SLOW-COOKER BARBECUE BEANS AND SAUSAGE



Slow-Cooker Barbecue Beans and Sausage image

3 cups low-sodium chicken broth
1/3 cup tomato paste
1/3 cup packed light brown sugar
3 tablespoons molasses
3 tablespoons honey mustard
2 tablespoons barbecue seasoning blend
4 cloves garlic, chopped
1 pound dry navy beans, rinsed and picked over
2 cloves
1 small onion, halved
1 1/2 pounds chicken-apple sausages, each halved lengthwise
2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
Pickled peppers, sliced scallions and/or sour cream, for garnish (optional)

Steps:

  • Whisk the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans. Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.
  • Discard the onion halves. Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, about 15 minutes. (The longer the beans sit, the more flavorful they will be.) Garnish with pickled peppers, scallions and/or sour cream, if desired.

1/2 cup water
2 tablespoons tomato paste
1 tablespoon molasses
1/8 teaspoon salt
Freshly ground pepper to taste
1 tablespoon canola oil
1 medium onion, chopped
4 cups chopped collard greens (about 10 ounces), tough stems removed
9 ounces cooked chicken sausage links (about 3 links), halved lengthwise and sliced
2 15-ounce cans great northern or navy beans, rinsed (see Note)

Steps:

  • Whisk barbecue sauce, water, tomato paste, molasses, salt and pepper in a medium bowl. Heat oil in a large saucepan over medium heat. Add onion and collard greens and cook, stirring occasionally, until the collards are wilted, 3 to 5 minutes. Add sausage and cook, stirring, until beginning to brown, about 3 minutes more. 2 lbs Polish sausage or 2 lbs kielbasa, cut into 2 to 3 inch pieces
2 cups catsup
1 1/2 cups packed brown sugar
1/2 cup chopped onion
1/2 teaspoon liquid smoke
1/2 teaspoon garlic powder

Steps:

  • In a medium saucepan, put catsup, brown sugar, onion, liquid smoke and garlic powder.
  • Cook for 5 minutes.
  • Put sausage in a casserole dish sprayed with cooking spray.
  • Pour sauce over meat.
  • Bake at 350°F for 30-40 minutes, or until sausage is completely heated through and barbecue sauce thickens up.

Usually I make baked beans with miniature smoked sausages, but this time I cut up large smoked sausages and used barbecue sauce and chile peppers. 1 (14 ounce) package johnsonville smoked sausage, cut into 1/4 inch pieces at an angle
