BBQ CHICKEN AND BACON PIZZA RECIPE
Steps:
- Preheat the oven to 500°F and place the pizza stone in the oven and let preheat for one hour.
- Add the onion slices and butter to a saucepan on low heat. Cook until onions are tender and golden brown, about 20-30 minutes. Remove from pan and set aside.
- Meanwhile, cut the chicken into small, bite-sized pieces. Cook with a little oil on medium heat in the same saucepan used for the onions. Cook until golden and fully cooked through, remove from the heat, and toss with some BBQ sauce until lightly coated. Set aside.
- Roll out the dough into a 12-inch crust. Sprinkle evenly with a little salt.
- Place a small handful of flour onto the pizza peel and spread evenly to prevent the dough from sticking to the pizza peel. Make sure the dough is well floured and doesn't feel 'sticky' to the touch.
- Transfer the dough onto the peel. Evenly coat the top with BBQ sauce, leaving a 1-inch crust. Add the chicken, onions, bacon, and fresh mozzarella in that order. Finish with a sprinkle of parmesan cheese.
- Slide the finished pizza onto the pizza stone and bake for 10-15 minutes or until the crust is golden brown. Be sure to carefully watch the oven because all ovens will cook at different rates. Sometimes it will only take 10 minutes to fully cook. Remove from the oven, let cool, and serve.

BARBECUE CHICKEN AND BACON PIZZA
My new favourite pizza recipe - soft, yet crispy pizza dough topped with tomato sauce with a hint of barbecue flavour, chicken, smoked bacon and melted cheese.

Steps:
- Make the pizza dough.
- finely chop the onion (½ onion) and crush the garlic (1 clove).
- Heat half of the olive oil (½ tbsp) in a saucepan and add the chopped onion. Cook on a low heat for 5 minutes, stirring occasionally to prevent it burning.
- After 5 minutes, add the garlic, chopped tomatoes (400g can), Worcestershire sauce (2 tbsp), white wine vinegar (1½ tbsp) and soft brown sugar (1 tbsp) and cook on a low heat for about 20 minutes until all of the liquid has reduced, stirring occasionally to prevent burning. Season with salt and pepper.
- While the sauce is reducing, pre-heat the oven to 220°C/200°C fan. Place two baking trays to heat in the oven.
- While the sauce is reducing you'll also need to cook the chicken and bacon (unless already cooked). Cut the chicken (1 breast) and bacon (4 rashers) into bitesized pieces.
- Heat the remaining olive oil (½ tbsp) in a frying pan and add the chicken. Brown for a minute and then add the bacon. Cook the chicken and bacon for a further 5 minutes until cooked through.
- Grate your cheese (50g cheddar, 50g mozzarella) unless using ready-grated.
- Knock the air out of your pizza dough and roll it out onto two sheets of greaseproof paper or silicon baking sheet.
- Thinly spread the tomato sauce over the two pizzas.
- Sprinkle over the cooked chicken and bacon.
- Sprinkle over the grated cheese.
- Remove the baking trays from the oven and carefully transfer the pizzas (on the greaseproof paper) onto the hot trays.
- Put the pizzas into the oven and cook for 12 minutes until golden brown (you may need to swap the pizzas around during cooking to ensure they cook evenly, and you may find that they take a little longer than 12 minutes depending on where they are in the oven).

- Preheat oven to 425°. In a large skillet, heat oil over medium heat. Add onion; cook and stir 4-6 minutes or until softened. This is a really easy recipe to make, and the result is equivalent to a gourmet "Hot Pocket"! I use BBQ chicken as my fiance loves it, but if you are creative, this could be modified to fit your tastes, and stuffed with other combos like ham and cheese, eggs and bacon...you name it!

- Line a cookie sheet with foil or parchment paper.
- Preheat your oven to 375.
- Remove and unroll the crescent rolls and divide the crescent rolls into four squares (2 triangles each).
- Seal the perforations on each of the four squares so that the triangles are connected.
- Divide the cheese into halves and place one half on each of the four squares.
- Divide the bacon in half and place one half on each of the four squares.
- Mix canned chicken and BBQ sauce in a mixing bowl.
- Scoop one to two tablespoons (more or less to taste) of BBQ chicken onto each of the four crescent squares.
- Fold each crescent square in half (covering the mixture). Press to seal the edges.
