BROWN BEAN CHOWDER
This bean chowder is similar to chili. It's one of the most popular dishes at Tulsa Public Schools. Those of us growing up in the 60's and 70's remember it fondly as a favorite treat. A real stick-to-your-ribs comfort food. Tradition dictates that it is served with cinnamon rolls. This was given to me by my grandmother who was a dietician/cook for over 40 years.

Steps:
- Place the beans and water in a large pot. Bring to a boil, and cook until the beans are almost tender, about 1 1/2 hours. Season with 1 1/2 teaspoons of chili powder, and 1 1/2 teaspoons of salt.
- While the beans are cooking, crumble the ground beef into a large skillet over medium-high heat. Add onion and garlic; cook and stir until onion is tender and meat is browned. Drain off excess grease, and stir in the tomato puree, 1 tablespoon chili powder, 1 tablespoon salt and bread crumbs. Stir into the pot with the beans, adding more water if needed to achieve your desired thickness. Taste and adjust seasonings if you like before serving.

BAKED NEW ENGLAND STYLE CLAM CHOWDER!
This is a wonderful and delicious recipe, that is also quite figure friendly. It has a few different twists, but the end result is worthy of company!

Steps:
- The above listed clams are 3-6 5 oz cans! (would not let me list it that way!).
- Saute, onions, celery and garlic in the oil and butter until soft. Add dry seasonings and flour. Stir well.
- Remove from heat and slowly whisk in the milk and Vermouth. Return to heat and cook whisking until thickened.
- Add 3/4 cup of the cheese as well as the parmesan. Stir until melted. Turn off heat and add the potatoes. (I like to use the Cubed Southern Style Hash Browns). The mixture will be very thick at this point.
- Place cottage cheese and clam liquid in food processor or blender and buzz until no curds remain. Add this and the clams to the potato mixture and stir well.
- Pour into a greased 9x13 casserole and sprinkle remaining 1/4 cup cheese over the top. Bake at 350°F 30-40 minutes until the potatoes are soft.
- Garnish with chopped parsley.

- In a large skillet, cook bacon until crisp; pour off drippings and remove bacon to paper towel to drain. , In the same skillet, cook the beef, celery and onion over medium heat until the meat is no longer pink and the vegetables are tender; drain. Add the soup, milk, potatoes, carrots, salt, pepper and reserved bacon. Bring to a boil. Reduce heat; cover and simmer until heated through. Garnish with parsley.

BEEF CHOWDER
From my church cookbook "Heavenly Concoctions", FUMC Alvarado. This is a lot like Taco Soup, only not as spicy and not as thick. If you can not find Fiesta Soup you can use a small can of beef consome soup and a can of chili with beans.

- Brown together ground meat, onion and bell pepper. Drain off excess liquid.
- Then add remaining ingredients and stir well.
- Simmer one hour - stirring occasionally to prevent sticking or scorching.
