Steps:
- Preheat an oven to 400 degrees F (200 degrees C).
- Place the potatoes in a large saucepan of water. Cover; bring to a boil over high heat. Reduce heat; gently cook potatoes until tender but still firm, about 20 minutes. Drain.
- Place potatoes on a greased, rimmed baking sheet. Smash the warm potatoes with the heel of your hand or a small pan to flatten slightly and break the skin.
- Mix together the olive oil, butter, 1 cup Parmesan cheese, basil, oregano, thyme, rosemary, garlic powder, red pepper flakes, salt, and pepper in a large bowl; add the potatoes and toss well. Return coated potatoes to baking sheet, leaving 1/2 inch space between each potato.
- Roast potatoes in the preheated oven until lightly browned and slightly crispy; about 30 minutes. Place hot potatoes on a large platter; sprinkle with parsley and the remaining 1/2 cup Parmesan cheese.

BADA BING PORK CHOPS
Grilled pork chops marinade in a savory, sweet combination of Italian dressing, hot sauce, applesauce, and lime. Best to marinade for at least 6 hours.

- 1) Mix together the Italian dressing, Worcestershire sauce, applesauce, hot pepper sauce, and lime juice in a bowl. Pour the marinade over the pork chops, and refrigerate in marinade for 6 hours or overnight.
- 2) Preheat an outdoor grill for medium heat, and lightly oil the grate.
- 3) Remove the chops from the marinade, and pour marinade into a saucepan. Bring the marinade to a boil over medium heat, and allow to boil for about 1 minute.
- 4) Place the pork chops onto the preheated grill, and grill until well browned and no longer pink in the middle, about 6 minutes per side, basting the chops occasionally with the marinade. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Allow the marinade baste to cook completely onto the chops.

- Mix all ingredients except the wings in a small saucepan, bring to a simmer and cook for 20 minutes.
- Cook the wings according to the package directions, either deep-fried or baked; my family prefers them baked at 425 degrees until the meat is tender and the skin is crispy.
- Put the wings in a large bowl, pour the sauce over, toss to coat well; I like to place them back on a baking sheet at this point and bake for another 15-20 minutes in a 300 degree oven.
- Serve with celery sticks, and either blue cheese or ranch dressing.

This recipe took top honors in a Bobby Flay ThrowDown! competition. It sounded so scrumptious and perfect for a Super Bowl gathering, and I thought others might be interested in preparing it for their Super Bowl festivities.

- Chop up and sauté the shallot & garlic cloves with the butter.
- Add the dark beer, chili sauce, and BBQ sauce, and stir for 1 minute.
- Add the ancho chili peppers, brown sugar, honey, and cayenne pepper sauce, and stir for 2 minutes.
- While you are creating the sauce, drop 50 chicken wings (the amount you drop in at one time will depend on the size of your fryer) in a deep fryer until fully cooked. (The wings can also be grilled or roasted instead of deep fried.).
- Once wings are fully cooked, add the wings to a large mixing bowl. Add the sauce, and flip gently to be sure the wings are thoroughly coated with the sauce.
- Serve with a side of blue cheese dressing.

- Mix all ingredients in a small cooking pot. Heat on low / low-medium and stir until brown sugar and butter melt together and all ingredients are blended smooth. Continue to keep warm.
- Take 12 fresh chicken wing pieces (or frozen) and drop into fryer that has been preheated to 350 degrees. Cook for 9-12 minutes until crispy and golden brown. (NOTE: may cook faster with fresh chicken).
- Take large Tupperware container with lid and place chicken wings into container. Pour some sauce into bowl, cover and shake. Repeat until sauce is gone. Serve with celery and either blue-cheese or ranch. Guaranteed to make your friends sweat as well as beg for more. Great if served with beer. (I like Heineken) Supply the ladies with extra beer.
