CLASSIC BACON AND CHEESEBURGER



Classic bacon and cheeseburger image

Classic bacon cheeseburger with lettuce, tomato and a good slather of mayo makes this the perfect addition to your 4th of July party.

Number Of Ingredients 14

1 onion (finely chopped)
1 garlic clove (crushed)
500 g beef mince
large handful fresh parsley (finely chopped)
1/2 cup fresh breadcrumbs
1 egg (beaten)
1-2 teaspoons salt (to taste)
black pepper (to taste)
4 slices American/Processed cheese
8 slices bacon (cooked to your preference)
fresh lettuce
ripe tomatoes (sliced)
4 tsp mayonnaise
4 butter-toasted bread rolls

Steps:

  • Fry the onion in a large frying pan in a splash of olive oil until golden brown. Add the garlic and fry for another 30 seconds then remove from the heat. Allow to cool to room temperature.
  • Mix the cooled onions with the beef, parsley, breadcrumbs, egg, salt and pepper. To test the seasoning, fry a teaspoon-full of the mixture in the pan you cooked the onions in. Adjust the seasoning to taste.
  • Divide the mixture into 5-6 (depending on how you big you want the patties), and form patties with wet hands.
  • Place on a tray lined with baking paper and place in the fridge to chill for 30 minutes.
  • When the patties have rested, heat a large cast iron pan/griddle pan until hot then cook the burgers until charred and cooked to your preference. (You can also cook the burgers on a braai/barbecue.)
  • Remove from the heat, top with the cheese and cover with foil for 2 minutes.
  • Top the buns with a generous spoonful of mayo, lettuce, tomato, the patty with cheese and finally bacon.
  • Serve immediately.

While we love a grilled burger, this one is our go-to for all seasons. Instead of making a typical patty, we smash the meat in a super-hot cast-iron pan to get crispy, ruffled edges. Once you smash your burgers this way, you'll never go back! We top them with all the fixings, including our perfectly balanced special sauce. It's what we consider an iconic burger.

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
  • Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.

Steps:

  • Heat charcoal or gas grill to medium. Combine ground pork, onion and hot sauce; mix well with hands. Shape into 4 (8-oz.) burgers; season with salt and pepper on both sides.
  • Grill burgers until internal temperature reaches 165 degrees F., turning after 8 minutes. Place 2 slices cheese on top of each burger to melt.
  • Lightly toast brioche buns on grill, being careful not to burn. Place pork burgers on buns; top each with 4 half strips of bacon.
  • Serve with lettuce, tomato, pickles, mayonnaise and mustard on the side.

1/2 cup shredded cheddar cheese
1/2 cup crumbled cooked bacon
1 envelope onion soup mix
2 pounds ground beef
8 hamburger buns, split
Lettuce leaves and tomato slices, optional

Steps:

  • In a large bowl, combine the cheese, bacon and soup mix. Crumble beef over mixture and mix well. Shape into eight patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. 1 lb ground beef
1/3 cup minced onion
1 egg, beaten (optional)
1/4 cup breadcrumbs (optional)
1 tablespoon barbecue seasoning
1/2 teaspoon celery salt
2 ounces smoked cheddar cheese, thinly sliced
6 slices bacon, cooked crisp and halved
4 hamburger buns
lettuce leaf
sliced tomatoes

Steps:

  • In a large bowl gently combine beef, egg, breadcrumbs, barbecue seasoning, and celery salt until they are well blended and begin to bind.
  • Shape beef into 8 very flat patties.
  • Top half of the patties with equal amounts of cheese and bacon, then top with the remaining patties.
  • Press edges firmly to seal.
  • Grill over medium heat for 5 to 6 minutes on each side or until the internal temperature reaches 160 degrees F.
  • Serve on hamburger bun (optional toasted) with the lettuce and tomato.

  • To make the bacon weave, lay eight bacon strips, side by side, vertically. Horizontally, weave the top bacon strip through the vertical strips. For the remaining horizontal strips, pull back every other vertical bacon strip (see the picture above). Lay a bacon strip down up snug to the horizontal strips. Pull the vertical strips back down. Do the same thing again, but with the other vertical bacon strips. Do this for the rest of the bacon until you have a complete bacon weave.
  • Roll or pat out the ground beef to the same size shape as the bacon weave. Lay the cheese along the middle of the square of ground beef. Spread the BBQ spice rub across all the beef.
  • Roll up the ground beef into a log. Tuck in the sides to make sure there is no opening for the cheese to melt out of. Lay the beef on the bacon weave and wrap the weave around the beef log.
  • Smoke the fatty in a smoker set to 250F for about 2 1/2 hours. Remove when the internal temperature is at 165F.
