BACON SCALLION CREAM SAUCE

Bacon Scallion Cream Sauce image

Here we have a re-education - or an education, if you're a first-timer - in the virtues of an old-fashioned cream gravy. A few tablespoons of this elixir can uplift plainly cooked meat like a lamb chop or steak, layering on the richness of cream but also the freshness of scallion and black pepper. Use plenty of each. These days, home cooks are not likely to keep meat drippings around in the kitchen to make a fat-and-flour roux, but there's nothing wrong with hacking a substitute from a lump of butter and a slab of bacon. Then cook them together with flour to make a golden, toasty-smelling roux. After adding the broth and cream, the sauce will seem thin, but stay the course: don't even think of adding more flour. It takes a few minutes for the flour's starch to absorb the liquid. Take the gravy off the heat when it still seems a little too thin: it will thicken further at the table.

Time 25m

Yield About 1 1/2 cups

Number Of Ingredients 8

3 tablespoons butter
1 thick slice bacon, chopped
3 tablespoons flour
1 1/2 cups chicken stock
3/4 cup heavy cream
1 tablespoon cracked black peppercorns
6 scallions, white and green parts, thinly sliced, plus extra for garnish
Salt

Steps:

  • In a heavy saucepan, melt butter over medium heat. Add bacon and cook for 3 to 5 minutes, until fat has rendered. Add flour, then stir together and cook over low heat, stirring often, until golden and toasty-smelling, 4 to 6 minutes.
  • Add chicken stock and cream, and simmer over low heat until reduced to a thick, pourable gravy, about 10 minutes. Remove from heat. Stir in peppercorns and scallions, and taste for salt, adding more as needed. Serve hot.

CREAMY CORN PASTA WITH BASIL

Creamy Corn Pasta With Basil image

There's no cream in this wonderfully summery pasta dish, just a luscious sauce made from puréed fresh corn and sweet sautéed scallions, along with Parmesan for depth and red chile flakes for a contrasting bite. Be sure to add the lemon juice and fresh herbs at the end; the rich pasta really benefits from their bright, fresh flavors. And while this is best made at the height of corn season, it's still quite good even with out-of-season supermarket ears, or with frozen corn.

Categories     pastas, main course

Time 30m

Yield 3 to 4 servings

Number Of Ingredients 11

Fine sea salt
12 ounces dry orecchiette or farfalle
1 tablespoon olive oil, plus more for drizzling
1 bunch scallions (about 8), trimmed and thinly sliced (keep the whites and greens separate)
2 large ears corn, shucked and kernels removed (2 cups kernels)
1/2 teaspoon ground black pepper, more for serving
3 tablespoons unsalted butter
1/2 cup grated Parmesan cheese, more to taste
1/3 cup torn basil or mint, more for garnish
1/4 teaspoon red pepper flakes, or to taste
Fresh lemon juice, as needed

Steps:

  • Bring a large pot of well-salted water to a boil. Cook pasta until 1 minute shy of al dente, according to the package directions. Drain, reserving 1/2 cup of pasta water.
  • Meanwhile, heat oil in large sauté pan over medium heat; add scallion whites and a pinch of salt and cook until soft, 3 minutes. Add 1/4 cup water and all but 1/4 cup corn; simmer until corn is heated through and almost tender, 3 to 5 minutes. Add 1/4 teaspoon salt and 1/4 teaspoon pepper, transfer to a blender, and purée mixture until smooth, adding a little extra water if needed to get a thick but pourable texture.
  • Heat the same skillet over high heat. Add butter and let melt. Add reserved 1/4 cup corn and cook until tender, 1 to 2 minutes. (It's O.K. if the butter browns; that deepens the flavor.) Add the corn purée and cook for 30 seconds to heat and combine the flavors.
  • Reduce heat to medium. Add pasta and half the reserved pasta cooking water, tossing to coat. Cook for 1 minute, then add a little more of the pasta cooking water if the mixture seems too thick. Stir in 1/4 cup of the scallion greens, the Parmesan, the herbs, the red pepper flakes, 1/4 teaspoon salt and 1/4 teaspoon pepper. Sprinkle with fresh lemon juice to taste. Transfer to warm pasta bowls and garnish with more scallions, herbs, a drizzle of olive oil and black pepper.

SLAB-BACON TACOS WITH BURNED-SCALLION CREMA

Slab-Bacon Tacos With Burned-Scallion Crema image

This is candied bacon, essentially, on corn tortillas with a creamy, smoke-flecked sauce that tastes of scallion and lime. I like it with pineapple salsa as well, and a salad of cilantro, mint and soft lettuce. You could make it with your standard sliced bacon from the market, but it's far superior with the thick-cut variety or, best of all, with a chunk of uncut bacon that you can slice as thick as you like.

Provided by Sam Sifton

Categories     tacos, main course

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 14

2 tablespoons chile powder
1 tablespoon ground cumin
1 tablespoon brown sugar
2 teaspoons freshly ground black pepper
2 pounds slab bacon, cut into 1/4-inch slices
1 bunch green scallions, trimmed and cut into large pieces
1 jalapeño
1 to 2 limes
1 cup sour cream
1/2 cup mayonnaise
1 teaspoon kosher salt, or to taste
Corn tortillas
Lime wedges
Pineapple salsa (see recipe)

Steps:

