HALVA RECIPE

A sweet sesame treat that is free from gluten, dairy, soy, and egg. A nut-free option is available.

200 grams (1 cup) white sugar
¼ cup water
250 grams (9 oz) tahini
Pinch of ground cinnamon
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract
Optional almond slivers

Steps:

  • Use cooking spray to lightly coat a small loaf pan. Set aside.
  • In a medium saucepan, mix the sugar and water and bring to a boil, stirring frequently.
  • Once boiling, reduce heat and simmer for 15 minutes, stirring frequently to prevent crystallization. Remove from heat and set aside to cool.
  • In a second saucepan, warm the tahini, stirring continuously until it is warm and softens. Do not overheat. Remove from heat.
  • Stir in cinnamon, lemon juice, vanilla extract, and sugar mixture. Mix until well incorporated and appears shiny.
  • Transfer into the greased pan and press to shape flat. Let cool completely.
  • Cover with plastic wrap and refrigerate overnight. Cut into bite-size pieces. Enjoy.

3/4 cup gluten-free plain flour, sifted
1 teaspoon mixed spice
1/2 teaspoon cinnamon
200 g dried figs, chopped
100 g raisins
100 g macadamias
100 g blanched almonds
2/3 cup honey
1/3 cup caster sugar
200 g dairy-free chocolate, broken
icing sugar, sifted, for dusting

Steps:

  • Preheat oven to 180°C or 160°C fan. Grease and line a 20cm square cake pan. Combine dry ingredients in a large bowl.
  • Combine honey and sugar in a medium saucepan and stir over low heat to dissolve sugar. Bring to the boil, reduce heat and simmer for 2 minutes. Remove and stir in chocolate to melt.
  • Quickly stir into dry mixture. Lightly knead ingredients to combine. Press into pan and flatten top. Bake for 25 minutes, or until just firm. Cool in pan. Dust with icing sugar and cut into squares.

These tasty carrot bites are nice to keep in the refrigerator for when you want a quick bite of something sweet, or need a little pick-me-up between meals or after a workout. Found this recipe on a blog called Daily Bites http://www.dailybitesblog.com/2010/04/15/carrot-cake-bites/. These little bites can be stored in the refrigerator for 5 days.

Number Of Ingredients 9

2 carrots, peeled and roughly chopped
1/2 cup walnuts
1/2 cup raw cashews
5 -6 dates, pitted and roughly chopped (I use nice soft Medjool Dates)
1 teaspoon fresh ginger, grated (I use a little more to fit our taste)
1/2 teaspoon cinnamon
1 orange, zest of
sesame seeds, for rolling in
unsweetened dried shredded coconut, for rolling in

Steps:

  • In a food processor fitted with the S-blade, process carrots untill finely ground. Remove and set aside.
  • Process the walnuts and cashews in the food processor (no need to clean it out) until finely ground.
  • Add the dates and process until finely chopped and incorporated into the nuts.
  • Add the reserved carrots, ginger, cinnamon, orange zest (if using) and process until dough forms.
  • Shape the mixture into 15-18 small balls.
  • Roll in sesame seeds or shredded coconut to coat.
  • Refrigerate until ready to enjoy. Can be refrigerated for up to 5 days.

1 cup sunflower seeds
3/4 cup pumpkin seeds
1/2 cup shredded coconut, unsweetened
1/4 cup flax seed
1 cup granulated unbleached cane sugar
1 tablespoon cinnamon
2 1/4 teaspoons sea salt
1 3/4 cups dark chocolate chips or 1 3/4 cups carob chips
1 1/4 cups raisins
1/4 cup water
1/4 cup blackstrap molasses
3/4 cup canola oil
1 cup soymilk

Steps:

  • Preheat oven to 350°F.
  • Line two baking trays with parchment paper.
  • Combine dry ingredients : from oats to raisins.
  • Combine wet ingredients: from water to soy milk.
  • Stir dry and wet together until just combined.
  • Portion cookie dough using 1/3 C measure and place on baking tray.
  • Gently flatten cookies.
  • Bake for 24 minutes or until lightly browned.

This is possibly the most nutritious sweet treat in the world. A delicious rich melt in the mouth halva. Great for babies and children. Sesame seeds are the highest source of calcium (975gms per 100gms -9 times that of whole milk-), high in iron (14.55grams -grain fed beef mince has only 1.99grams-) an almost equal amount of protein to beef and numerous other nutrients. This has become a staple in our house and the combinations are endless. I like to mix in chopped pistachios. You can use other things such as prunes, date paste, dried cherries, apricots, coconut, cocoa powder or other nuts and flavourings. you can add more dates if you prefer it sweeter. You could also try using tahini to make it easier.

250 g of whole raw sesame seeds
50 g dates, chopped finely
1 teaspoon of natural vanilla extract

Steps:

  • process the sesame seeds for until a paste consistency, scrapping down the sides as required. This may take several minutes. If your machine gets warm (you don't want the paste getting too warm) just take a break and let it cool a bit. Now you have your own fresh tahini.
  • Add the finely chopped dates (can use date paste here, I make my own date paste when I'm motivated so I've got it there for later) and vanilla and process scrapping down the sides until the dates are incorporated and the halva is a thick grainy paste. At this stage you take it out and mix by hand any additions you would like.
  • Press it into a suitable container, preferably a shallow one and put it in the fridge, it's now ready to eat as is but it will firm up nicely overnight. Once it's set I like to tip it onto a plate and cut chunks off like cheese. Will keep in the fridge for a while.
