BACON-CHEESE BISCUITS

4 slices thick-cut bacon
2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon kosher salt
1 tablespoon chopped fresh chives
6 tablespoons cold unsalted butter, cut into small pieces, plus melted butter for brushing
1 cup grated Colby or cheddar cheese
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
  • Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
  • Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.
  • Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.

1 tablespoon baking powder
1 teaspoon baking soda

1 cup buttermilk
1 cup grated Cheddar cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Let cool enough to handle; crumble.
  • Combine flour, baking powder, baking soda, and salt in a bowl and cut in shortening until it resembles coarse crumbs. Add buttermilk and stir just enough to form a ball. Fold in crumbled bacon and Cheddar cheese.
  • Drop heaping tablespoonfuls on an ungreased baking sheet.
  • Bake in the preheated oven until golden brown, 10 to 12 minutes. Serve immediately.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a cookie sheet.

1 (8 ounce) can refrigerated layer biscuits
2 cups grated cheddar cheese or 2 cups swiss cheese (8 oz)
1/2 cup mayonnaise (or more if needed for desired consistency)
1 small onion, chopped
8 slices bacon, cooked crisply and crumbled
2 tablespoons sugar
1/4-1/2 teaspoon garlic salt
5 drops hot pepper sauce

Steps:

  • Preheat oven to 350F.
  • Separate each biscuit into 3 pieces.
  • Place on baking sheet.
  • Combine the cheese, mayo, onion, bacon, sugar, garlic salt and hot pepper sauce in a medium bowl; mix well.

1/2 lb ground beef
1 1/2 c biscuit/baking mix
2 c shredded cheddar cheese
3 oz bacon pieces
6-7 Tbsp buttermilk

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. In a skillet, cook and crumble ground beef until no longer pink; drain. In a bowl, combine biscuit mix, bacon and cheese; stir in cooked beef. Add buttermilk and toss with a fork until just moistened. Shape into 1to 1-1/2 inch balls. Place 2 inches apart on an un-greased baking sheet.
  • 3. Bake for 12-15 minutes or until puffed and golden brown. Cool on wire racks.
  • 4. Baked puffs may be frozen; reheat at 400 degrees F for 7-9 minutes or until heated through (they do not need to thawed first).

Steps:

  • Combine milk and butter in medium saucepan.

  • Remove from heat.
  • Beat in 1 egg at a time until mixture is smooth.
  • Stir in remaining ingredients; mix well.

I am posting this recipe in memory of my dear friend, Dot, who died in 2008. Dot was a wonderful lady and matriarch of a large and fascinating family. She was also an avid and excellent cook. It didn't matter when you arrived at Dot's home, there was always some freshly made goodie for you to sample. These puffs were just one of her offerings. The yield is a guess, as I forgot to write down what she said. Love you, Dot, and miss you!

1 egg, lightly beaten
2 cups grated cheese, a sharp cheddar is best
2 medium onions, finely chopped
3 slices bacon, finely chopped
1 cup self-raising flour
1 teaspoon grainy mustard (or French mustard)

Steps:

  • Preheat oven to 180°C/350°F.
  • Combine egg and milk, and stir into remaining ingredients.