  • Heat oven to 450 degrees. Mix the chile powder, ground cumin, brown sugar and black pepper together in a large bowl, and then add the bacon slices, tossing to coat them with the spice mixture.
  • Arrange the coated bacon slices on a sheet pan, ideally one fitted with a wire rack. Roast in the oven until they are caramelized and starting to crisp at the edges, approximately 10 to 15 minutes. Remove pan from oven, chop the bacon into large dice and keep warm. Reserve the bacon fat for another use.
  • While the bacon cooks, make the crema. Put the scallions and jalapeño in a large dry sauté pan and cook over high heat, tossing occasionally, until the scallions and jalapeño have blackened at the edges, approximately 10 to 12 minutes.
  • Put the scallions and jalapeño in the bowl of a food processor, and blitz them with the juice of 1 lime, then add the sour cream and mayonnaise, and blitz the mixture until it is smooth and flecked with blackened bits. Season to taste with the salt and, if you'd like the mixture thinner, the juice of the second lime. Scrape into a bowl, and reserve.
  • To serve, warm the tortillas in the dry pan, one or two at a time, and reserve them in a tortilla warmer or clean dish towel. Fill them with the diced bacon and a slash of the crema, along with quartered limes and, if you like, salsa, cilantro, mint and hot sauce.

OYSTER STUFFING CAKES

Oyster Stuffing Cakes image

When you get your hands on ice-cold oysters straight from the Chesapeake Bay, it would be foolish to do anything beyond shuck and slurp. But in the 19th century, oysters were so plentiful in eastern Virginia and Maryland that they burrowed their way into the region's cooking traditions. Most were smoked and salted, roasted over fire, dropped into chowders and stews and used in stuffings. The chef Peter Woods at Merroir in Topping, Va., serves this crisp, savory treat in fall and winter as an appetizer, or as a main course with a big winter salad of bitter greens, pears or dried fruit and toasted nuts.Try to buy the oysters for this recipe at a fish store with high turnover and have the counterman shuck them for you; if you can't, even packaged shucked oysters will do fine. They are chopped up small in this recipe so they melt into the bread and herbs, and their briny liquor binds the mixture. You taste umami and butter and salt, but nothing screams "Oyster!"

Provided by Julia Moskin

Categories     dinner, lunch, appetizer, main course

Time 45m

Yield 12 servings

Number Of Ingredients 15

1 pint (about 2 dozen) Eastern (virginica) shucked oysters with their liquor, finely chopped
12 ounces stale bread cut into 1/2-inch cubes
3 ounces (about 1/3 cup) freshly grated Parmesan
1 stick (4 ounces) unsalted butter
3 slices bacon, chopped
4 stalks celery, chopped
1 onion, chopped
1 1/2 cups chicken stock, plus extra for binding
2 tablespoons fresh oregano, chopped fine, or 1 tablespoon dried
2 tablespoons fresh thyme, chopped fine, or 1 tablespoon dried
6 fresh sage leaves, minced
2 teaspoons ground coriander
Coarse salt
Black pepper
Neutral oil, such as grapeseed or canola, for pan-frying

Steps:

  • In a large bowl, combine oysters and their liquor, bread and cheese. Set aside.
  • In a heavy skillet, melt butter over medium heat. Add bacon and let cook 3 to 5 minutes, until fat has rendered and bacon is cooked through but not crisp.
  • Add celery and onion, stir to coat, then add stock and bring to a simmer. Let simmer until vegetables have softened, 10 minutes. Add herbs and coriander, mix well and turn off heat.
  • Add vegetable mixture to bread mixture in bowl. Toss well, season to taste with salt and pepper, then refrigerate until chilled, about 2 hours, or overnight.
  • When ready to cook, form chilled mixture into 3 1/2-ounce patties, about the size of a clementine. Let patties come to cool room temperature. Heat a film of oil in a skillet and, working in batches, pan-fry patties, turning once, until browned on both sides and hot all the way through. Serve hot, with bacon scallion cream sauce if desired.

FILET MIGNON WITH BACON CREAM SAUCE

Filet Mignon with Bacon Cream Sauce image

Amazing, easy-to-make filet mignons with a bacon cream sauce.

Provided by Michael.B

Categories     Meat and Poultry Recipes     Pork

Time 35m

Yield 4

Number Of Ingredients 7

4 (4 ounce) filet mignon (beef tenderloin)
1 teaspoon olive oil
3 slices bacon, chopped
1 tablespoon butter
4 shallots, diced
¼ cup half-and-half cream
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Brush the filets with olive oil, and cook on the preheated grill to desired doneness (about 4 minutes per side for medium rare). An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Set the steaks aside on a platter tented with aluminum foil to rest.
  • While the steaks are resting, prepare the sauce: cook and stir the chopped bacon in a small saucepan over medium heat until the bacon pieces are crisp, 3 to 5 minutes. Stir in the butter and shallots, and cook and stir until the shallots are soft and translucent, about 5 minutes more.
  • Stir in the half-and-half, bring the mixture to a simmer over medium-low heat, and cook, stirring occasionally, until the sauce is slightly thickened, about 8 minutes. Season to taste with salt and pepper, and serve over the steaks.

  • Heat a non-stick skillet or another pan*** over medium heat. Cook the diced bacon until it renders its fat and gets crispy. Remove to a paper towel lined plate and set aside.
  • Leave about a teaspoon of the bacon fat in the pan, remove the rest. Sauté the diced shallots until softened.
  • Add the heavy cream, bring to simmer (adjust heat to low or medium-low as necessary, you want to see gentle bubbles, do not allow the cream to boil). Simmer for about 5 minutes, then add the Parmesan and gently stir it in. Simmer a bit longer until the sauce thickens to your desired consistency.
  • Season liberally with salt and pepper to offset the sweetness of the cream (taste). Fold in the bacon bits and serve (use with pasta etc.) immediately. Sprinkle with red pepper flakes and parsley to taste.
