Baked Chimichanga Breakfast Burritos with Avocado-Tomato-Watercress Salsa image

1 tablespoon canola oil
1 small onion, finely diced
1 clove garlic, finely chopped
2 cans black beans, drained and rinsed
1 tablespoon pureed chipotle chile in adobo
Kosher salt
1/2 cup roughly chopped fresh cilantro
3 ripe Hass avocados, peeled, pitted and chopped
12 grape tomatoes, cored and halved
2 green onions, green and pale green parts only, thinly sliced
1 serrano chile, finely diced
Kosher salt and freshly ground black pepper
Juice of 3 limes
Splash canola oil
1/4 cup chopped fresh cilantro
1 bunch watercress, thick stems removed, chopped
2 tablespoons canola oil
1/2 pound loose Mexican chorizo or breakfast sausage
1 small red onion, halved and thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
12 large eggs, whisked until very smooth and fluffy
Kosher salt and freshly ground black pepper
1/2 cup chopped fresh cilantro
Canola oil, for brushing
Eight 10-inch flour tortillas
2 cups grated Monterey Jack
1 cup grated cotija cheese, for garnish
Cilantro leaves, for garnish
Lime wedges, for garnish

Steps:

  • For the black beans: Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, about 3 minutes. Add the garlic and cook 30 seconds. Add the beans, 1/2 cup water, and the chipotle and cook, stirring occasionally, until the water is reduced and beans are heated through and soft, about 20 minutes. Use a potato masher to mash the beans into a chunky paste. Taste, and season with salt as necessary. Stir in the cilantro, and then spread on a baking sheet to cool.
  • For the salsa: Put the avocados, tomatoes, green onions, serrano and some salt and pepper in a large bowl and fold together. Fold in the lime juice, oil, cilantro and watercress. Set aside.
  • For the chorizo filling: Heat the oil in a large skillet until it begins to shimmer. Add the chorizo and cook until golden brown and cooked through, about 8 minutes, stirring a few times. With a slotted spoon, remove the sausage to a paper-towel-lined plate.
  • Add the onions and peppers to the pan drippings and cook, stirring occasionally, until soft, about 8 minutes. If the chorizo is in large chunks, chop it coarsely, then stir it into the onions and peppers. Add the eggs, and scramble until soft curds form. Season with salt and pepper, then stir in the cilantro and remove from the heat.
  • To assemble: Preheat the oven to 425 degrees F. Brush a nonstick baking sheet with some oil. Spread a thin layer of the beans across the center of a tortilla, leaving a 1-inch border. Top with some of the chorizo filling and a handful of Monterey Jack. Fold in the sides of the tortilla, and then roll from the bottom into a tight cylinder. Place seam-side down on the baking sheet and repeat with remaining tortillas, beans, filling and cheese. Brush the tops and sides of the burritos with canola oil, and bake until golden brown and crispy, about 7 minutes. Transfer to a platter, and top with Avocado-Tomato-Watercress Salsa, cotija and cilantro leaves. Garnish the platter with lime wedges.

1 tablespoon canola oil
3 tablespoons chopped onion
3 tablespoons chopped green pepper
1 can (15 ounces) black beans, rinsed and drained
4 flour tortillas (8 inches), warmed
1 cup shredded Mexican cheese blend
1 medium tomato, chopped
1 cup shredded lettuce
Optional toppings: Salsa, sour cream, minced fresh cilantro and cubed avocado

Steps:

  • In a nonstick skillet, heat oil over medium heat; saute onion and green pepper until tender. Stir in beans; heat through. , Spoon about 1/2 cup of vegetable mixture off center on each tortilla. Sprinkle with the cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with optional toppings as desired.

Makes 8 burritos
2 chipotles in adobo sauce, finely minced
1 cup light or regular sour cream
2 (15-ounce) cans low-sodium black beans, drained and rinsed
2 cups corn kernels (fresh or frozen)
2 medium avocados, cut in 1/2-inch dice
8 (8-inch) flour tortillas
2 cups salsa
1 cup shredded light cheddar or Monterey Jack

Steps:

  • Preheat the oven to 350°F. Coat an 9x13 baking dish with cooking spray. Combine chipotle and sour cream in a bowl. Purée half the beans in a food processor; add to the sour cream mixture. Stir in the whole beans and corn until well combined. Gently stir in the avocado. Warm the tortillas according to package directions. Working one at a time, spoon one-eigth of the bean mixture down the center of each. Roll the tortillas closed and place seam-side down in the prepared baking dish. Spoon the salsa over the tortillas and top with the shredded cheese. Cover and bake 20 minutes until cheese is melted and burritos are warmed through.

Easy Avocado Burrito image

This delicious vegetarian or vegan burrito has been my favorite easy meal since I was in high school and too lazy to spend more than a few minutes in the kitchen.:) I still find this quick meal to be one of my favorites even though I cook a lot now! Although I love traditional "bean" burritos, this recipe tastes better to me without the beans. My mother always made these and I'm not sure where she got the recipe or if she made it up herself. Everyone I've ever made them for has loved them. Enjoy! NOTE: I usually make these in small tortillas with little filling that make nice smaller sized burritos that make an instant yummy snack or taste great with a side of refried beans and spanish rice. They also taste great if you make these into bigger burritos but beware that the serving sizes and nutritional facts won't match up.

6 -10 wheat flour tortillas
3 -4 tomatoes
3 avocados
1/4 cup salsa (your favorite)
1/2 cup monterey jack cheese (can omit all together if you can't find vegan monterey jack cheese and it still tastes great) or 1/2 cup vegan monterey jack cheese (can omit all together if you can't find vegan monterey jack cheese and it still tastes great)

Steps:

  • Chop the tomatoes and avocados. Make sure there is about an equal amount of both avocado and tomato (keep this in mind when choosing the size of your tomatoes and avocados-If I have smaller tomatoes then I use more if my avocados are large and visa versa).
  • Put the tomatoes and avocados in a bowl and mix in your favorite salsa. I like to use about 1/4 cup of salsa, but depends on your preference how much you add (sometimes I've used 1/3 cup). Set aside.
  • Heat tortilla on a pan. Flip and then sprinkle on some of the pepper jack cheese (or cheese of your choice).
  • Once the cheese has melted take off the pan and onto a plate. Spread a thick or thin amount of the avocado, tomato and salsa mixture.
  • Roll like a burrito and enjoy!

  • Cook sweet potatoes: Pierce sweet potatoes with fork a few times. Place in microwave and microwave on high for 4-6 minutes or until cooked though. This may take up to 10 minutes depending on how thick your sweet potatoes are. Alternatively you can roast them in the oven at 375 degrees for 45 minutes or until fork tender. Once sweet potatoes are cooked, remove the skins and place potatoes in a medium bowl. Mash with a fork; set aside.
  • In a separate large bowl, add black beans, cumin, chili powder and red pepper flakes, if desired. Stir to combine then set aside.
  • In a separate medium bowl, beat eggs (or egg whites) together. Spray a skillet with nonstick cooking spray and place over medium-low heat. Add in eggs and cook. Fold every few minutes to get fluffy eggs. Once cooked, remove from heat.
  • To assemble burritos, make sure you have slightly warm tortillas; it makes them easier to roll. You can warm them up for 10-20 seconds in the microwave before assembling. Lay out warm tortillas and evenly distribute and spread mashed sweet potato on each as demonstrated in the video. Evenly distribute scrambled eggs, diced avocado, black beans, and shredded cheese on each tortilla. Next drizzle about tablespoon of enchilada sauce in each. Season with salt and pepper, if desired. Tuck ends in, then roll up burritos.
