CHEDDAR BACON CRACKERS
Cheddar Bacon Crackers - quick homemade bacon and cheddar cheese crackers. These things fly off the plate at parties! Super easy to make and they taste fantastic! - Preheat oven to 375ºF. Line baking sheet with parchment paper. Set aside.
- In the bowl of a food processor, pulse together flour, baking powder, cayenne, and butter until a crumbly dough forms. Add cheese, bacon and milk. Pulse just until dough forms.
- Using a small cookie scoop (1 Tbsp), scoop dough onto parchment lined baking sheets. Flatten in a criss-cross pattern with a floured fork.
- Bake for 12-15 minutes.
CHEDDAR BACON PUFFS
Steps:
- Gather the ingredients.
- Line two baking sheets with parchment paper or silicone baking mats. Set aside.
- Preheat the oven to 400 F.
- In a medium saucepan, combine the water, milk or light cream, salt, and butter. Put over high heat and cook, stirring, until butter is melted. Bring to a boil.
- With a wooden spoon , stir in the flour all at once. Continue stirring until the dough leaves the sides of the pan and forms a ball.
- Transfer the hot dough to a large mixing bowl or the bowl of a stand mixer with paddle attachment. Let the dough rest for 2 minutes.
- Beat the hot dough on low speed for 1 minute. Quickly beat in the first egg, beating until thoroughly blended into the dough. Continue beating in the remaining eggs, one at a time, beating well after each addition.
- Beat in the shredded cheese, bacon, cayenne, and freshly ground black pepper. Continue beating until the dough is smooth and well blended.
- Using a tablespoon measure or small cookie scoop, drop the dough onto the parchment lined baking sheets. With moistened fingers, smooth any peaks on top of the mounds of dough. If peaks are left, they tend to over-brown or burn.
- Bake the puffs for about 20 to 22 minutes, until nicely puffed and golden brown.
- Serve and enjoy!

- Cut each bacon strip in half widthwise. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm. In a large bowl, combine the flour, cheese and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk just until moistened. Turn onto a lightly floured surface; knead 8-10 times. Divide dough in half. Roll one portion into a 12-in. x 9-in. rectangle. Cut in half, forming two 9-in. x 6-in. rectangles; cut each rectangle into nine 1-in. strips. Repeat with remaining dough. Place a piece of bacon on each biscuit strip; carefully roll up jelly-roll style. Place seam side down on ungreased baking sheets. Bake at 450° for 8-10 minutes or until golden brown. Serve warm. Refrigerate leftovers. Yield: 3 dozen.
CHEDDAR AND BACON PINWHEELS

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
- In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
- Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
- Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
- Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.
