Time 35m

Yield 6 servings

Number Of Ingredients 15

1/2 small red onion, thinly sliced
2 anchovy fillets
2 tablespoons extra-virgin olive oil
2 cloves garlic, grated
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
2 large slices sourdough bread, crusts trimmed, torn into bite-size pieces
1/3 cup buttermilk
1/4 cup sour cream
2 tablespoons crumbled blue cheese (about 1 ounce)
2 teaspoons apple cider vinegar
1 tablespoon chopped fresh parsley
8 cups baby spinach (about 5 ounces)
1 small head red-leaf lettuce, torn (about 6 cups)
1/2 English cucumber, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Soak the red onion in a small bowl of ice water, about 30 minutes. Drain and pat dry.
  • Meanwhile, make the croutons: Mash the anchovies with a fork. Combine the olive oil, mashed anchovies, 1 grated garlic clove and a pinch each of salt and pepper in a medium bowl. Let stand 5 minutes. Add the torn bread and toss with your hands until the bread absorbs the oil. Spread on a baking sheet and bake, stirring halfway through, until golden brown and crisp, 20 to 25 minutes. Let cool.
  • Whisk the buttermilk, sour cream, blue cheese, vinegar, parsley, the remaining grated garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl until combined. Add the spinach, lettuce, cucumber, red onion and croutons; toss well.

SAUTEED SPINACH WITH RED ONION, BACON & BLUE CHEESE

Sauteed Spinach With Red Onion, Bacon & Blue Cheese image

We love this recipe, it's so good and easy to make. If making 4 servings it works better to use a Dutch oven instead of a large skillet, and add 1 to 2 minutes to the spinach-cooking time. Leave out the bacon for a vegetarian dish. The recipe comes from Eatingwell.com.

Time 50m

Number Of Ingredients 9

500g salad potato , halved
2 tbsp olive oil
2 red onions , each sliced into 6 wedges
4 rashers smoked back bacon , trimmed and cut into large pieces
140g mushroom , sliced
1 tbsp wholegrain mustard

Roast for 20 mins more until the potatoes have turned a deep golden brown and the onions have caramelised and softened. Leave to cool slightly.
  • Heat a non-stick frying pan. Dry-fry the bacon until crisp. Add the sliced mushrooms, then fry for 5 mins more until they have softened.
  • Meanwhile, make the dressing. Whisk the mustard, vinegar and remaining 1 tbsp oil with a splash of water. Place potatoes, onions, bacon and mushrooms in a large bowl with the salad leaves, pour over the dressing, then toss well. Divide between 4 plates, then crumble over the blue cheese.

  • Put eggs in a saucepan and add water to cover by at least 1/2 inch. Bring to a boil, then reduce heat slightly and boil for 2 minutes. Cover saucepan, remove from heat, and let eggs sit in hot water for 5 minutes for yolks that are cooked but still a bit jammy, or 10 minutes for yolks that are firm but still tender. Meanwhile, continue to next step.
  • Arrange bacon in a single layer in a large frying pan. Cook over medium heat, turning once or twice, until browned and crisp, 10 to 12 minutes. Transfer bacon to paper towels and set aside.
  • Drain eggs, return to saucepan, and fill with cold water. To speed up cooling, as the water warms up from the eggs, replace it with fresh cold water. Let stand until eggs have cooled to room temperature. Peel eggs and quarter them.
  • Whisk together olive oil, vinegar, mustard, honey, salt, and pepper in a large bowl. Slice bacon crosswise and crumble blue cheese.
