ONION AND BACON CHEESE SANDWICHES
Give everyday grilled cheese a boost! Top sandwiches with cooked bacon pieces and sliced onion.

- In 12-inch nonstick skillet, cook bacon over medium heat about 4 minutes, stirring occasionally, until almost cooked. Add onion. Cook 2 to 3 minutes, turning occasionally, until tender. Remove bacon and onion from skillet. Reserve 1 tablespoon drippings in skillet.
- To make each sandwich, layer cheese, bacon and onion between 2 bread slices. Place 2 sandwiches in drippings in skillet. Cover and cook over medium-low heat 3 to 5 minutes, turning once, until bread is crisp and golden brown and cheese is melted. Repeat with remaining sandwiches.

- Mix together the first three ingredients: refrigerate at least 8 hours.
- Spread mayonaisse mixture on bread, trim crusts if desired* cut bread in forths diagonally.
- *hint*when trimming crust from bread; use electric knife.
- Do the same for mutiple sandwiches.
- Stack, and let knife glide down.
- No more ragged or torn bread.
BACON, ONION, AND TOMATO SANDWICHES

- 1. In a nonstick skillet, cook the bacon until brown and crisp. Drain on paper towels. Pour off all but 1 tablespoon of the fat from the skillet. Cook the onion in the skillet, stirring frequently, until it softens and begins to brown, about 4 minutes. Remove the onion to a plate. 2. Spread 1 teaspoon of crema on the bottom half of each roll. Put 4 slices of bacon on each roll then layer with 1/4 of the onion, tomato, and lettuce. Spoon 1 teaspoon salsa on top of each roll, and cover each torta with the top half of the roll. - Cook bacon and set aside to drain.
- Meanwhile toast 2 slices of bread on one or both sides.
- Put mayonnaise on both sides of bread.
- Assemble starting with bacon, onion and top with cheese on of the slices of bread.
- Put in broiler and melt cheese. As soon as you take out put the top on the hot cheese to seal.
