Caramelized Maple Apple Pie with Candied Bacon Crumble image

The holidays deserve a pie worthy of its occasion. This towering pie is piled high with apples that bathe in a deep maple caramel with a slight tang from cider vinegar. It's topped with a buttery crumble studded with crispy candied bacon. A pie that definitely earns its place at the table.

3 slices bacon
1 tablespoon dark brown sugar
1 pastry for a 9-inch double-crust pie
10 Granny Smith apples - peeled, cored, and cut into 1/2-inch wedges
½ lemon, juiced
¼ cup butter
½ cup maple syrup
⅓ cup dark brown sugar
2 tablespoons apple cider vinegar
¼ cup all-purpose flour
¼ cup brown sugar
¼ cup unsalted butter, softened
½ teaspoon baking powder
¼ teaspoon ground cinnamon
1 pinch salt
1 tablespoon heavy whipping cream
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place bacon on a baking sheet and sprinkle 1 tablespoon brown sugar over the top.
  • Bake in the preheated oven until crisp, 10 to 20 minutes.
  • Line a 9-inch springform pan with pie crust pastry; refrigerate.
  • Combine apples and lemon juice in a bowl and toss to coat.
  • Melt 1/4 cup butter in a large skillet over medium-low heat; add maple syrup and 1/3 cup brown sugar. Bring to a boil, lower heat, and simmer until mixture is reduced by half, about 5 minutes. Carefully add apples and stir well to coat. Cook until apples just start to soften and get a bit of color on them, about 5 minutes. Return the apples to the bowl leaving behind the sweet syrup.
  • Stir vinegar into sweet syrup; simmer until syrup is reduced and consistency of maple syrup, about 5 minutes. Carefully pour syrup over the apples. Cool for 10 minutes.
  • Combine flour, 1/4 cup brown sugar, 1/4 cup unsalted butter, baking powder, cinnamon, and salt in a food processor; pulse until crumbly. Break bacon into pieces, add to food processor, and pulse until combined with the crumble.
  • Tip apples into the pie crust in the springform pan. Fold dough over part of the apple filling to form an edge. Crimp the edges between your fingers. Top the apple filling with the crumble. Brush crust with cream and top with white sugar.
  • Bake pie in the preheated oven until the juices bubble and the crust is deeply golden, about 1 hour. If the crust starts to brown too quickly turn the oven down to 350 degrees F (175 degrees C).

This apple pie gets a savory zip from fresh cheddar cheese and crunchy bacon crumble topping. What a tasty and simple dessert to make. This is one of my husbands favorite. I posted this recipe in Sept. on another site... it was well received there- hope you like it too! I'll post the crust separate in "Our Favorite Pie Shells".

PIE:
5-6 medium apples, granny smith or jonathan or mcintosh
1/4 cup(s) brown sugar, firmly packed
1 teaspoon(s) ground cinnamon
1 teaspoon(s) apple pie spice
2 tablespoon(s) lemon juice
3 tablespoon(s) all purpose flour
1/2 cup(s) vanilla yogurt
CHEESE CRUST:
1 1/4 cup(s) all purpose flour
1/2 cup(s) frozen butter, cut into cubes then frozen
1/2 teaspoon(s) granulated sugar
3-4 tablespoon(s) ice water
1/3 cup(s) shredded sharp cheddar cheese
TOPPING:
1 cup(s) cooked crumbled bacon,chopped fine
1/2 cup(s) all purpose flour
1/3 cup(s) light brown sugar,packed
3 tablespoon(s) cold butter
1/2 cup(s) sharp shredded cheddar cheese

Steps:

  • Heat oven to 375^ Pie Filling: Combine flour,sugar and spices and remaining ingredient in a large bowl, mix to coat evenly; set aside.
  • Cheese Crust: Place frozen butter cubes into a food processor. Process until smaller chunks appear, do not mush. Put in the cheese, flour and sugar on top of butter. Process until mixture turns into a coarse crumb texture. Add the ice water 1 Tablespoon at a time while the processor is running -until the dough becomes slightly clumpy. Press a bit together with your fingers- if still crumbly add a little more water. Place contents on a counter and press into a round disk shape. Wrap up in plastic wrap. Chill for 45 minutes. Remove let rest for 15 minutes. Roll out to 1/4 inch thickness. Fit crust into 9-inch pie pan. flute edges. Spoon apple filling into crust.
  • Crumble Topping: Combine flour, brown sugar and cold butter. Mix together with a pastry blender until pea sized crumbs form, Sprinkle over apple filling.
  • Bake at 375^ for 50 minutes or until apple are tender and filling bubbles. Remove from oven and sprinkle combine cheese and bacon pieces evenly over top of pie. Return to oven and bake until cheese melts and apples are tender.

