1 1/2 cup Broccoli
1 Leek
4 rashers Bacon (streaky)
1 cup Cheese (grated)
2 tbsp Oil
3 tbsp Margarine
1 1/4 cup Milk
3 tbsp Flour
Salt & Pepper (to taste)

Steps:

  • Cut broccoli into smaller pieces.
  • Boil for 2 minutes.
  • Put into a casserole dish.
  • Slice leek and dice bacon.
  • Fry in 2 tablespoons cooking oil.
  • Sprinkle over broccoli.

2 pounds broccoli florets
4 slices thick cut bacon, (cooked to a crisp, and crumbled)
4 tablespoons butter
3 tablespoons all-purpose flour
2 cups Half & Half
2 cups shredded Gruyere cheese, ((you can also use whatever shredded cheese you have on hand; pepper jack and sharp cheddar work well))
1 cup crumbled feta cheese, (divided)
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons butter, (melted)
1 1/2 cups pork rind crumbs, ((or any dried breadcrumbs))
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons fresh chives, (snipped)

Steps:

  • Preheat oven to 375˚F.
  • Lightly spray a 3-quart baking dish with cooking oil and set aside.
  • Bring a large pot of water to a boil.
  • Add broccoli to boiling water and cook for 2 minutes.
  • Drain the broccoli; rinse with cold water until completely cooled.Transfer broccoli back to the pot where you cooked the broccoli. Set aside.
  • Melt butter in a large saucepan set over medium heat.
  • Whisk in the flour to combine; cook for 2 minutes.
  • Slowly whisk in the Half & Half; cook and whisk until the mixture starts to thicken.
  • Remove from heat and whisk in the gruyere cheese, ½ cup feta, garlic powder, salt, and pepper. Whisk and stir until it's completely combined and melted.
  • Pour the cheese sauce over the broccoli; add in the crumbled bacon, and toss to coat.
  • Transfer broccoli to previously prepared baking dish; sprinkle with remaining feta, and set aside.
  • In a mixing bowl stir together melted butter, crumbs, salt, pepper, and chives.
  • Sprinkle over the broccoli.
  • Bake for 25 to 30 minutes, or until top is browned and mixture is bubbly.
  • Remove from oven and let stand 5 minutes before serving.

1 pound fresh broccoli flowerets (about 6 cups)
2 tablespoons water
2 cups shredded Cheddar Jack and American cheese blend (8 ounces)
1/2 cup crumbled cooked bacon or toasted sliced almonds

Steps:

  • Place broccoli and water in rectangular microwavable dish, 11x7x1 1/2 inches. Cover with plastic wrap, folding back one edge or corner 1/4 inch to vent steam. Microwave on High about 5 minutes or until hot and crisp-tender.
  • Drain broccoli; return to dish. Sprinkle with cheese. Microwave uncovered on High 3 to 4 minutes or until cheese is melted. Sprinkle bacon over top.

This recipe was the 'birthday dinner' recipe that my husband requested from his mom when he was young. After she passed away, he thought the recipe was lost forever... Until I found it tucked away in one of her old cookbooks and made it for a surprise birthday present last year!

½ cup uncooked long-grain rice
6 slices bacon
1 large onion, chopped
1 (10 ounce) package chopped frozen broccoli, thawed
1 (10.5 ounce) can condensed cream of chicken soup
1 cup milk
1 (16 ounce) jar processed cheese sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a saucepan bring 1 cup water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Saute onions in bacon drippings over medium heat.
  • In a 9x13 inch baking dish combine cooked rice, bacon, onions, broccoli, soup, milk and cheese sauce.
  • Bake in preheated oven for 30 minutes, or until golden brown.

10 slices bacon
1/4 cup butter
1/3 cup flour
8 oz cream cheese (, (226g))
2 cups milk
1 tsp salt
1 tsp fresh ground black pepper
1/2 tsp paprika
1 1/2 cup grated cheddar cheese
10 green onions (, sliced)
8 cups broccoli (, cut into medium sized florets)

Steps:

  • Preheat oven to 350F.
  • Cook the bacon until crispy. Drain and then crumble. Set aside.
  • Steam the broccoli until almost tender. They should seem a little undercooked.
  • Melt the butter in a medium saucepan. Add the flour and stir until thoroughly mixed. Add in the cream cheese and stir until melted.
  • Add the milk and spices. Stir until well heated but do not bring to a boil as that might scald the milk.
  • Stir in 1 cup of the grated cheese and remove from the heat.
  • Dump the broccoli in a 13x9 baking dish. Pour the cheese mixture over the broccoli. Sprinkle bacon (minus about 2 tablespoons) and sliced green onions (minus about 2 tablespoons). Gently fold so that the broccoli is coated in the cheese mixture and the bacon and green onions are mixed throughout.
  • Evenly spread the broccoli in the baking sheet. Sprinkle remaining cheddar cheese, bacon and green onions on top.
  • Bake for about 20 minutes or until bubbly and the cheese is melted

I found this in a magazine and had to change it to suit my personal taste and also because I didn't have all ingredients on hand. The result tasted great!

6 slices bacon
2 -3 cups pasta, any type
1 cup frozen broccoli (thawed)
1/4 cup shredded provolone cheese
1/2 cup skim milk
3 -4 tablespoons flour
salt & pepper
breadcrumbs (optional)
parmesan cheese (optional)

Steps:

  • Preheat oven to 375.
  • Boil water to cook pasta.
  • While water is boiling, fry bacon strips.
  • Set aside on paper towel to drain.
  • After pasta is cooked, drain and set aside in a casserole dish.
  • Crumble bacon& stir into pasta.
  • Also stir in broccoli.
  • Over medium heat, heat milk in a saucepan& slowly stir in flour until smooth& slightly thickened.
  • Stir in cheese until mostly melted& remove from heat.
  • Pour over pasta mixture and stir until all ingredients are well mixed.
  • Salt and Pepper to suit personal taste& if desired, sprinkle breadcrumbs and parmesan cheese over casserole before baking.
  • Bake for 10-15 minutes, and let cool 5 minutes before serving.
