1 cup(s) diced bacon
3 tablespoon(s) brown sugar, firmly packed
2 tablespoon(s) bourbon
1/4 cup(s) heavy cream

Steps:

  • In a skillet,cook bacon until crunchy, about 6 minutes. Pour off excess grease from pan. Add the sugar to the skillet with the bacon, stir to dissolve. Deglaze pan with bourbon;add cream. Combine all in pan and heat and keep warm. Great on French toast.

½ cup butter
1 cup superfine sugar
1 ¼ cups heavy cream
4 bananas, peeled and halved lengthwise

Steps:

  • Melt butter in a large, heavy skillet over medium heat. Stir in sugar and cook, stirring, until sugar is melted and light brown. Slowly stir in the cream (mixture will bubble up).
  • Let mixture boil 1 minute, then reduce heat to low. Place the bananas in the pan and cook until heated through, about 2 minutes. Serve hot.

2 tablespoons water
1/2 cup heavy cream
2 tablespoons butter
2 thinly sliced bananas

Steps:

  • In a large skillet, heat sugar with water, stirring to dissolve sugar. Boil (without stirring) until golden brown, 5 to 8 minutes.
  • Immediately add heavy cream and butter (mixture may sputter and clump); cook, stirring, until smooth. Add thinly sliced bananas; stir to coat.

Once the caramel had reached its perfect molten temperature I stirred in a handful of the bacon then reserved the rest to get sprinkled on top. The caramel set beautifully. 1/2 cup sugar
1/2 cup brown sugar
1 cup corn syrup
1/2 cup butter
1 cup heavy cream, divided
1/4 cup maple syrup
8 -12 slices bacon, crispy thick-cut

Steps:

  • Reserve 1/2 cup of the heavy cream. Combine all the other ingredients in a medium sauce pan. Stir to combine. Set on medium high heat. Stir occasionally and cook until 240*. The candy is now at firm-ball stage. Remove from the stove and carefully stir in the remaining 1/2 cup cream. Place back on the heat and continue to cook to 245*. Immediately remove from heat and stir in a portion of the crispy bacon. Pour the caramel into a buttered dish (the size depends on how thick you want your caramels. 8×8 = thick caramels 9×13 = thin caramels. You can also use a cookie sheet). Scatter the remaining bacon on top. Let set for at least 3 hours before cutting.

4 slices OSCAR MAYER Bacon
2 Tbsp. butter
1/4 cup packed brown sugar
1/2 tsp. vanilla
2 bananas, cut into 1/2-inch-thick slices

Steps:

  • Cook bacon in microwave as directed on package. Chop or crumble into 1/2-inch pieces; set aside.
  • Melt butter in medium skillet on medium-low heat. Add sugar; cook and stir 2 min. or until sugar is dissolved. Add vanilla, bananas and bacon; cook and stir 2 to 3 min. or until heated through.

Waffles with banana & salted caramel sauce image

Smother fluffy waffles with fried bananas, vanilla ice cream and caramel sauce for an indulgent dessert or brunch time treat

140g light muscovado sugar
2 tbsp golden syrup
50g butter
300ml double cream
4 large eggs , separated
300g plain flour
½ tsp bicarbonate of soda
2 tbsp golden caster sugar
50g butter , melted
600ml milk
2 bananas , peeled and cut into large pieces
1 tbsp butter
vanilla ice cream (optional)

Steps:

  • Put the sugar, golden syrup and butter in a saucepan and heat gently, stirring occasionally, until everything has melted together. When the mixture starts to bubble, stir in the double cream and cook for 2 mins. Stir in 1/2 tsp salt, then take off the heat and allow to cool slightly in the pan.
  • Heat the waffle maker (if you don't have one, you can use a griddle pan instead - see tip). Whisk the egg whites to stiff peaks. In a separate large bowl, mix together the flour, bicarbonate, caster sugar and a pinch of salt. Make a well in the centre and add the egg yolks and melted butter. Start mixing with a balloon whisk; keep whisking as you slowly add the milk until you get a smooth, thick batter. Carefully fold in the egg whites with a metal spoon. Use a ladle to pour the batter into your waffle maker and cook for 5 mins or according to the manufacturer's instructions. Repeat until all the batter has been used up - keep cooked waffles warm in a low oven until serving.
  • Just before serving, heat the remaining butter in a non-stick frying pan over a medium heat and fry the banana pieces until golden. Divide the waffles between 4 plates, top with the fried bananas, drizzle with salted caramel and top with a scoop of vanilla ice cream, if you like.
