BACON-CHEESE BISCUITS

4 slices thick-cut bacon
2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon kosher salt
1 tablespoon chopped fresh chives
6 tablespoons cold unsalted butter, cut into small pieces, plus melted butter for brushing
1 cup grated Colby or cheddar cheese
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
  • Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
  • Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.
  • Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.

MAPLE-BACON BISCUITS

3 tablespoons white sugar
4 teaspoons baking powder
½ teaspoon cream of tartar
½ teaspoon salt
¾ cup cold butter
1 cup milk
2 tablespoons pure maple syrup
1 egg
½ cup finely chopped cooked bacon
2 tablespoons melted butter, or to taste
2 tablespoons pure maple syrup, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper or use a nonstick baking sheet.
  • Combine flour, sugar, baking powder, cream of tartar, and salt in a large bowl. Use a pastry cutter to cut cold butter into flour mixture, until you see small, pea-sized pieces of butter throughout the dough. Add milk, 2 tablespoons maple syrup, and egg and mix just until the ingredients are combined; do not overmix. Dough will be sticky with visible pieces of butter.
  • Turn dough out onto generously floured surface and sprinkle bacon pieces on top. Gently knead dough 10 to 15 times to incorporate bacon, sprinkling with additional flour if the dough is super sticky.
  • Pat the dough out to a 3/4- to 1-inch thickness and cut with a biscuit cutter or glass. Transfer biscuits to the prepared baking sheet.
  • Bake in the preheated oven until golden brown on top, 10 to 15 minutes. Brush the tops with melted butter and remaining maple syrup for extra depth.

4 cups all-purpose flour
1 cup shredded extra-sharp cheddar cheese
1/4 cup chopped fresh parsley leaves
4 teaspoons baking powder
2 teaspoons freshly ground black pepper
1 1/2 teaspoons kosher salt
1 teaspoon baking soda
1 teaspoon garlic powder
3/4 cup unsalted butter, frozen
1 3/4 cups buttermilk

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate. In a large bowl, combine bacon, flour, cheese, parsley, baking powder, pepper, salt, baking soda and garlic powder. Grate butter using the large holes of a box grater. Stir into the flour mixture. Add buttermilk and stir using a rubber spatula until a soft dough forms. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 1 1/4-inch thick rectangle. Cut out 14-16 rounds using a 2-inch biscuit or cookie cutter. Place biscuits onto the prepared baking sheet; place in the freezer for 15 minutes. Remove biscuits from freezer. Place into oven and bake for 14-17 minutes, or until golden brown. Serve warm.

QUICK BACON-CHEDDAR BISCUITS

1 teaspoon onion powder
1 cup milk
1/2 cup butter, melted
8 strips bacon, cooked until crispy and crumbled
1 cup shredded Cheddar cheese

Steps:

  • Heat the oven to 425 degrees F.
  • In a large bowl add the flour, baking powder, 1 teaspoon of salt, paprika, and onion powder. Mix to blend then make a well in the center of the bowl and add the milk, butter, bacon and cheese. Mix gently with a wooden spoon. The dough will be wet and sticky. Using a 1/4 cup measure or ice cream scoop, portion the batter onto a baking sheet, leaving an inch or so around each biscuit.
  • In a small bowl, beat the egg with a splash of water and then brush this mixture on the top of each biscuit. Bake in the oven until the biscuits are golden brown and a toothpick inserted in the center of one comes out clean, 20 to 22 minutes.

1 small onion, chopped

1 stick (8 tablespoons) cold butter, cut into bits, plus 4 tablespoons butter, melted
1/2 cup shortening
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 450 degrees F.
  • In a small skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes. Remove and drain on paper towels until cool, then chop into small pieces. Add the onion to the skillet with the bacon grease and cook over medium-low heat until light golden, about 5 minutes. Drain on paper towels.
  • Stir together the flour, powdered milk, baking powder, sugar, cream of tartar and salt in a medium bowl. Using a pastry cutter, cut the chilled butter bits and shortening into the dry mixture until blended thoroughly. Stir in the bacon and onion. Fold in the buttermilk until the dough comes together.
  • On a lightly floured surface, turn out the dough and use your hands to press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, about 15 minutes.

2 cups southern soft-wheat flour, pastry flour, or unbleached all-purpose flour
1 scant teaspoon baking powder
1 teaspoon salt
6 tablespoons chilled bacon drippings
½ to ⅔ cup whole milk

Steps:

  • Position a rack in the upper third of the oven and preheat to 450˚F. Whisk or sift together the flour, baking powder and salt in a mixing bowl. Cut in the bacon fat with a pastry blender, fork, or two knives until it resembles damp, coarse meal with occasional lumps no larger than very small peas.
  • Make a well in the center and pour in half a cup of milk. Mix with as few strokes as possible until the dough clumps together and pulls away from the sides of the bowl, adding more milk (if needed) by spoonfuls until it is no longer crumbly.
  • Turn out onto a lightly floured work surface and pat out ½-inch thick. Fold it in half and pat out ½-inch thick, fold again, and repeat twice more.
  • Lightly flour the surface once more and roll or pat the dough out about ¼-inch thick. Using 1½-inch-diameter biscuit cutter dipped in flour before each cut, cut the dough straight down, without twisting the cutter, into 12 biscuits, transferring them to an ungreased baking sheet spaced about half an inch apart.
  • The scraps can be reworked with care: gather into a lump and lightly fold and pat flat about three times or until they just hold together, then pat flat and cut as above. Bake the biscuits until golden brown, about 8 to 10 minutes, and serve piping hot.
  • Notes: One slice of thick-cut bacon should yield about a tablespoon of rendered fat. Store the drippings for up to 4 weeks, well sealed, in the refrigerator, or for up to 3 months in the freezer.

2 ounces cheese, grated, extra

Steps:

  • Remove rind from bacon, fry until golden on both sides, chop finely.
  • Beat butter until creamy, add egg yolk, mix well.
  • Add grated cheese, mix well.
  • Add sifted flour and salt, mix to a firm dough; wrap in plastic wrap and refrigerate 30 minutes.
  • Roll dough out on a lightly floured surface to 1/8 inch thick.
  • Cut into rounds with a 1 1/2 inch fluted cutter.
  • Put rounds on greased oven trays, sprinkle with bacon and extra cheese. Bake in moderate oven 10 - 12 minutes or until golden.
  • Allow to cool on a wire rack.