5 slices cooked OSCAR MAYER Bacon, crumbled
1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)
6 cups sliced peeled Golden Delicious apples (about 6 apples)
3/4 cup granulated sugar
2 Tbsp. bourbon
1 tsp. vanilla

Steps:

  • Heat oven to 400ºF.
  • Mix brown sugar, cinnamon and 1/2 cup flour in medium bowl. Cut in 1/4 cup (4 Tbsp.) butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in bacon.
  • Place crust in 9-inch pie plate as directed on package for one-crust filled pie. Place apples in large bowl. Add granulated sugar, remaining flour, bourbon and vanilla; mix lightly Spoon into crust. Cut remaining butter into small pieces; place evenly over apples. Cover with crumb topping. Place on baking sheet.
  • Bake 30 min. Reduce oven temperature to 350ºF; bake 30 min. or until apples are tender. Cool.

1/2 lb sliced bacon
1/2 cup flour
1/3 cup light brown sugar
3 tablespoons unsalted butter, chilled and cut into small cubes
1/2 cup extra-sharp cheddar cheese, shredded
3 golden delicious apples, peeled, cored and sliced 1/4 inch thick (about 1 1/2 pounds)
1/4 cup granulated sugar
1 1/2 teaspoons lemon peel, grated
1 (9 inch) store-bought pie shells, prebaked according to package directions

Steps:

  • Preheat oven to 400 degrees.
  • In large skillet over medium heat, cook the bacon until crisp; drain and crumble.
  • In medium bowl, combine the flour and brown sugar, add the butter and, using your fingers, incorporate the butter until the mixture is crumbly.
  • Stir in the bacon and cheese; refrigerate.
  • Line a baking sheet with foil.
  • In medium bowl, toss the apples with the granulated sugar and lemon peel.
  • Transfer to the pie shell and sprinkle with the topping.
  • Place the pie on the prepared baking sheet and bake for 15 minutes.
  • Cover loosely with foil and bake until golden and the apples are tender when pierced, 40-45 minutes.
  • Let cool before serving.

...with delicious, crispy bacon lattice! Other bacon apple pie recipes call for bacon to be crumbled into the pie filling, but this one uses a bacon weave on top for an extra crispy treat. NOTE: this recipe calls for canned pie filling and frozen pie crust, but feel free to make your own. Home-made is better, but pre-made is better than nothing.

2 cups apple pie filling (approx)
1 pie crust
1/8 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon lemon juice
10 -12 slices bacon (uncooked)

Steps:

  • Preheat the oven to 400°F.
  • Mix apple pie filling, sugar, cinnamon, nutmeg, and lemon juice in a bowl and pour into pie crust (in a pie pan or tin). Smooth with a spatula.
  • Create bacon weave on top of pie: Lay two strips across the pie so that they intersect in the middle and are at right angles. Turn the pie so that the lower strip points toward you. Continue adding more bacon to the left and the right, creating an alternating over-under pattern with the single strip that runs side-to-side.
  • At this point, there should five or six strips of bacon pointing toward the front of the pie and one strip running side-to-side which weaves over and under the other five or six strips.
  • Begin laying a strip of bacon next to the on running side-to-side. Start at one end and create an over-under pattern opposite the first one by lifting up alternating strips, laying this piece down, and replacing the strips you lifted. Continue on both sides until the pie is completely covered in a bacon lattice with an alternating over-under weave.
  • Trim the ends that hang over the sides. Save these trimmings for use in recipes that call for diced bacon (you can freeze them).
  • Bake 45-60 minutes, or until bacon is crispy and completely cooked. You may want to bake this over a baking sheet in case apple or bacon grease ooze over the sides.
  • Cool for 10 minutes before serving. Serve with caramel praline, dulce de leche, or similar ice cream. If desired, you can cooked up the bacon trimmings and garnish the ice cream with them.

Everything's better with bacon - and that includes apple crisp! The combination of smoky, salty bacon and tart, sweet apples works surprisingly well. This works out to be mainly sweet but with some lovely savory/salty undertones. I've tried this only with regular bacon, but I'm planning to experiment with hickory smoked. Prep time does not include cooking the bacon or peeling, coring and slicing the apples.

1/2 lb bacon, cooked until crisp, drained and crumbled (pre-cooked weight)
1/2 cup sharp cheddar cheese, shredded
1/2 cup flour
3/4 cup oats
2/3 cup brown sugar
1/4 cup butter, melted
4 -5 apples, peeled, cored and sliced into 1/4 inch thick pieces
1 tablespoon lemon juice
1/2 teaspoon cinnamon

Steps:

  • In a medium bowl, mix bacon, cheese, flour, oats and 1/3 cup of the brown sugar. Thoroughly mix in melted butter.
  • Place apple slices in a 1.5- to 2-quart casserole. Toss with lemon juice, cinnamon and remaining 1/3 cup brown sugar.
  • Spread topping on apples.
  • Bake at 375 for 40-50 minutes, or until apples are tender. Allow to cool for at least 20-30 minutes before serving. Refrigerate leftovers.
