BAKED APPLE CRISP FOR ONE
When you make your lunch this recipe would be a great dessert before going back to work. A nice cup of coffee goes well with this dessert.

Steps:
- Put apple wedges and water into a microwave safe dish. Put on lid and cook in microwave for 2 minutes.
- Remove and drain apples in a strainer to remove excess liquid.
- Put cooked apple back in microwave dish add sugar, cinnamon, and butter and mix well.
- Top with the bread crumbs put the lid on and cook in microwave for 1 minute.
- Remove the lid and it smells like fresh homemade apple pie right out of the oven.
- Top with vanilla ice cream or whipped cream for an apple delight.

- Preheat oven to 350 degrees F (175 degree C).
- Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
- Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
- Bake at 350 degrees F (175 degrees C) for about 45 minutes.

- Preheat oven to 350°. Place apple slices in a small greased baking dish. In a small bowl, combine flour, brown sugar and cinnamon; cut in butter until mixture resembles coarse crumbs. Stir in oats; sprinkle over apple slices. Bake until apple slices are tender, 35-40 minutes. Serve warm with cream, if desired.

BAKED APPLE FOR ONE
This smells delicious while it bakes. It can easily be multiplied to accomodate a larger family. If you use a cold apple, the sugar will stick to the outside nicely, but it will take longer to cook. I have heard of people using honey instead of sugar, but it tastes funny to me. (note: I'm sorry I originally forgot to post the baking temperature of 375)

- Preheat the oven (or toaster oven) to 375.
- Place the apple in a small oven safe bowl or dish.
- Spoon the liquid into the dish beneath the apple.
- Layer the sugar, raisins, and cinnamon in the center of the apple, sprinkling the excess sugar (with a touch of cinnamon) over the top.
- Cover the entire dish with foil and bake until tender, about 20 minutes (for a small apple.).

- Preheat the oven to 350 degrees F.
- For the fruit filling:
- In a large mixing bowl, toss together the apples, lemon juice, sugar, and flour. Pour the apple mixture into a buttered 2-quart baking dish and set aside.
- For the topping:
- In a large mixing bowl, mix the flour, rolled oats, brown sugar, cinnamon, and salt. With a food processor, a pastry blender, or your fingers work the butter into the flour mixture just until it comes together and large clumps form. Fold nuts into mixture.
- Sprinkle the topping evenly over the fruit. Bake the apple crisp until the fruit is bubbling and the topping is golden brown and crisp, about 45 minutes.
- Serve the crisps warm with vanilla bean ice cream or fresh whipped cream, if desired.
BAKED APPLE WITH CRISP TOPPING

- Preheat oven to 350 degrees F.
- Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.

LOOPY'S BAKED APPLE CRISP
I created this recipe myself, and it's the first one I'm submitting to the site. The cream cheese mixture turns almost into a caramel sauce when baked, not 'cream-cheesy' at all.
