SWEET & SPICY BACON WRAPPED PORK RIBS
Pork ribs coated in spices to give them a little heat, then wrapped in bacon and rolled in brown sugar. Cooked low and slow on the grill or in your oven. Moist, tender ribs in a coating of sweet and salty bacon.

- Preheat grill or smoker to 275 degrees.
- Make seasoning mix by combining peppers, salt, and garlic powder in a small bowl.
- Lay ribs in a 9x13 aluminum pan. Sprinkle both the top and the bottom of each rib with spice mix. Reserve a small amount.
- Wrap each rib with two slices of bacon, placing them back into the pan, seam side down.
- Sprinkle remaining seasoning over the top of the bacon.
- Sprinkle the brown sugar on top of the bacon evenly.
- Place the pan on your grill over indirect heat. (only turn burner on one part of the grill) Let them "smoke" for 2 hours. They will make an amazing glaze while they do.
- Check internal temperature with a meat thermometer. Pork ribs should be 145 degrees F. in the center. Remove from grill.
- Turn grill up to 325 degrees and place each rib on direct heat, grilling them until the bacon crisps. Brushing with the glaze as you do. This will only take a couple of minutes. No need to worry about the ribs getting overdone.
- Let meat rest for 3 minutes before serving.

PRIME RIB WITH GARLIC HERB BUTTER RECIPE BY TASTY

- Preheat oven to 500°F (260°C).
- Mix together the butter, garlic, herbs, salt, and pepper in a bowl until evenly combined.
- Rub the herb butter all over the rib roast, then place on a roasting tray with a rack.
- Bake for 5 minutes per pound (10 minutes per kilo) of meat, so a 5-pound (2.2 kg) roast would bake for 25 minutes.
- Turn off the heat and let the rib roast sit in the oven for 2 hours, making sure you do not open the oven door or else the residual heat will escape.
- Once the 2 hours are up, remove the roast from the pan and pour the pan drippings into a saucepan over medium heat.
- Add the flour, whisking until there are no lumps, then add the beef stock, stirring and bringing the sauce to a boil.
- Remove from heat and strain the sauce into a gravy dish.
- Carve the prime rib into ¾-inch (20 mm) slices.
- Serve with the mashed potatoes, green beans, and sauce!

- Preheat the oven to 225°F (105°C). Set a wire rack over a rimmed baking sheet.
- Season the prime rib all over with the salt and pepper.
- Make the garlic herb butter: In a small bowl, mix together the butter, lemon zest, salt, garlic, parsley, rosemary, and pepper until well combined.
- Transfer butter to a sheet of plastic wrap and roll into a log. Twist the ends to seal well. Refrigerate at least 1 hour, or until ready to serve.
- Set the prime rib on the prepared baking sheet and place in the oven for 3½-4 hours, until the internal temperature reaches at least 130°F (55°C), or 15° less than your desired final temperature - no less than 145°F. Remove from the oven and let rest for 30 minutes.
- Increase the oven temperature to 500°F (260°C).
- Return the prime rib to the oven for 5-10 minutes, or until a brown, crispy crust forms on the surface. Remove from the oven.
- To carve, use a boning knife to cut along the inside of the rib bones, separating them from the roast, then separate the ribs. Slice against the grain of the rest of the roast into ½-inch slices.
- Slice the butter into ¼-inch thick rounds.
- Serve the prime rib immediately with the butter rounds on top.

BACON-WRAPPED PRIME RIB RECIPE

- Preheat the oven to 250°F (120°C). Let the ribeye roast come to room temperature. Place the ribeye on a greased wire rack set over a baking sheet. Season all over with salt and freshly ground pepper. Bake the roast for 3 hours, or until the internal temperature reaches at least 125°F (52°C) for an eventual medium-rare cooked prime rib. Let the ribeye cool to room temperature. Increase the oven temperature to 450°F (230°C). Mix together the butter, garlic, paprika, chives, rosemary, brown sugar, salt, and pepper in a medium bowl. Rub the butter mixture all over the ribeye roast. On a large piece of parchment paper or plastic wrap, weave together the bacon strips until you have a bacon lattice twice as long and twice as wide as the roast. Place the bacon lattice over the roast and tuck any excess bacon around the prime rib. Return the bacon-wrapped roast to a greased wire rack set over a baking sheet. Bake the roast for 30 minutes, or until the bacon lattice is crispy. The center of the meat should not heat up too much so it is very important you cook it to the desired doneness when the roast is in the oven the first time. Remove the roast from the pan and pour the pan drippings into a medium saucepan over medium heat. Add the flour, whisking until there are no lumps and the mixture starts to simmer. Add the beef broth and stir until the gravy comes to a boil. Remove the pan from the heat and strain the sauce into a gravy dish. Carve the prime rib into ¾-inch slices, then serve with the gravy and any sides you like! Enjoy!
