SLOW-COOKER BACON-RANCH CHICKEN AND PASTA

There's nothing that doesn't taste better with Ranch dressing on it. Once you try this super-simple slow cooker pasta, you may agree that this is Ranch's finest moment.

1 lb chicken breasts
6 slices bacon, cooked and diced
2 to 3 cloves garlic, finely chopped
1 package (1 oz) ranch dressing and seasoning mix
1 can (10.75 oz) condensed cream of chicken soup
1 cup sour cream
1/2 teaspoon pepper
1/2 cup water
8 oz spaghetti, cooked

Steps:

  • Spray 4-quart slow cooker with cooking spray; place chicken breasts in cooker.
  • In medium bowl, mix remaining ingredients except spaghetti. Pour over top of chicken.
  • Cover; cook on Low heat setting 6 hours or on High heat setting 3 to 4 hours.
  • When about 15 minutes are left, cook and drain spaghetti as directed on package.
  • Just before serving, shred chicken with 2 forks, and toss creamy chicken mixture with cooked spaghetti.

Slow Cooker Chicken Bacon Ranch is a simple recipe that is bursting with flavor. Only four ingredients are needed for this easy family meal. For those following a low carb diet, this recipe is KETO friendly.

1 1/2 lbs Boneless Skinless Chicken Breast
1 8 oz block Cream Cheese
1 1 oz packet Ranch Dressing Seasoning
4-5 pieces bacon (cooked)

Steps:

  • Place boneless chicken breasts in the slow cooker. Sprinkle with ranch seasoning and top with cream cheese.
  • Cook on low for 6-7 hours or on high 3-4, until internal temp of the chicken reaches 165° F and shreds easily.
  • Shred the chicken with 2 forks and stir together in the slow cooker until the chicken is coated and cream cheese is mixed in.
  • Sprinkle with pieces of bacon.

2 chicken breasts, each cut in half through the middle to make 2 thinner breasts
5 tablespoons butter, softened
1 tablespoon canola oil
Spicy mustard, for spreading
8 slices crusty French bread
Ranch dressing, homemade or bottled, for spreading
8 slices sharp Cheddar
8 slices cooked bacon

Steps:

  • Fry the chicken breasts in 1 tablespoon butter and the canola oil in a skillet over medium-high heat until done in the middle, about 8 minutes. Set aside.
  • To assemble the sandwiches, spread a generous amount of mustard on half of the bread slices. Spread a generous amount of ranch dressing on the other half. (Definitely be generous; when the sandwiches cook, these will turn into more of a "sauce.")
  • On the ranch-covered slices of bread, place a slice of cheese, a piece of chicken, 2 slices of bacon and a second slice of cheese. Top each with the mustard-covered slice of bread. Butter the outsides of the bread generously with the remaining 4 tablespoons butter, then grill in a panini maker. (If you do not have a panini maker, you can grill the sandwiches in a skillet, laying a heavy skillet on top of the sandwiches to press them together. Turn to grill the other side in the same way.)
  • Slice the sandwiches in half and gobble them down immediately.

I do not remember where I found this recipe but it has been a favorite in my family for years. If you do not want to serve the Ranch Dressing as a dip just use the 1/4 cup of dressing called for in the directions before baking.

1/4 cup(s) bacon bits
1/3 cup(s) bread crumbs, seasoned
8 - chicken drumsticks
1 3/4 cup(s) ranch dressing

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Set aside.
  • Reserve 2 tbsp of the bacon bits.
  • On waxed paper combine the bread crumbs and remaining bacon bits. Brush drumsticks with 1/4 cup Ranch Dressing. Coat with crumb mixture.
  • Place on baking sheet and bake 30 minutes. Place remaining dressing in small bowl and sprinkle with reserved bacon bits. Serve as a dip for drumsticks.

3/4 cup Original Bisquick™ mix
1 package (1 oz) ranch dressing and seasoning mix
1 teaspoon paprika
1 egg, slightly beaten
1 tablespoon water
2 1/2 to 3 lb chicken drumsticks (12 to 15 pieces)
1 cup ranch dressing, if desired

Steps:

  • Heat oven to 425°F. Line 13x9-inch pan with foil. Generously spray with cooking spray.
  • In shallow dish, mix Bisquick mix, dressing mix (dry) and paprika. In another shallow dish, mix egg and water. Dip chicken into egg mixture, then coat with Bisquick mixture. Place chicken in pan.
  • Bake 35 minutes. Turn; bake about 15 minutes longer or until juice of chicken is clear when thickest part is cut to bone (180°F). Serve with prepared ranch dressing.
