
  • Preheat the oven to 400 degrees F.
  • Lightly spray the cheese sticks with nonstick cooking spray. Bake until the cheese is soft and the sticks are lightly browned, about 12 minutes.

2 cups grated aged cheddar cheese (approx.)
2 teaspoons dry mustard
1/4 teaspoon cayenne pepper
1/2 cup butter or 1/2 cup margarine
1 cup flour
1/4 cup water

Steps:

  • Combine all ingredients. Mixture will be soft.
  • Cut into strips.
  • Bake at 300 degrees F until lightly browned (10 minutes?).

I got this recipe from the Best of Bridge series many years ago. Since creme brulee is a favorite with my DH, I do make this one often. This recipe needs chilling time, so give yourself plenty of time to play

3/4 cup water
1 cup sugar
4 eggs
3 egg yolks
1 teaspoon vanilla
1/2 teaspoon sugar
3 cups cream

Steps:

  • Lightly butter 8 ramakins. Set aside.
  • Place the water and sugar in a saucepan; stir over low heat until sugar dissolves. Increase heat and bring to a boil, approx 10 - 15 minutes or until mixture has turned golden brown.
  • Custard: With a mixer, beat together the whole egs, egg yolks, vanilla and sugar until lemon coloured.
  • Preheat oven to 325.
  • Scald cream in a saucepan and allow to cool slightly. Pour a bit of cream in to the egg mixture, stirring constantly. Pour the rest of the cream into the egg mixture and stir until well blended.
  • Pour the custard evenly into each dishes. Set the dishes in a shallow baking pan containing 1" water. Bake custards at 325 for 35 - 40 minutes or until custard is set. Remove the custards from the oven and cool. Chill for 5 hours.
  • To serve: Place dishes in hot water and east custards away from sides of dish. Invert onto serving plates.

  • Slice each piece of cheese in half cross-wise so that you have 24 shorter pieces. Arrange the cheese in a single layer on a parchment-lined baking sheet or plate, then freeze until completely solid, about 1 hour.
  • When ready to bake, place the flour in a shallow bowl (a pie dish works well). In a separate shallow bowl, whisk the egg, egg white, and 1 tablespoon water until well combined. In a third shallow bowl, combine the whole wheat bread crumbs, panko, Italian seasoning, and garlic powder. Arrange the plates in line (flour, eggs, breadcrumbs). Line a large, rimmed baking sheet with parchment paper.
  • Working no more than 2 to 3 cheese sticks at a time, dip the frozen cheese sticks in the flour, shaking off excess, then into the egg, then place in the bowl with the crumbs and lightly pat to coat (if you tackle too many cheese sticks at a time, the egg will freeze right onto the cheese and no longer be sticky enough for the crumbs to adhere). Place the breaded cheese sticks on the prepared baking sheet. Repeat the process with the remaining cheese sticks. Place cheese back into the freezer for at least 2 hours or overnight (this is a MUST or the cheese will melt before the crumbs turn golden).
  • When ready to bake, preheat oven to 400 degrees F and place an oven rack in the lower third of the oven. Line a large baking sheet with aluminum foil and coat with the olive oil spray. Arrange the frozen cheese sticks on the sheet, leaving about 3/4 inch between each. Lightly coat the tops of the sticks with the oil.
