BACON WRAPPED DATES STUFFED WITH BLUE CHEESE
Dates are stuffed with blue cheese, wrapped in bacon and baked until crisp. These are delicious and very easy to make for a party. You can serve them at room temperature, so it is okay to make a few hours in advance!

- Preheat the oven to 375 degrees F (190 degrees C).
- Slice dates in half, and open them up. Pinch off pieces of blue cheese, and place them into the center of the dates. Close the halves of the dates, and wrap a half-slice of bacon around the outside. Secure each one with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease.
- Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

- Preheat the oven to 400 degrees F.
- Slice the dates lengthwise three-quarters of the way down. In a small bowl, press the cream into the blue cheese with a fork. Press a small scoop of the blue cheese into the center of the dates and close them back up. Cut each piece of bacon in half. Wrap each halved bacon strip around a date. Secure with a toothpick.
- Place the bacon-wrapped dates on a baking sheet. Bake until the bacon is crisp, 15 to 20 minutes.

- Slice dates lengthwise and open up like a book. Inside each date, place 1/2 teaspoons blue cheese and 1 almond, then close tightly.
- Wrap dates in bacon, trimming as needed, and secure with a cocktail pick. You can slice the bacon in halves or thirds to wrap various sized dates.
- Place dates on a parchment paper-lined baking sheet. (If making ahead, cover with plastic wrap and refrigerate until needed).

Sinfully delicious!! Salty and sweet, crispy and gooey!! Yum! Surprisingly easy and look fantastic. I had these at a restaurant and then went on a hunt to find a similar recipe. Found one online and tweaked it some. If you use thick cut bacon, par-cook it some before wrapping dates.

Steps:
- Simmer balsamic vinegar in small saucepan until reduced by half. Syrup will be thick. Set aside.
- Mix almonds into goat cheese.
- Cut small slit in dates and stuff with small amount of cheese mixture.
- Cut each bacon slice into 3 pieces. (Par-cook if thick sliced.) Wrap piece of bacon around each date, and secure with toothpick.
- Place on foil-lined baking sheet.
- Broil for about 10 minutes, turning over when browned on first side. Be careful as they can burn quickly.
- Arrange on serving platter and drizzle with reserved balsamic reduction.

- Slice date in half without separating halves completely and remove pit. Press 1/4 ounce of cheese into the center of date. Close date and wrap tightly with a half slice of bacon. Roll in brown sugar. Place on the prepared baking sheet with bacon seam-side down and secure with a toothpick if desired. Repeat with remaining dates.**
- Bake in preheated oven for 10 minutes, and then flip dates, carefully pressing any loose melted cheese back into the dates as best as possible. Bake another 10-12 minutes, until bacon is crisped all around. Cool slightly and serve with balsamic reduction.
- In a small saucepan, bring balsamic vinegar to a low boil over medium heat. Reduce heat to maintain a simmer and simmer until the vinegar has reduced to about 1/4-1/2 of the original amount, or until as thick as desired (Reduce more for drizzling and less for dipping). For me, this took about 25 minutes, although times will vary based on stove differences.

- Preheat oven to 425 degrees. Line a baking tray with foil and set aside. Using a sharp knife, slit the side of each date and remove the pit. Wrap each date in bacon and then stab completely through with a toothpick to hold the bacon in place. (If you don't use a toothpick, the bacon will shrink and slide off of the date as it cooks.) Place wrapped dates on the foil lined sheet.
- Bake for 12-15 minutes, until the bacon is cooked through and slightly crispy. While the dates are in the oven, pour some balsamic in the bottom of a small saucepan. Turn the heat to medium low and bring to a slow simmer. When the vinegar has reduced by about half, remove from the heat and drizzle over the finished dates. Enjoy!
