CHEESY CHICKEN BACON MELTS
These Cheesy Chicken Bacon Melts are so tasty, your whole family will be begging for them! And they are so easy, you just might want to make them all the time!

Steps:
- Place chicken between pieces of wax paper and flatten with the smooth side of a meat mallet to about 1/4-inch thickness, or butterfly thicker chicken breasts.
- In a large skillet, cook bacon until crisp. Set bacon aside.
- Cook onion in bacon drippings until softened. Remove onion from skillet, set aside.
- Add chicken to skillet; cook for about 7-9 minutes on each side,until cooked through (160 degrees internal temperature).
- Place toasted bread slices on a large baking sheet; spread each slice with one teaspoon A-1 steak sauce. Top each with a chicken breast, 2 slices bacon, onion, and cheese.
- Broil 4-6 inches from heat for 1-2 minutes, until cheese is melted.
- If desired, top with ranch dressing.
- Serve open-faced sandwiches immediately.

- Heat 12-inch nonstick skillet over medium heat. Add bacon; cook 7 to 9 minutes, stirring frequently, until crisp. Using slotted spoon, transfer to paper towel-lined plate; set aside. Drain and discard all but 1 tablespoon drippings from skillet.
- Rub chicken with salt and pepper. Heat skillet with reserved drippings over medium heat. Add chicken; cook uncovered 14 to 16 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove from heat; top each breast with 1/4 cup cheese. Cover skillet; let stand 4 to 5 minutes or until cheese melts. Top with bacon, and serve.

- Wrap the bacon around the chicken breast and put on a tray in the oven (190 degrees) until chicken is cooked. (Around 20-30 mins)
- When cooked transfer into a small, deep dish - a bowl will do. Squirt the BBQ sauce all over the chicken then top with loads of grated cheese!!
- Put back into the oven for 5 mins or untill cheese is melted and the bbq sauce is hot!
- Eat and enjoy, goes well with potatoe wedges and brocolli!!

This is a yummy sandwich to make on a cold day or just for when you are in the mood for something cheesy with bacon.

- Preheat the oven to broil at 425°F.
- Heat a frying pan on the stove.
- Fry bacon strips until they are the desired doneness.
- Set aside bacon to cool and drain. place bread on a cookie sheet and broil for about 3 minutes until bread is lightly toasted.
- Turn bread slices over (use a tong) and sprinkle shredded cheese on top in a nice thick layer and broil for about 3 minutes until the cheese is nice and melted.
- Take the bread out of the oven and let cool for about 2 minutes.
- Next layer a slice of tomato, onion, pickle and lettuce on one side and place bacon on.
- You may want to add a little low fat mayo or mustard.
- Put together and enjoy!
